This is particularly noticeable since the inception of the Artificial Breeding Scheme whereby farmers are at liberty to breed herd replacements from their most productive cows and use semen from beef breeds for the poorer types.

THE condition known as milk fever is almost essentially a disease of highly productive adult milking cows at the time of calving.

It is characterised by a low blood calcium level causing a sudden general depression of consciousness of the cow and muscular paralysis.

Without treatment most cases result in the death of the cow.

MANY Merino flocks in the agricultural areas Iamb down in the autumn months.

This means that the lambs are being developed and reared when paddock feed is at its worst, and this in turn means that a well-planned supplementary feeding programme is essential.

THE mulga pastoral zone is so named since most of its area is dominated by Mulga (Acacia aneura).

The mulga is found associated with shrubs and grasses in almost all plant habitats. In its various forms it can associate with spinifex (Triodia basedowi), Wandarrie Grasses (Danthonia, Eragostis and Eriachne spp.) and with low shrubs on flood plains, hills and breakaways. It may even attempt to become established in salty communities, though this is never completely successful.

The scene the area offers from its low hills is one of a succession of low undulations, occasionally scarred by creeks or breakaways and …

The high incidence of tooth decay, one of the most common diseases found in all age groups, gives a reason for the study of methods to prevent dental caries. Certain dietary factors, specifically carbohydrates, have been implicated in the decay process. Since diet influences both the oral and systemic environments in which the teeth develop, mature, age, and decay (1), many studies have been conducted to determine the effects of oral administration of different carbohydrates on dental caries. The extrinsic effects of diet on the mature erupted tooth have, however, been the major concern of the research (2).

During the last 10 years, much emphasis has been placed on the importance of breakfast for people of all ages. Nutritionists have pointed out that persons who eat a hearty breakfast show fewer signs of mid-morning fatigue, have or develop better work habits, and do not get as hungry as those who eat little or no breakfast.

For many years, substitutes for butterfat have been the subject of much controversy. Their acceptance as being nutritionally equal to butterfat has often been question. The importance of this problem lies primarily in its economic and nutritional significance.

A recent study of public attitudes toward dairy products conducted by Alfred Politz Research, Inc. for the American Dairy Association, shows that 48.4 per cent of the population believed that butter is a more nutritions food than oleomargarine. Only 6 per cent thought that oleomargarine is more nutritious while 27.2 per cent believed they are about the same. The remainder, 18.4 per …

Swiss cheese has been rightly called "king of the cheeses." It has been prized the world over for its stately appearance and sweet "hazelnut" flavor. In grading Swiss cheese, these two things,appearance and flavor, are important considerations in determining the cheese score. Appearance is judges according to the number, type, and size of eyes present in the cheese, with color and body and texture also considered. Flavor is judges according to the degree of sweetness and the amount and kinds of off flavors present.

Importance of project:

A sweet hazelnut flavor, a pliant texture, and large, evenly distributed "eyes" characterize high quality Swiss of Emmenthaler cheese. The typical sweet flavor is chiefly due to bacteria which produce propionic acid, acetic acid, and carbon dioxide. The eyes are formed from the gas, mainly carbon dioxide, produced by these and other bacteria.

Krett and Stine (20) have found that the lower fatty acid content of a Swiss cheese generally indicates its quality.

A study of factors which may influence the amount and ratios of the volatile acids should be helpful in determining manufacturing and curing procedures …

Potatoes harvested from home gardens and in commercial early-producing fields in the Midwest are an important low-cost source of ascorbic acid from late June into September. The major portion of the early commercial crop in Nebraska (harvested mostly in August) is produced with irrigation. Straw or litter mulching is a well established practice in the nonirrigated garden and farm potato patches. The value of these cultural methods for increasing yield is well known, but prior to this study little was known about their influence on the ascorbic acid content of the tubers, or about the persistence of any such influence …

The marked improvement in the apparent nutritive value of soybean protein after heating has long been recognized. The fundamental cause of this improvement has never been fully understood. Furthermore, commercial soybean oil meal varies considerably in nutritive value although heat treatment is common in most processing plants. Since heating is generally regarded as deleterious to the nutritive quality of protein, the following investigations of various treatments of soybean oil meal are of particular importance in developing a soybean or soybean oil meal of maximum and uniform nutritive value.

This paper presents results of a five-year experiment conducted at the Agricultural Experiment Station, Lincoln, Nebraska, on the adaptation, yield, and quality of several grasses subjected to different frequencies of harvest as a means of determining their forage value.

The Vitamin A And Carotene Content Of Nebraska Butter, I. L. Hathaway, H. P. Davis

Nebraska Agricultural Experiment Station: Historical Research Bulletins

The vitamin-A, carotene, fat and moisture concentrations of Nebraska creamery butter were determined at monthly intervals for 25 months. Samples were obtained from 14 creameries located throughout the state. Their vitamin-A and carotene determinations were made with the aid of a spectrophotometer, and their fat and moisture analyses were determined by the A.O.A.C. methods. From a comparison of these data with the results of investigations in other states it was concluded that Nebraska butter was at least equal in vitamin-A value to average United States butter.
