Youth remain underserved in nutrition research, policy, and programming despite being an integral part of the food systems. While the nutrition-sensitive agriculture framework has been established, there is limited evidence demonstrating how youth engagement in agriculture can serve as a pathway to improve nutritional outcomes. The study assessed youth agricultural engagement and its association with household dietary diversity, household food insecurity, and nutritional status in southwest Nigeria.

The question at the center of this dissertation is simple: does the way food is produced change the quality of the food itself in ways that matter for human health? Across a series of studies on bison meat, eggs, and human dietary intervention, the answer was yes. This work began with a broad look at the modern food system and the nutritional consequences of industrialized diets. Incorporating next-generation milk powders like milk protein isolate (MPI) and milk protein concentrate (MPC) into confections can increase protein content. Milk permeate powders (MPP) are byproducts of the production of high-protein dairy ingredients (MPC and MPI). Typically considered waste streams, growing awareness of sustainability has increased interest in the use of MPP in food. There is minimal research on the use of these ingredients in confections.
This study evaluated the effects of incorporating milk protein powders and MPP into chocolate and the effects of replacing granulated sugar with MPP in caramel on product quality and consumer acceptance.

The Total Western Diet (TWD), a rodent diet designed to model the typical American dietary pattern, has been shown to worsen inflammation and colitis severity in mice. Psychological stress has also been associated with increased intestinal inflammation, barrier dysfunction, and alterations to the gut microbiome. The goal of this study was to determine whether combining the TWD with psychological stress would further worsen colitis severity and alter the gut microbiome. This literature review examines how diet, stress, environmental exposure, and food accessibility may influence college students' mental health and academic performance through the gut microbiome and the Gut-Brain Axis (GBA). Current microbiome research often focuses on early childhood development, clinical disease populations, or older adults, while overlooking college-age students who experience significant social, environmental, and biological transitions. Iron deficiency (ID) affects over 2 billion individuals globally. Children under 5 are at increased risk of ID due to rapid growth and are especially vulnerable to its negative consequences because of iron’s essential role in cognitive development and immune maturation. Toll-like receptors are a class of innate immune pattern recognition receptors that detect pathogen-associated molecular patterns and regulate downstream inflammatory responses. Toll-like receptor 10 remains the only human TLR whose ligand specificity, cellular localization, and immunological function are not fully defined. Emerging evidence suggests that TLR10 may play an anti-inflammatory role and can heterodimerize with TLR2 to modulate immune signaling. Previous studies from our laboratory demonstrated that stimulation with heat-killed Mycobacterium tuberculosis promotes TLR2-TLR10 heterodimerization and trafficking to the cell surface. Erythritol, a commonly used non-nutritive sweetener, has gained popularity as a sugar alternative due to its low caloric value and minimal effect on blood glucose levels; however, emerging research has raised questions about its overall safety. This literature review critically evaluates current peer-reviewed evidence on the effects of erythritol on the cardiovascular and gastrointestinal systems. Findings indicate that erythritol is generally well tolerated in the gastrointestinal tract, with fewer adverse effects than other sugar alcohols due to its rapid absorption and limited fermentation, although symptoms may be dose-dependent and influenced by co-ingestion with other carbohydrates. The SUN Bucks program is an optional program through the United States Department of Agriculture that works in conjunction with the state of Pennsylvania in order to provide school-aged children families with supplemental funds to supply greater nutrition during the summer months. Low Energy Availability (LEA) can occur when an athlete’s energy intake is insufficient to meet the physiological demands of training as well as normal physiological functions. Female soccer players may be at an increased risk of developing LEA due to the high exercise energy expenditure paired with decreased energy intake. The purpose of this study is to assess the prevalence of LEA among Division III female soccer players. Acid whey has gained significant attention within the dairy industry due to its complex matrix and the processing challenges. This by-product contains lactose that can be isolated, hydrolyzed, and further processed to produce hydrolyzed syrup. To optimize lactose utilization, it is essential to fine-tune the kinetics of the β-galactosidase enzymes used for lactose hydrolysis. To analyze sugars in acid whey, and LC-MS-based chromatographic method was developed. Cheese ripening is a complex process that shapes the flavor, texture, and overall quality of cheese, yet many of the factors that control how these changes occur are still not fully understood. One factor that may play an important role is redox potential, which describes the balance between oxidation and reduction reactions happening inside the cheese. After harvesting the animal, pork muscle continues to undergo changes as it turns from muscle into meat. During this early period, the muscle uses up energy and produces acid, which lowers pH and can affect important quality traits such as color and how well the meat holds water. A key driver of these early changes is calcium, a natural mineral inside muscle cells that helps control contraction and energy use. Inflammatory Bowel Disease (IBD) may increase the risk of malnutrition because of nausea, vomiting, diarrhea and restrictive eating. In addition, patients with IBD may experience food and nutrition insecurity. Therefore, we conducted an online survey to assess risk of malnutrition and food and nutrition insecurity among adult patients with IBD in outpatient and community settings. Patients were recruited between July and December 2025, aiming to reach adults in the Rocky Mountain Region diagnosed with IBD. Data collected included demographics, health-related factors, risk of nutrition insecurity, risk of food insecurity, and barriers and facilitators to dietary management of IBD.

Patients with psychiatric conditions often suffer metabolic side effects from psychotropic medications and are often prescribed weight loss medications to mitigate these side effects. Adolescent obesity continues to be a significant public health concern that is associated with long term physical consequences. The purpose of this project was to develop an evidence based, user friendly guidebook that supports healthcare professionals in the education of adolescents with obesity and their families. A structured literature review development process was used to inform the current development of the guidebook. The guidebook includes components of obesity management such as nutrition and physical activity recommendations. Arkansas has the highest food insecurity rate in the U.S., and college students are disproportionately food insecure. Food insecure populations tend to have worse nutrition and face poorer health outcomes, exacerbating the economic disparities they already face. The purpose of this study was to analyze specific food pantry usage trends, healthy diet access barriers, and processed food consumption drivers of Full Circle Food Pantry clients at the University of Arkansas as they related to food insecurity and nutrition disparities, as well as design a targeted project to improve nutation in an underserved client demographic. How food is produced can influence both its nutritional quality and its impact on the environment. In recent years, regenerative (agroecological) farming practices have gained attention for their potential to improve soil health, biodiversity, and the nutritional value of foods. In dairy production, these practices often involve growing more diverse forage crops, reducing soil disturbance, and relying less on monoculture-grown feed rations. However, there is still limited real-world evidence showing how these practices affect the nutritional composition of milk produced on commercial dairy farms.

Attention-deficit/hyperactivity disorder (ADHD) and ADHD-like symptoms, such as difficulty concentrating, mental fatigue, and problems with executive functioning, are increasingly recognized in adults. Although medication is commonly used to manage ADHD, there is growing interest in whether nutrition may also play a role in supporting brain function and attention. Several nutrients involved in brain health including omega-3 fatty acids, vitamin B12, magnesium, iron, and choline have been suggested as potential contributors to cognitive performance and attention. However, the research examining the connection between diet and ADHD symptoms is still limited and sometimes shows mixed results.

This systematic literature review addresses the research question: How does culture affect eating disorders? It examines the role of ethnicity and culture in shaping the prevalence, symptom presentation, and treatment of eating disorders across diverse populations. Although eating disorders have traditionally been studied in Western, predominantly White populations, growing evidence suggests that cultural norms, ethnic identity, globalization, and exposure to Western ideals significantly influence both the development and expression of disordered eating behaviors. This project investigates how pollinator populations can impact chronic disease risk. Pollinator populations are declining, which can have serious implications for human health. Declining pollinator populations can limit healthy food production and affordability. Poor nutrition is a major risk factor for most chronic diseases. Less healthy food available for people to consume can negatively impact diets and increase the risk of developing chronic diseases.
