The hybridization of DNA by sequential electrostatic and hydrogen-bonding immobilization of single-stranded complementary oligonucleotides at the air-water interface with cationic Langmuir monolayers is demonstrated. The complexation of the single-stranded DNA molecules with octadecylamine (ODA) Langmuir monolayers was followed in time by monitoring the pressure-area isotherms. A large (and slow) expansion of the ODA monolayer was observed during each stage of complexation in the following sequence: primary single-stranded DNA followed by complementary single-stranded DNA followed by the intercalator, ethidium bromide. Isothermal crystallization of waxes was studied by using an optical setup. The induction time of crystallization was assessed as a function of wax concentration. The relationship was found to be a decreasing exponential curve. The wax content of some of the solutions prepared in the laboratory was determined by calculating the crystallization induction time. The values obtained were compared to those from different methods (cold test, microscopic, and turbidimetric methods). The results obtained with the optical setup method are similar to those obtained with other methods for concentrations greater than 100 ppm. An analysis of variance test was used to …

The purpose of this study is to determine the practicality of using extra large zip-lock mylar bags with oxygen absorber packets to store corn and beans in Chyulu, Kenya. Weevil usually gets in the food after about 5 months, so if the oxygen can be maintained at a low level, the corn and beans could be stored for longer than that. The goal is to be able to store the food for 18 months. Obesity is an increasingly common public health problem with approximately one-half of the American adult population overweight and one-quarter considered obese. This alarming trend has led researchers to determine potential causative factors of excess weight gain in humans. However, it is difficult to discern whether perturbations that result in obesity are the cause or simply the result of the obese state. Diet-induced obesity is one of the animal models that allow researchers to address temporal issues. Traditionally the occurance of eating disorders has been noted in Caucasian, adolescent females. The purpose of this study was to determine whether Mexican-American preadolescent children possessed disordered eating behaviors and how this affects their body image. The study sample consisted of 68 fourth, fifth, and six grade students. Participants attended either School A or School B located in San Antonio, Texas. Appropriate parental consent was obtained before any student participated. The sample consisted of 41% males and 57% females. Ages ranged from 9 years of age to 12. Low fat Mozzarella cheese was made using exopolysaccharide-producing starter cultures consisting of single strains of Streptococcus thermophilus MR-1C and Lactobacillus delbrueckii ssp. bulgaricus MR-1R with or without the addition of mesophilic exopolysaccharide-producing adjunct mixed culture consisting of Lactococcus lactis ssp. lactis and Lactococcus lactis ssp. cremoris. A control cheese was made using a non-exopolysaccharide-producing starter culture consisting of S. thermophilus TA061 and Lactobacillus helveticus LH100. Cheeses were analyzed for moisture, melt, fat, and protein. Cheeses made with the addition of the mesophilic exopolysaccharide-producing adjunct culture showed significant differences in moisture, but not in melting properties when compared to cheeses …

A basic health and lifestyle questionnaire was given to a convenience sample of 103 Ute elders, age 50 and older. Fifty-three percent reported being diagnosed with diabetes. The mean BMI (body mass index) was 33.31 (SD=8.72). For descriptive purposes, BMI was divided into three categories: less than 25, 25-29.99, 30 or above. Eleven percent were in the BMI category of less than 25. Thirty percent of Ute elders reported a BMI between 25-29.99. Fifty two percent had a BMI of 30 or above. Diabetes rates among this Ute elder sample were significantly lower with a lower income, lower education level, …

The effects of altering pH and calcium level during whey protein extrusion were assessed by measuring the protein solubility and WHC of the textured whey protein (TWP). TWP samples were produced by extruding dry mixtures of 2/3 WPC 80 (80% protein) and 1/3 cornstarch using screw speed of 200 rpms, feed rate of 23 g/min, water flow rate of 11 g/min, and product temperature of 150°C. Bovine lactoferrin (BLF) and bovine transferrin (BTF) are major-iron transport and regulation proteins found in bovine whey. BLF and BTF must interact with the eukaryotic cell surface to mediate their biological function of iron delivery and cellular functions of inflammatory and immunological modulation. As common components of the eukaryotic cell surface, gangliosides were used for affinity purification of BLF and BTF.

Resistance to antimicrobial agents used to treat severe Campylobacter spp. gastroenteritis is increasing worldwide. We assessed the antimicrobial resistance patterns of Campylobacter spp. isolates of human and animal origin. More than half (n = 32) were resistant to sulphonamide, a feature known to be associated with the presence of integrons. Analysis of these integrons will further our understanding of Campylobacter spp. epidemiology.

As I watch the hazy orange sun sink into the still blue sea overlooking Chuuk lagoon, I marked the end of another seemingly ordinary day in the Federated States of Micronesia. But this October day was special—it marked the beginning of a promising new era in Chuuk’s fight against HIV and AIDS. For the past few months, several proceedings had set into motion a cascade of events that would ultimately (hopefully) benefit and educate the people of Chuuk state.

Introduction: This paper presents information on the nutrient composition of commonly consumed traditional dishes eaten by the three major South Asian Muslim groups residing in Britain, namely Bangladeshi, Pakistani and East African Ismaili Muslims.

Methods: Information regarding the most common dishes consumed by South Asian Muslims originating from Bangladesh, Pakistan and East Africa (Ismailis) and living in London was obtained from 7-day menu records over two seasons. For each common dish, weighed recipes were collected in triplicate and the composition (energy and selected nutrients) was calculated from the ingredients and cooked weight of the dish.

Adolescents have increased nutrition needs and report frequent meal skipping and snacking, but there are few studies that examine the determinants of unhealthy eating, especially among ethnic minority groups. This study investigated dietary intake and snacking behavior among Korean-American adolescents in the Los Angeles area. We determined the relationship between dietary fat intake and overall quality of the diet as assessed by two healthy eating indices: the Healthy Eating Index (HEl) and Mean Nutrient Adequacy Ratio (MNAR). Predicting Milk And Soft Drink Consumption Among Female Adolescents Using The Theory Of Planned Behavior, Nada Osman Kassem

A total of 756 female adolescents, aged 13 to 18 years, from five public high schools in Antelope Valley Union High School District located in North Los Angeles County participated in this study between February 1999 and March 1999. The ethnic composition was 53.3% White/Anglo Americans, 19.3% Hispanics or Latinos and 10.2% Black/African Americans. The constructs of the Theory of Planned Behavior (attitude, subjective norm, and perceived behavioral control and their underlying beliefs) were assessed to determine the predictors of low-fat milk and regular soda consumption. A cross-sectional design with group-administered questionnaires was utilized.
