Background: Calcium intake during early adolescence falls short of requirements for maximum bone accretion. Parents and the home food environment potentially influence children’s calcium intakes. This study aimed to quantify parental psychosocial factors (PSF) predicting calcium intakes of Asian, Hispanic, and non-Hispanic white (NHW) early adolescent children from a parental perspective.

Methods: This was a cross-sectional study involving the administration of a validated calcium-specific food frequency questionnaire to a convenience sample of children aged 10–13 years and the primary individual responsible for food acquisition in the child’s household. Background: Type 2 Diabetes (T2D) is associated with dyslipidemia and chronic low-grade inflammation, which greatly increases the risk of cardiovascular disease (CVD) in this population. Hyperlipidemia and inflammation in the postprandial state substantially contribute to atherosclerosis development and CVD risk, and have shown to be exacerbated by high-fat meals. Dietary cocoa is a rich source of flavanols that is associated with favorable effects on cardiovascular health, such as improvements in the lipid profile and chronic inflammation, in non-diabetic adults.

Because supermarkets are a critical part of the community food environment, the purpose of this paper is to examine the association between accessibility to the supermarket where participants were surveyed, frequency of shopping at the supermarket, and self-reported and objectively-assessed fruit and vegetable consumption. Accessibility was assessed using Geographic Information Systems (GIS) measured distance and multiple versions of the modified Retail Food Environment Index (mRFEI), including a localized road network buffer version. The contamination of fruits with human pathogens is a reoccurring concern in the fresh produce industry. Atmospheric cold plasma (ACP) is a potential alternate to customary approaches for non-thermal decontamination of foods. In this study, the efficacy of a dielectric barrier discharge ACP system against Salmonella (Salmonella Typhimurium, ATCC 13311; Salmonella Choleraesuis, ATCC 10708) and Escherichia coli (ATCC 25922, ATCC 11775) was explored. The microbiome is a dynamic community that can positively and negatively influence host health. Lactobacillus reuteri is a probiotic that has received much attention for its ability to inhibit pathogens such as Salmonella typhimurium, Escherichia coli, and Clostridium difficile. It does so by its unique ability to metabolize glycerol into the antimicrobial compound 3-HPA, which is commonly referred to as reuterin. The ability to secrete reuterin is dependent not only on glycerol availability but also the concentration of glucose. Dietary Acculturation Of Obesity Risk Reduction Behaviors In Chinese Americans, Doreen Liou, Kathleen Bauer, Emily Fowler

Increasing rates of obesity among successive generations occur among Chinese Americans. This cross-sectional survey measured obesity risk reduction behaviors and degree of acculturation among a convenience sample of 203 Chinese Americans living in Los Angeles, California. Asian-identified participants were most likely to follow traditional healthful Chinese food patterns, and Western-identified individuals were more apt to engage in leisure physical activity. Individuals categorized as bicultural were prone to use limited amounts of fats or oils when preparing foods. Health professionals and educators working with Chinese Americans need to consider the impact of acculturation affecting the adoption of obesity prevention behaviors.

BACKGROUND/OBJECTIVES: Veggiecation was developed to improve children’s vegetable consumption through classroom lecture and cooking activities. In this study, we explored potential determinants of vegetable consumption behavior and intention, and examined the impact of Veggiecation on vegetable consumption behavior, intention and personal factors among Korean children. SUBJECTS/METHODS: The 4-week Veggiecation program was implemented for second-graders in South Korea (35 children in the intervention group, 36 in the control group). We identified personal and environmental factors influencing vegetable consumption behavior and intention using multiple regression analyses. This study sought to evaluate the associations between changes in glycemic status and changes in total body (TB), trunk, and appendicular fat (FM) and lean mass (LM) in men. A population-based study of men aged 20–66 years at baseline were included in cross-sectional (n = 430) and three-year longitudinal (n = 411) analyses. Prediabetes was defined as fasting glucose 100–125 mg/dL. Type 2 diabetes (T2D) was determined by: self-reported diabetes, current anti-diabetic drug use (insulin/oral hypoglycemic agents), fasting glucose (≥126 mg/dL), or non-fasting glucose (≥200 mg/dL). Brown adipose tissue (BAT) is a crucial regulator in energy expenditure by dissipating energy in the form of heat through mitochondrial uncoupling protein 1 (UCP1). Previously, we demonstrated that n-3 PUFA (Omega-3 Polyunsaturated Fatty Acids) increase brown adipogenesis by miRNA-mediated epigenetic mechanisms. Given that BAT is formed at the late stage of pregnancy, we hypothesized prenatal exposure of n-3 PUFA through maternal nutrition potentiates BAT development. Background: The largest population of Marshallese immigrants in the Contiguous U.S. resides in Northwest Arkansas. Despite adequate access to healthcare, the Marshallese face many health disparities, perhaps partly due to the language barrier they face in healthcare settings and education. Regarding breastfeeding rates, women in the Marshall Islands have a significantly higher rate of exclusive breastfeeding than in Marshallese women residing in the U.S. who face cultural barriers. Breastfeeding is positively correlated to many benefits for infants and is recommended exclusively for at least 6 months by pediatric policy organizations.

The Western Dairy Center at Utah State University funded this project as part of its BUILD Dairy program with support from the dairy farmers of Idaho, to investigate the problem of splits that form in cheese during storage. The bacteria, Lactobacillus wasatchensis had previously been identified as a cause of unwanted gas production in cheese and the defects then make the cheese unsuitable for cutting into slices.

The Fueling Station at Utah State University was created to provide pre-workout fueling and post-workout recovery foods to the Utah State University athletes. The athletes use an online survey to mark what foods they selected after each visit to the Fueling Station.

In industry, antioxidants are added to prevent changes that affect quality due to oxidation, such as the development of off flavors, unacceptable odors and discoloration. New resources that are familiar to consumers and may work as antioxidants should be studied.

ackground This paper describes the development, reliability, and convergent validity of a practical tool-the Convenience StoreSupportive Healthy Environment for Life-Promoting Food (SHELF) Audit. Methods Audit items included: a variety of fresh, processed, and frozen fruits and vegetables; low-fat dairy products; healthy staples and frozen meals; healthy food incentive programs; items sold in check-out areas; portion/cup sizes; and pricing. Low-income individuals are at a higher risk for food insecurity, certain chronic diseases, and poor dietary intake as compared to their higher-income counterparts. As a result, it is essential that low-income individuals eligible for the Supplemental Nutrition Assistance Program (SNAP) are provided with opportunities to advance their nutrition-related knowledge, skills, and self-efficacy. Unlike other federal nutrition assistance programs, SNAP participants receive benefits only once a month and have very few restrictions on what foods can be purchased. Burns cause massive dermal wounds. Wound healing elicits a significant catabolic response and increase in energy expenditure, and thus, calorie needs. Overfeeding and/or underfeeding the overweight and obese critically ill patient can increase complications. Indirect Calorimetry (IC) is considered the ‘gold standard” for the measurement of Energy Expenditure (EE). Predictive equations are calculated to estimate EE instead. The whole grain and fat content of the diet have been previously shown to affect intestinal fermentation and phenotype conferred by high–amylose maize resistant starch (HAMRS), a form of fermentable dietary fiber. The current studies were designed to compare rodent gut health following consumption of whole grain and non–whole grain prebiotics on moderate fat (MF) and high fat (HF) diets, and to optimize health effect based on dosage of whole grain resistant starch prebiotics.

To examine the feasibility of using social media to assess the consumer nutrition environment by comparing sentiment expressed in Yelp reviews with information obtained from a direct observation audit instrument for grocery stores.

Design
Trained raters used the Nutrition Environment Measures Survey in Stores (NEMS-S) in 100 grocery stores from July 2015 to March 2016. Yelp reviews were available for sixty-nine of these stores and were retrieved in February 2017 using the Yelp Application Program Interface. Background: Telomeres are the noncoding nucleotide sequences at the end of eukaryotic chromosomes, serving to protect DNA during mitotic division. Given their guanine-rich structure, telomeres are highly susceptible to oxidative damage often mediated by inflammation. Recently, telomere attrition and dysfunction have been associated with age-related diseases, including cardiovascular disease, type 2 diabetes, Alzheimer’s disease, and certain cancers. Volatile compounds are responsible for the characteristic aroma of raw and roasted pecans. Yet, much is unknown about the specific effects of roasting on pecan volatiles. In this study, the volatiles of raw “Desirable” pecans from Georgia and 3 roasted pecan samples (175 °C for 5, 10, and 15 min) were determined by HS-SPME coupled to GC-MS using stable deuterium-labeled volatiles as internal standards for quantitation. As expected, roasting markedly impacted the volatile profile of pecans: a total of 63 flavor-active compounds were identified in roasted samples, including 9 compounds not detected in raw “Desirable” pecans. BACKGROUND: It is unclear how rural occupations and lifestyles may play a role in shaping physical activity and diet behaviors that contribute to the rural⁻urban obesity disparity.
METHODS: Data come from the prospective and observational South Dakota Rural Bone Health Study, which included adults aged 20⁻66 years in three groups: (1) non-rural non-Hutterite, (2) rural non-Hutterite, and (3) rural Hutterite. Physical activity data were collected using 7-day physical activity questionnaires, and hours per day in physical activity categories are reported. Creatine has been extensively researched and is well-supported as one of the most effective dietary supplements available. There is overwhelming support within the literature regarding the ability of creatine to augment performance following short term (5–7 days) and long-duration supplementation periods. There is also strong support for creatine regarding its safety profile and minimal risk for adverse events or any negative influence on markers of clinical health and safety.
