The study of training and employment needs of food service personnel in 15 selected West Tennessee hospitals was accomplished by means of two questionnaires completed during personal interviews with hospital administrators and food service managers of hospitals in two groups by size. Specific weaknesses in the training of food service employees were noted. Hospital administrators reported inadequately trained employees as one of their major problems, and foodservice managers stated that lack of education and training was a major problem in the procurement of food service personnel. Other problems that administrators and feed service managers mentioned frequently regarding food service employees …

The relationship of dietary sulfate to the efficiency of feed utilization, excretion of 35S-cysteine sulfur as 35S-taurine sulfur, and sulfation of lung tissue by the rat was investigated.
The feed efficiencies of animals fed diets from weaning that contained 0.10 per cent of inorganic sulfate and 0.47 per cent of organic sulfur as sulfate were significantly higher at the end of a six-week feeding period than were those of littermates fed diets that contained higher or lower levels of inorganic sulfate but comparable levels of total sulfur as sulfate. The purposes of this study were to determine the contribution the food eaten at day care centers made to the Recommended Dietary Allowances of preschool children; to evaluate their nutritional status using seven-day records of food intake and measurements of height, weight, and bone density; and to study the correlation between selected nutrients and bone density.
Children from four day care centers in Knoxville, Tennessee, were participants in this study. Permission for participation was obtained by the signed consent of the parents. In order to investigate the present state of nutrition education in nursing schools and programs in Tennessee and the nutrition education responsibilities of nurses in general hospitals in the state, surveys were taken by means of questionnaires. Three different questionnaires were developed--one pertaining to the nutrition courses taught in schools of professional nursing, one pertaining to the nutrition taught in programs of Licensed Practical Nursing, and one attempting to ascertain the nutrition education responsibilities of nurses according to directors of nursing in general hospitals in Tennessee.

Fifty-four weanling Long-Evans-Sprague-Dawley rats were fed a niacin-free, 12 percent casein basal diet for one week. At the end of the pre-experimental adjustment period each rat was assigned to one of seven groups so that the average weight per group did not differ by more than one or two grams. Three of the seven groups ("A," "B" and "C") were fed the experimental diets (basal supplemented with L-phenylalanine to 3, 5 and 7 percent levels). The fact that anemias constitute an important problem of public health has been realized only comparatively recently. When field surveys made in different countries before and after World War II had collected a great deal of information on dietary habits, food consumption levels, and nutritional status , it became more apparent that mild, moderate, and even severe anemic states existed in different communities. Two trials were conducted using 48 infant pigs of both sexes. Pigs were taken from the sow when three to seven days old and placed in wire-bottomed metal cages by pairs. Animals in the first trial received synthetic diets containing 100 or 1000 international units of ergocalciferol and 1000 or 4000 international units of retinyl acetate or four or sixteen milligrams of beta carotene per kilogram of feed. The effects of controlled atmosphere storage vs conventional refrigerated storage on the metabolism of Moorpark and Large Early Montgamet apricot and Elberta peach fruits were studied. The controlled atmospheres studied were 0.0 percent CO2-5.0 percent O2; 2.5 percent CO2-5.0 percent O2; 5.0 percent CO2-2.5 percent O2; 7.5 percent CO2-5.0 percent O2; as compared to conventional refrigerated storage. Nitrogen percent was assumed to be the difference between the total CO2 and O2 content minus 100.

The Honey Sweet carrots were canned with Ethyienediamine tetracetic acid (CaNa2EDTA) and Sodium hexametaphosphate (Ha-HMP) at five different water hardness (0 , 20, 40, 80, 160 ppm of calcium and 20 of magnesium) , then stored at temperatures of 70 and 100 F. Evaluations were made at sixty-day i intervals for six months. Firmness and color degradation decreased significantly when water hardness or storage time increased. Under storage at 100 F and 0 hardness of water, the decrease of color and firmness was constantly accelerated.

THREE-QUARTERS of the calves born in autumn on butterfat farms are not required as milking replacements and are thus available for beef production or immediate sale, at about $20 a head.
The profit from selling beef must be compared with that from selling excess calves off their mothers.

The conventional method of hand rearing dairy calves in Western Australia calls for the feeding of whole milk, skim milk and/or milk substitutes for periods of up to 16 weeks.
This requirement for milk and labour has often prevented beef production from becoming a major sideline on many wholemilk and butterfat farms.

Analysis of lambing trials with Merino ewes has shown a highly significant association between pre-mating liveweight and lambing performance.
With May-June lambing ewes there was a 2.9 per cent, lambing increase for every extra 10 lb. liveweight; for July-August- September lambing ewes there was a 6.9 per cent, increase for every 10 lb. liveweight increase.
With the May-June lambing there was a critical weight below which twinning was negligible.

This routine adds considerably to the labour necessary at milking time and may have prevented many farmers from putting much effort into dairy beef production.

THE removal of butterfat from milk by separation, reduces the energy content of the milk by about 50 per cent., and must slow the growth of calves unless extra energy is provided from some other source.
In the dairying districts of Western Australia, there has been considerable interest in recent years in the addition of homogenised tallow to skim milk to provide extra energy.

Recent scientific reviews have concluded that in spite of the great number of experimental observations recorded throughout the world there is no evidence yet to prove that urea can be used profitably for sheep on low quality roughages in genuine grazing conditions.
An experiment is in progress at Merredin Research Station this season, especially designed to demonstrate a response to urea by sheep grazing wheat stubbles, if such a response is possible.
