This project investigates how pollinator populations can impact chronic disease risk. Pollinator populations are declining, which can have serious implications for human health. Declining pollinator populations can limit healthy food production and affordability. Poor nutrition is a major risk factor for most chronic diseases. Less healthy food available for people to consume can negatively impact diets and increase the risk of developing chronic diseases. This project aims to address a potential gap in research existing on this specific topic regarding pollinator populations and human chronic disease risk. The agricultural sector is the primary source of livelihood for communities in Southeast Asia; however, these activities increase the risk of exposure to zoonotic diseases, particularly leptospirosis. Southeast Asia is one of the regions with the highest incidence of leptospirosis in the world. This literature review aims to identify risk factors for leptospirosis among agricultural workers in Southeast Asia. The search for research articles utilized three databases (Google Scholar, PubMed, and ScienceDirect) using a descriptive approach based on literature review and the Preferred Reporting Items for Systematic Reviews and Meta-Analysis (PRISMA) guidelines. Utah farmers markets play a critical role in food access, small business viability, and community connection, yet limited statewide data document their impact. The Utah Farmers Market Network (UFMN) and Utah State University (USU) Extension conducted a mixed-methods evaluation (2023–2025) and found that farmers markets make valuable contributions to the community.

The industrialized food system creates environmental harm, reduces food sovereignty, and contributes to growing food insecurity. These problems oftentimes are overlooked in higher education. To address this gap, our project examines how access to sustainable food education and campus-community partnerships can improve well-being and informed decision-making amongst University of Montana students. This collaborative project connects partners within UM Wellness, PEAS Farm, the Missoula Food Bank and Community Center, and the Big Sky Culinary Institute. Consumer uptake of a sustainable diet is critical for addressing environmental challenges and promoting public health. Understanding why consumers resist adopting sustainable eating habits can inform targeted interventions and policies. This pilot study examines whether a newly developed scale can effectively detect consumer resistance to a sustainable diet. Patch Mow Grazing: Investigating The Effects Of Mowing On Forage Nutritive Value, The Biomass–Nutritive Value Relationship, And Herbivore Selection, Trace R. Stauble

Herbivore foraging behavior plays a critical role in shaping grassland structural heterogeneity, with selection often driven by forage biomass and nutritive value. Currently, it is thought that herbivores primarily select areas that are greater in nutritive value, and low in biomass. More specifically, disturbances like fire and grazing have been thoroughly studied showing that recently burned and grazed areas are not only higher in nutritive value but disproportionately selected by herbivores in comparison to undisturbed areas. However, most studies address only narrow ranges of defoliation, comparing intensely defoliated sites (< 10 cm) to those that are either not defoliated or have experienced a much longer time since defoliation, thereby decreasing grazing pressure as biomass increases. However, one of the most widely used methods of defoliation in grasslands, mowing, hasn’t been thoroughly studied for its effects on nutritive value, and how it impacts herbivore selection. Vitamin D is a fat-soluble vitamin that is directly related to sunlight and is involved in multiple physiological processes including calcium metabolism, feather quality, and chick development. Most vertebrate species are capable of both absorption of exogenous vitamin D and internal synthesis of vitamin D, with vitamin D3 (cholecalciferol), being more accessible and bioactive in bird species. In exotic bird species, dietary requirements for vitamin D3 are largely unknown, and the ability to maintain adequate serum concentrations of vitamin D3 metabolites without direct sunlight exposure also requires evaluation.
