Background: Consuming a wider variety of nutrient-dense foods may promote adherence to healthful dietary patterns, leading to improved dietary quality and enhanced metabolic health.
Objective: We used the US Healthy Food Diversity (HFD) index to simultaneously measure dietary variety, quality, and proportionality, hypothesizing a priori that race/ethnicity may moderate associations between diet and health.

The Jains are a small but influential minority community in India. Their religion is structured around the concept of ahimsa, the strict adherence to nonviolence in one’s every under taking. The ideal Jain diet does the least amount of harm to both oneself and one’s environment, including plants and microscopic organisms. Over the past several decades the prevalence of obesity and asthma have increased in a parallel fashion. Recent studies reported a positive relationship between the two disorders that may in fact be causal. Although the link between obesity and asthma has become widely recognized, the underlying pathophysiological connection is not elucidated. Increased markers of inflammatory and oxidative stress are present in obesity and asthma suggesting the link is immunological. The increased number of individuals with metabolic diseases has become a public health concern. Vitamin A (VA, retinol) is required to maintain the general health of an individual. How VA contributes to the regulation of glucose and lipid homeostasis in normal and metabolic disease states is unclear. VA’s physiological activities are mainly mediated by its metabolite, retinoic acid (RA), which activates several transcriptional factors in the nuclear receptor super family and in turn, regulates the expression of numerous genes for macronutrient metabolism. Many users are now transitioning to small-scale hydroponics and aquaponics at home. There can be a barrier to entry with these systems as there is a delicate balance of chemicals, pH, etc. that must be maintained. There are sensors for these various components but they are either aimed at commercial production or are un-automated. Fresh Bytes is a microcomputer with sensors to detect all of these unseen components in a hydroponic system. A prototype of this microcomputer is produced along with CAD plans for more professional versions of it. The sensors are verified and future development is contemplated.

Dietary and physical activity habits are developed early in life and are influenced by family environments. We describe and evaluate an intervention for low-income families to encourage healthy habits. The RD Parent Empowerment Program (http://www.eatright.org/programs/kidseatright/activities/content.aspx?id=6442477891) consists of four workshops centered on the 8 Habits of Healthy Children and Families (Academy of Nutrition and Dietetics Foundation). Enteral nutrition (EN) is frequently interrupted in the critically ill patient, which can lead to nutritional deficits and severe weight and lean body mass loss. Increased EN rates are being used more frequently to account for these interruptions. Research trials were conducted to evaluate the effects of different levels of dietary grain sorghum on broiler live performance, carcass yield and shank (leg) and breast skin coloring. Iso-caloric diets were formulated where sorghum replaced corn at rates of 0% (control), 20, 40, 60, 80 and 100% for a total of 6 diets. For each of the two trials, 1500 Cobb 500 male broiler chicks were randomly allocated to 60 pens with 25 birds per pen (10 pens/diet) and grown to 46 days for the first research trial and 41 days for the second. Two trials were performed using one-day-old male Cobb x Cobb 500 broilers to determine how dietary phytate and phytase levels as well as phytase phase feeding impacted bird performance parameters, tibia characteristics, and malonaldehyde (MDA) content of the liver, breast and thigh tissues. The first experiment consisted of 1,008 birds randomly placed in 48 floor pens within two commercial broiler houses at the Applied Broiler Research Farm (ABRF; 21 birds per pen; 0.76 ft2 per bird). Grain sorghum contains functional starch fractions, which have been widely reported for their potential on blood glucose control and diabetes prevention. 4,096 broiler chicks were randomly allocated to 128 floor pens (32 birds/pen). 2,048 day-old male broilers were placed in the east end of a barn, and the following week 2,048 day-old male broilers were placed in the west end. At each placement day, half of the chicks were Cobb 500 and half were Ross 708, and each pen contained only one breed source. Low-moisture snacks account for much of the saturated fat in the diet, making them a key target for improving consumers’ health. However, it is not currently feasible to maintain the same shelf life when replacing saturated fats with unsaturated fats in these products. The first study characterized the microstructure of a low-moisture cracker model system and determined the impact of iron, chelators, and free fatty acids (FFA) on lipid oxidation kinetics. Confocal microscopy showed that lipids form a continuous layer surrounding the small and/or minimally gelatinized starch granules. Dietitians are expected to deliver sound and scientifically objective advice to the general public, yet their personal beliefs and behaviors could influence delivery of nutrition care. Increased understanding of the personal attitudes and behaviors of dietitians concerning eating behavior and body image could help improve dietetic practice. Traditional nutrition education emphasizes cognitive eating, i.e., monitoring energy intake and comparing macronutrient intakes to the current acceptable ranges. Intuitive eating, however, promotes the release of cognitive eating in favor of greater attention to physiologic cues, or “body wisdom”. One potential mechanism by which sleep may lead to overweight and obesity is through positive energy balance (i.e. energy intake exceeding expenditure). Children's general preference for sweeter foods and aversion to bitter vegetables is explained partly by fear of new food and social and cultural influences. Reluctance to eat new foods is related to unfavorable facial expressions and is often learned from the child's family, social circle, and culture.1 Researchers report that the fruit and vegetable consumption of children 6–12 years of age is associated with the accessibility and availability.2 School-based interventions that combine classroom curricula, parental, and nutrition service components show the greatest promise for fruit and vegetable promotion among children.

Fatty-acid composition of fat stores affects exercise performance in a variety of vertebrates although few such studies focus on flying vertebrates such as migratory birds, which are exceptional exercisers. We first discuss the natural variation in quality of fat available in natural foods eaten by migratory birds and their behavioral preferences for specific fatty acids in these foods. Background: Heart failure (HF) is associated with cachexia and consequent exercise intolerance. Given the beneficial effects of aerobic exercise training (ET) in HF, the aim of this study was to determine if the ET performed during the transition from cardiac dysfunction to HF would alter the expression of anabolic and catabolic factors, thus preventing skeletal muscle wasting. Methods and Results: We employed ascending aortic stenosis (AS) inducing HF in Wistar male rats. Controls were sham operated animals. A series of experiments were conducted to characterize the autocrine role of adiponectin in modulating fatty acid metabolism and inflammation in the pig. In the first study, we cloned and sequenced the porcine adiponectin open reading frame and evaluated the regulation of adiponectin, in vitro and in vivo. The porcine sequence shares approximately 88, 86, 85 and 83% homology with the dog, human, cow and mouse adiponectin, respectively, and 79–83% similarity with dog, human, cow and mouse proteins at the amino acid level, based on the translated porcine sequence and GenBank submissions for the other species. It affects around 5% of children worldwide and 11% of children in the United States, with rates increasing. Pharmaceutical treatments, such as amphetamines and methylphenidates, are not effective for everyone and are known to have unwanted side effects. Naturally occurring forms of Vitamin E are metabolized to various carboxychromanols and conjugated carboxychromanols. Recent studies showed that vitamin E metabolites, especially the long-chain carboxychromanols are more bioactive than unmetabolized vitamin E forms. It is necessary to quantify vitamin E metabolites in biological environment. Here a simple and effective extraction method was developed to achieve extraction efficacy of more than 90% of various forms of vitamin E and metabolites with less than 10% inter- or intra-day variation. Brown adipose tissue (BAT) utilizes stored lipids to generate heat, therefore reducing body fat content and favoring a leaner body composition. Recent identification of metabolically active BAT in adult humans has sparked broad interests in understanding the developmental origin and postnatal homeostasis of BAT.
