Analysis Of Weight-Related Advertisements And Nutrition Articles In Popular Women's Magazines, Jennifer Cardall Jacobson

Objective: The purpose of this study was to discover whether the weight-related messages and themes from food advertisements in women's magazines reinforce or contradict the messages communicated in nutrition-related articles focusing on weight control within the same magazines.

Design: Content analysis of 48 issues of weight-related content six popular women's magazines, 2001-2002. There were three magazines in each of two categories, "homemaking" and "health." All food and nutrition advertisements were analyzed (n=954), along with all nutrition articles (n=336). Weanling male Sprague-Dawley rats were randomly fed three different diets (n=8 per group), a control diet (AIN '93) (C), a blueberry diet (B) for 13 weeks and a reverse diet (R)(C for 13 weeks, switched to B for 8 weeks). Aortae were excised, rings were prepared, and two intact and two denuded rings were immersed in tissue baths containing physiological salt solution (PSS) at 37OC, aerated with 95% 0 2 and 5% CO2 (pH 7.4). Following equilibration and pre-conditioning under 1 Sgm preload, cumulative dose response curves were generated with six doses of the a-1 adrenergic receptor agonist L- Phenylephrine …

Identifying those seniors most likely to adopt a healthy diet, the relative importance they place on certain perceived benefits associated with a healthy diet, and whether these perceived benefits are associated with selected demographic, lifestyle, and health history variables is important for directing effective dietary health promotion programs. Methods: Analyses are based on a cross-sectional convenience sample of 670 seniors aged 50 years and older at the 2002 World Senior Games in St. George, Utah. Data are assessed using frequencies, bivariate analysis, analysis of variance, and multiple logistic regression analysis. The effect of addition of CaCl2 2H2O and MgCl2 6H2O on crystallization kinetics and the rheological behavior of a 70% trehalose solution was studied by polarized light microscopy and dynamic oscillatory rheometry. Salts caused a delay on nucleation with induction times for crystallization longer for Mg2+ than for Ca2+. Divalent cations were incorporated into crystals, changing the growth of certain faces preferentially, which resulted in changes in morphology. Addition of CaCl2 2H2O in a high salt/trehalose molar ratio dramatically increased complex modulus (G*), indicating a stronger viscoelastic behavior. A gel-like structure was formed when Ca2+ was added to trehalose solution. …

The effects of addition of the sucrose esters (SE) P-1670, P-170, and S-170 to a high-melting fraction of milk fat (HMF) and its blends with sunflower oil (SFO) on nucleation and growth were studied by laser polarized light turbidimetry and polarized light microscopy (PLM). The three SE delayed nucleation of HMF at the temperatures selected. P-1670 did not modify average crystal size after 3 h at crystallization temperature (Tc) or crystal size distribution and modified crystallization kinetics only slightly. P-170 and S-170, however, markedly diminished crystal size and narrowed crystal size distribution. Activation free energies of nucleation at equivalent supercooling, …

Teachers have an active role in helping to prevent and deter stigmatizing acts toward children labeled as "fat." The objective was to examine attitudes of obesity and their change processes among student teachers and schoolteachers, when exposed to a Web-based educational module promoting size acceptance, using the Elaboration- Likelihood Model (ELM). The ELM is a theoretical approach to message-based persuasion specifying conditions under which attitude change occurs. Traditionally, shelf life studies of cereal staples have investigated quality after storage for a maximum of several (~18) months. However, there is a market for product that will store for much longer periods of time, intended for such uses as personal storage, emergency relief efforts and military rations. Manufacturers of further processed potato products recognize consumer demand for convenience and the economy of transporting dehydrated commodities. Dehydrated food commodities can be packaged in restaurant-size No.10 cans intended for long-term storage for such uses as personal storage, emergency relief efforts and military rations. Over the past few decades, nonfat dry milk (NFDM) has been retail-packaged for long-term storage in No. 10 cans under reduced oxygen concentrations for use in emergency situations. Little information is available concerning the quality of NFDM held in such conditions for prolonged storage periods. The objective of this research was to evaluate the quality attributes of NFDM in hermetically sealed cans with reduced oxygen levels held in long-term storage. Dehydration reduces egg mass and increases shelf-life without significantly affecting most functional properties. This has created a demand for dehydrated whole egg in military rations, emergency relief programs and personal storage. However, because such products are usually stored before use, the buyer may be unaware of product quality until long after purchase. Activation free energies of nucleation (ΔG c ) were calculated using induction times of crystallization measurements. Results showed that ΔG c decreased exponentially as wax concentration increased at a constant crystallization temperature (T c ). In contrast, for a constant supersaturation, ΔG c increased from 12 to 22°C but decreased between 22 and 35°C. Melting behavior of purified waxes and solutions of purified waxes in sunflower oil were studied by DSC after crystallization at fast and slow cooling rates (20 and 1°C/min, respectively). Low supercooling temperatures (T c >65°C) showed an increase in the onset temperature (T 0 ) as …

Because of the growing evidence of the cardio protective effect of nuts, examining the potential of nuts as a healthy food choice for the larger population should be considered. The purpose of this 12-month crossover study was to evaluate the impact on diet, eating patterns, and satiety of supplementing a self-selected diet (with little or no nuts) with ~52 g of almonds in free-living healthy males (43) and females (38) between the ages 25 and 70 years.
