Objective: The purpose of this study was to discover whether the weight-related messages and themes from food advertisements in women's magazines reinforce or contradict the messages communicated in nutrition-related articles focusing on weight control within the same magazines.

Design: Content analysis of 48 issues of weight-related content six popular women's magazines, 2001-2002. There were three magazines in each of two categories, "homemaking" and "health." All food and nutrition advertisements were analyzed (n=954), along with all nutrition articles (n=336). Increasing numbers of people worldwide are being diagnosed with Celiac Disease, an intestinal disorder caused by ingestion of foods containing gluten. Traditional baked goods are prepared using wheat flour that contains gluten. Literature suggests that the absorptive surface of the small intestine is damaged in people susceptible to gluten. Alternative gluten-free products are needed to improve the health of people with this disease. Identifying those seniors most likely to adopt a healthy diet, the relative importance they place on certain perceived benefits associated with a healthy diet, and whether these perceived benefits are associated with selected demographic, lifestyle, and health history variables is important for directing effective dietary health promotion programs. Methods: Analyses are based on a cross-sectional convenience sample of 670 seniors aged 50 years and older at the 2002 World Senior Games in St. George, Utah. Data are assessed using frequencies, bivariate analysis, analysis of variance, and multiple logistic regression analysis. The effect of addition of CaCl2 2H2O and MgCl2 6H2O on crystallization kinetics and the rheological behavior of a 70% trehalose solution was studied by polarized light microscopy and dynamic oscillatory rheometry. Salts caused a delay on nucleation with induction times for crystallization longer for Mg2+ than for Ca2+. Divalent cations were incorporated into crystals, changing the growth of certain faces preferentially, which resulted in changes in morphology. Addition of CaCl2 2H2O in a high salt/trehalose molar ratio dramatically increased complex modulus (G*), indicating a stronger viscoelastic behavior. A gel-like structure was formed when Ca2+ was added to trehalose solution. …

The nutritional value of the kernel meals of three species of lupin (Lupinus albus, L. angustifolius and L. luteus) was compared against each other and a reference ingredient of solvent extracted soybean meal, when fed to rainbow trout (Oncorhynchus mykiss). Each lupin kernel meal was included in test diets at 300 g/kg and also at a greater level, representing 50% of the total protein content in the diet. The digestibility of protein of all lupin kernel meals was better than for the soybean meal. The highest protein digestibility was that from L. luteus kernel meal at 30% inclusion (100%), which …

The effects of addition of the sucrose esters (SE) P-1670, P-170, and S-170 to a high-melting fraction of milk fat (HMF) and its blends with sunflower oil (SFO) on nucleation and growth were studied by laser polarized light turbidimetry and polarized light microscopy (PLM). The three SE delayed nucleation of HMF at the temperatures selected. P-1670 did not modify average crystal size after 3 h at crystallization temperature (Tc) or crystal size distribution and modified crystallization kinetics only slightly. P-170 and S-170, however, markedly diminished crystal size and narrowed crystal size distribution. Activation free energies of nucleation at equivalent supercooling, …

This study was undertaken to evaluate the nutrient excretion budgets for each of three key commercial diets when fed to barramundi (Lates calcarifer). The diets differed primarily in their energy density ranging from 21.3 MJ/kg DM to 23.0 MJ/kg DM, with the protein content of each diet being relatively constant at around 550 g/kg DM. The determination of the nutrient excretion budgets required the assessment of the digestibilities of key nutrients from each of the diets and also the specific retention of nutrients over a prolonged period. This necessitated two digestibility trials and a growth trial.

Australian abalone fisheries produce a high value, export-orientated products that provided 60% of the world supply in 1994 (Fleming, 2000). With wild abalone fisheries declining in countries worldwide, the interest in aquaculture products has increased substantially. The world production of abalone from aquaculture in 1999 was approximately 7,775 tonnes with only 89 tonnes (ca. 1%) being produced in Australia (Fleming, 2000). For the past several decades, there has been a steady increase in obesity in the United States. National surveys indicate that 64% of American adults are overweight or obese and more than 1 0% of preschool children are overweight. This study determined the prevalence of overweight in a group of preschool children aged between three and five years at a Head Start Center and evaluated the relationship of specific lifestyle factors between caregivers and their children and the relationship of these patterns to the development of overweight. Context: It was unclear in the current research how Certified Athletic Trainers (ATC) perceived their professional preparation about eating disorders and disordered eating. Objective: To establish how ATCs perceived their professional preparation and educational background in managing eating disorders. Design and Setting: A 42 item web based survey was specifically created for this study and disseminated to certified members of the NATA. Subjects: The survey was disseminated to 14,477 certified NATA members. The response rate was 13.6% (n=l 966) with a mean age 31.87±7.82. Dehydrated food commodities can be packaged in restaurant-size No.10 cans intended for long-term storage for such uses as personal storage, emergency relief efforts and military rations. Because foods packaged for long-term storage are seldom opened soon after purchase, the quality of the product or the adequacy of the packaging could be unknown to the buyer for months or even years. Over the past few decades, nonfat dry milk (NFDM) has been retail-packaged for long-term storage in No. 10 cans under reduced oxygen concentrations for use in emergency situations. Little information is available concerning the quality of NFDM held in such conditions for prolonged storage periods. The objective of this research was to evaluate the quality attributes of NFDM in hermetically sealed cans with reduced oxygen levels held in long-term storage. Dehydration reduces egg mass and increases shelf-life without significantly affecting most functional properties. This has created a demand for dehydrated whole egg in military rations, emergency relief programs and personal storage. However, because such products are usually stored before use, the buyer may be unaware of product quality until long after purchase.
