Di Indonesia, pertambahan berat badan selama kehamilan umumnya rendah (<10 >kg), padahal pertambahan berat badan tersebut merupakan indikator pertubuhan janin yang penting. Di Kabupaten Bogor, prevalensi ibu hamil penderita Kurang Energi Kronis (27,6%) adalah tinggi. Penelitian ini bertujuan mengetahui pertambahan berat badan selama kehamilan dan hubungannya dengan berat badan bayi baru lahir. Penelitian dengan disain potong lintang ini dilakukan pada 270 sampel ibu hamil yang melahirkan cukup bulan (>37 minggu), mengunakan metoda Regresi Logistik. Ditemukan proporsi bayi lahir dengan berat 2.500-2.999 gram adalah 47,8%. Rata-rata berat lahir adalah 3.015 gram. Proporsi ibu dengan pertambahan berat badan selama kehamilan 48,9%. …

Di Indonesia, pada 1999-2003, remaja putri yang mengalami Kekurangan EnergiKronis (KEK). akibat asupan energi yang kurang adalah 35–40% dan sekitar 50% remaja putri menderita status gizi kurang (IMT <18,5 kg/m² ). Tujuan penelitian adalah mengetahui gambaran epidemiologi. IMT remaja putri dan berbagai faktor yang berhubungan Rancangan studi yang digunakan adalah rancangan potong lintang (cross sectional). Populasi adalah remaja putri berusia 16-18 tahun yang tinggal di Buki Tinggi dan sampel adalah 156 siswi kelas III SLTA (SMA, MA, dan SMK) usia 16–18 tahun yang terpilih dari 11 sekola yang diamati. Analisis data dilakukan secara multivariate dengan metoda logistic regression ganda. Hasil penelitian (1) Rata-rata IMT remja putri adalah 20,69 kg/m²± 2,63. (2) Proporsi siswi dengan IMT<18,5 kg/m² adalah 19,9% yang meliputi 14,1% kekurangan gizi ringan dan 5,8% kekurangan gizi berat. (3) Rata-rata asupan energi remaja putri adalah 1,694 kalori dan rata-rata kontribusi terhadap total energi protein (11,8%), lemak (26,7%) dan karbohidrat (58,7%). (4) Rata-rata asupan energi dibanding AKG meliputi total energi (77%), protein (93,6%). Variabel yang berhubungan secara bermakna dengan IMP pada remaja meliputi total energi, kebiasaan makan dan citra tubuh dengan IMT remaja putri dengan variabel utama adalah total energi. In Indonesia, in period of 1999–2003, abot 35–40% women in productive age of 15–19 are at risk of Chronic Energy Deficiency (KEK) because of insufficient consumption of energy. This research is aimed at obtaining the description of nutritional status of girls in Bukittinggi and factors related to it. The research that was conductec in period of February tol March 2006 used the design of cross sectional. The study population is the girls studied are represented by the third-grade female students of senior high schools of 16–18 who are categorized as a late teenager who is very close to pregnant period. The sample consist of 156 female student that was selected by systematic random sampling at 11 schools. The results show that the BMI of the girls is 20.69 kg/m²± 2.63 on average. The proportion of students having BMI <18.5 kg/m2 is 19.9% all of which is distributed to 14.1% of light level of malnutrition and 5.8% for heavy level of malnutrition. Intake per day is 1,694 calorie on average with protein contributed to intake is 11.8%, fat 26.7% dan carbohydrat 58.7%. Intake energy compared with Recommended Dietary Allowence (RDA) are total energy consumption 77%, protein 93.6%, lemak 65.3% and carbohydrat 84.7%. There is a significant relation between energy consumption, eating habit, body image, by BMI. Variable energy consumption is the dominant variable influencing BMI.

Migrant farm workers--a high percentage of which are Hispanic--are an extremely disadvantaged population that experiences several barriers, including language, nutrition, transportation, and access to health services. This population also suffers from numerous diseases (obesity, diabetes, and heart disease) and experiences various hazards associated with risky work, such as pesticide exposure. The pronghorn (Antilocapra americana) was reintroduced into Wind Cave National Park (WCNP), South Dakota, in 1914, and thus, has inhabited the Park for nearly a century. During the 1990's, a decline in the population raised concern for the continued existence of pronghorn inside WCNP; an investigation into the observed decline was initiated. BACKGROUND: Dietary calcium may play a role in the stimulation of lipolysis and the inhibition of lipogenesis, thereby reducing body fat.
OBJECTIVE: The aim was to determine whether an association existed between change in percentage body fat (%BF) or fat mass and calcium intake in children aged 3-5 y.
DESIGN: A secondary analysis of a 1-y randomized calcium and activity trial in 178 children was conducted. Three-day diet records and 48-h accelerometer readings were obtained at 0, 6, and 12 mo. Body composition was measured by dual-energy X-ray absorptiometry at 0 and 12 mo.

Consumption of plant sterol esters reduces plasma LDL cholesterol concentration by inhibiting intestinal cholesterol absorption. Commercially available plant sterol esters are prepared by esterifying free sterols to fatty acids from edible plant oils such as canola, soybean, and sunflower. To determine the influence of the fatty acid moiety on cholesterol metabolism, plant sterol esters were made with fatty acids from soybean oil (SO), beef tallow (BT), or purified stearic acid (SA) and fed to male hamsters for 4 wk. Nuts are rich sources of polyphenolic compounds and nutrients, which have antioxidant capacity. To assess the acute effect of treatment diet (75% of energy from nuts (walnut or almond) and control diet (habitual diet with no nut consumption) in healthy subjects on plasma total phenol content, antioxidant capacity and plasma lipid peroxidation. Thirteen subjects participated in the crossover design study. After an overnight fast, walnut, almond and a control diet, in form of smoothies, were consumed by the study subjects. This experiment was designed with the aim to examine how fat substitutes affect the sensory and physical qualities that contribute to acceptability of chocolate chip cookies. The fat substitutes used in my investigation included flaxseed meal, tofu, nonfat plain yogurt, unsweetened applesauce, white bean paste, and a shortening made of soy protein and canola oil known as Spectrum Spread. Polymorphism and growth behavior of blends of a high-melting fraction of milk fat (HMF) and sunflower oil (SFO) formulated with and without the addition of sucrose esters (SE) P-170, P-1670, and S-170 were studied by pulsed 1H NMR spectroscopy, X-ray diffraction, and polarized light microscopy. The effect of SE on the solid content maximum (S max) or crystallization rate was observed only at low supercooling (values of ΔT below 15°C). The Avrami k n decreased as n values increased, indicating that SE inhibited growth and impeded nucleation. Addition of SFO modified the polymorphic behavior of milk fat, most likely owing …

The purpose of this study was to determine whether branched-chain amino acid (BCAA) supplementation attenuates indirect indicators of muscle damage, lowers ratings of perceived exertion, and improves aerobic performance as compared to an isocaloric, carbohydrate (CHO) beverage or a non-caloric placebo beverage. Nine, untrained males (VO2 max 36.26 2.23 ml/kg/min) performed three 90-minute cycling bouts at 55% VO2 max followed by a 15-minute time trial. Metabolic data was collected every 15 minutes during the steady-state ride, and indirect muscle damage markers were assessed pre, post, 4-hours, 24-hours, and 48-hours post-exercise. The U.S. Department of Homeland Security recommends food be included in efforts to be prepared for natural disasters and other emergencies. Cornmeal packaged in No. 10 cans with a low oxygen atmosphere has been available in the retail market for decades, but the effect of long-term storage on quality is unknown. This study assessed the quality of cornmeal stored up to 33 years at ambient temperatures in a low oxygen atmosphere. Sixteen samples of cornmeal packaged in No. 10 cans ranging in age from < 1 to 33 years were obtained from donors. The cornmeal and products made from the cornmeal (cornbread and cornmeal hot cereal) were evaluated by a 50-member consumer panel using a 9-point hedonic scale for attributes including appearance, aroma, flavor, texture, and overall acceptability. Acceptance for everyday use and emergency situations was also determined. Additional measurements included can headspace oxygen, can seam integrity, color, and water activity. There was no significant decrease over storage time in aroma, texture, flavor, and overall acceptability in cornmeal, cornbread or cornmeal cereal. Hedonic scores for cornmeal aroma and appearance ranged from 5.2 to 6.3 and 5.6 to 7.0, respectively. Hedonic scores for overall acceptability of cornmeal cereal and corn bread varied from 4.5 to 6.0 and 6.0 to 7.1, respectively. Acceptance of the cornmeal in a regular diet ranged from 44 to 76 % and emergency acceptance ranged from 90 to 99 %. Headspace oxygen ranged from 0.309 to 20.4%. CIE L*a*b* color values ranged from 82.0-86.6, 3.2-10.1, and 26.3-50.8, respectively. Cornmeal appearance hedonic scores correlated with CIE b* color values (r2=0.75). Water activity ranged from .28 to .58. Cornmeal, especially as an ingredient in a recipe, is capable of retaining a high percentage of consumer acceptance over long periods of time and can be included in long-term food storage efforts.

The structure of the type I tetraheme cytochrome c3 from Desulfovibrio desulfuricans G20 was determined to 1.5 A˚ by X-ray crystallography. In addition to the oxidized form, the structure of the molybdate-bound form of the protein was determined from oxidized crystals soaked in sodium molybdate. Only small structural shifts were obtained with metal binding, consistent with the remarkable structural stability of this protein. In vitro experiments with pure cytochrome showed that molybdate could oxidize the reduced cytochrome, although not as rapidly as U(VI) present as uranyl acetate. The increasing bacterial resistance to available antibiotics requires the search for new antibacterial compounds to be broadened. This study investigated the antimicrobial properties of two secondary metabolites from fluorescent pseudomonads -- syringopeptin 25A, a lipodepsipeptide produced by Pseudomonas syringae pv. syringae, and a rhamnolipid mixture produced by Pseudomonas aeruginosa. The rate of antimicrobial action was determined by monitoring the rate of uptake of propidium iodide during exposure to the compounds. Inhibition was also confirmed by the microbroth dilution method to determine the MI Cs. Undernutrition in the hospital setting has been shown to cause adverse outcomes. Screening for nutritional risk assists in the detection of undernutrition with subsequent early intervention to prevent further decline. While many nutrition screening tools exist, none are proven to detect undernutrition. Furthermore, many barriers exist for utilizing nurses as primarily responsible for screening patients for nutritional risk.

Background

A hospital reviewed the nutrition screening process and found that the form used and screening factors were insufficient to adequately detect undernutrition and appropriate referrals for dietitians.
