Leveraging Community Health Workers’ Expertise In The Community To Address Food Insecurity In Appalachia, Alexis Kimbro Scott
Leveraging Community Health Workers’ Expertise In The Community To Address Food Insecurity In Appalachia, Alexis Kimbro Scott
Theses and Dissertations--Nutrition and Food Systems
Residents of the Appalachian region of Kentucky are disproportionately affected by poor social determinants of health that contribute to the persistence of food insecurity and diet related diseases in this region. Poverty levels persist in rural areas of the Appalachian region while they improve throughout the rest of the United States. As this further perpetuates food insecurity in rural Appalachia, it is critical to identify culturally sensitive solutions to food insecurity. Utilizing Community Health Workers (CHWs), lay members of the community who have deep understanding of the communities they live in and serve, may be the answer to this problem. …

Anti-Neuroinflammatory Effects And Underlying Mechanismsof Cleistocalyx Nervosum Var. Paniala Extracts In Microglia Cells, Sakawrat Janpaijit
Chulalongkorn University Theses and Dissertations (Chula ETD)
Sustained inflammatory responses have been implicated in various neurodegenerative disorders. Cleistocalyx nervosum var. paniala (CN), an edible berry, has been reported to exhibit several beneficial properties. However, only limited research is available on this fruit seed, which is classified as agricultural food waste. We therefore focused on the anti-neuroinflammatory effects and underlying mechanism of C. nervosum var. paniala seed extract (CNSE) on BV-2 mouse microglial cells induced by lipopolysaccharide (LPS) or tumor necrosis factor-alpha (TNF-α). CN seeds were extracted in 95% ethanol by Soxhlet extraction. HPLC was carried out to identified resveratrol (RESV) in CNSE. For cell-based studies, the expression …

Application Of Pork Checkoff We Care Sustainability Principles To Pork Production: Water, Nutrition, And Biosecurity, Hannah Miller
Electronic Theses and Dissertations
The Pork Checkoff program was founded in 1986 as a means to strengthen U.S. pork in the market place (Pork Checkoff). Under this program all U.S. pork producers and importers pay $0.40 for every $100 worth of pigs is sold (Pork Checkoff). Funds are then used for pork promotion, research, and education for producers and consumers (Pork Checkoff). The Pork Checkoff program uses the We Care ethical principles as a means to address “continuous improvement in the pork industry’s production practices and promote a strong record of responsible farming to those outside of the industry” (National Pork Board, 2018a). Consumers shop at multiple retailers for different needs, and it is understood that many choose a retailer for an experience and others will shop at another retailer for better savings. In a time where E-commerce is at an all-time high, retailers need to consider how they compare against online retailers in the apparel sector. In this study, three retailers were compared against one another since they are all swimwear competitors. As these retailers adjust to store and production shortages, it is important to understand how the quality of clothing will keep sales consistent. Consumers are likely to keep shopping at …

Healing Sanctuary, Kammy Downs
Healing Sanctuary, Kammy Downs
Master's Theses or Doctor of Nursing Practice
The natural world has hidden wisdom and resources that are disregarded as we misuse our responsibility to care for them. The benefits of being in tune with nature have been traded for a culture that manipulates nature on the altar of expediency, waste, and unquenchable desire. Healing Sanctuary presents a duality. My work speaks about the relationship between the seen and unseen, represented by ten larger-than-life drawings of medicinal herbal plants that have had a profound physical healing effect on me. At the same time, plants, roots, and seeds create visceral metaphors for mental health. Our accomplishments, outlook on life, …
Estrogen Regulation Of Daily Metabolic Rhythms In Female Mice, Oluwabukola Omotola
Estrogen Regulation Of Daily Metabolic Rhythms In Female Mice, Oluwabukola Omotola
Theses and Dissertations--Biology
Circadian rhythms are approximately 24-hour cycles of behavior, physiology, and gene expression. In mammals, these circadian rhythms are generated by clocks located in nearly every tissue in the body. The function of circadian clocks is to synchronize physiology and behavior with environmental cycles such as the light-dark cycle. After menopause, when circulating levels of estrogens are very low, women are more susceptible to obesity comorbidities such as metabolic syndrome and cardiovascular disease, suggesting that estrogens regulate these processes. Estrogens could protect females from metabolic dysfunction by regulating circadian rhythms. Consumption of diets that are high in fat contribute to obesity. …

“It’S Just Part Of Our Hospitality:” Examination Of Cultural Factors That May Inform Future Initiatives To Improve Health Outcomes In A Rural Appalachian Community, Lauren Cassidy Batey
Theses and Dissertations--Nutrition and Food Systems
Diet and physical activity are influenced by a person’s culture and may contribute to the presence of health disparities within a geographic region. Health disparities are evident in Appalachia where a unique cultural identity exists. Culture-based initiatives focused on improving diet quality and increasing physical activity have improved health outcomes in diverse groups, yet interventions considering geographically tied cultures, like Appalachia, are limited. This study aims to identify specific aspects of Appalachian culture that influence health outcomes to inform and increase success of health focused interventions. Five focus groups were conducted in one rural Appalachian community in summer 2021. Grounded …

Family And Consumer Sciences Extension Agents Perception Of A Sustainable Eating Curriculum For Kentuckians, Lindley Barker
Theses and Dissertations--Nutrition and Food Systems
The population is rapidly increasing all over the world. As foods are produced for us to consume, the food system generates negative environmental impacts at each step. The extent of damage generated by food production depends on the amount of land, water, and energy depleted. These environmental impacts can result in reduced quantities of food produced, damages to the land and water used to grow/produce food, pollution of food, and food waste. All of which impact the amount of product produced. Thereby, shifting food-related behaviors of consumers toward sustainable eating may be a way to promote the health of people …
