Rice is one of the most popular cereal grains in the world. Rice bran, a by-product of the rice milling process, contains an abundance of nutrients including protein, fiber, vitamin B complex, vitamin E, and other nutraceuticals. However, rice bran is underutilized in the food industry. In this project muffins were prepared with varying concentrations (2.5%, 5.0%, 7.5%, 10.0%, 15.0%, 20.0%, and 25.0%) of 60 mesh (250 µm) fermented rice bran (60 mFRB) and 80 mesh (180 µm) fermented rice bran (80 mFRB). In Arkansas Delta soybean production, glyphosate resistant (GR) Palmer amaranth has significantly impacted weed management. The incidence of herbicide resistant (HR) weeds has farreaching crop science, economic, and communications implications, which have been explored by the corresponding expertise of our research team members to form a comprehensive literature review. The review was used to develop policy recommendations to address current and future HR genetically modified (GM) crop use and the associated issues. Both health and sustainability are stated public policy objectives in Canada, but food information rules and practices may not be optimal to support their achievement. In the absence of a stated consensus on the purposes of public information about food, the information provided is frequently determined by the marketers of product. No institution or agency has responsibility for determining the overall coherence of consumer food messages relative to these broader social goals of health and sustainability. Objective. To determine the relationship between consumption of all types of nuts, tree nuts, and peanut and peanut butter and specific memory domains of cognitive function in a community-dwelling elderly population.

Design. Cross-sectional analysis using clinic data from the Biopsychosocial Religion and Health Study and dietary intake data from the Adventist Health Study-2.

Subjects/Methods. Adults aged 50 and older were administered the California Verbal Learning Test-II (CVLT) Short Form and provided self-report frequency and portion sizes of nut consumption, anthropometric measures, and other demographic, lifestyle, and clinic data. The rising obesity rates have been constantly discussed in the media, academia, science, and society in the United States; from root causes and possible solutions to effects on individual health and the health of our nation. In my thesis, I focus on the social and economic causes of obesity, especially on the food environment in the United States. My ultimate goal is to effectively argue that obesity a problem rooted in society, often caused by factors such as the price of food, the availability of food, and the mass marketing of food to both children and adults.

China is plagued with food safety scandals ranging from contamination of dairy, to exploding watermelons in the countryside. This thesis explores the four main reasons that China has many food safety regulatory issues: the wide dispersion of farms in China, the fragmentation of the food safety regulatory system, weakness of local implementation, and the poor structure of commerce. Using the case studies of the dairy and pork industries this thesis examines these four proposed flaws and proposed solutions for improving food safety in China. In this article we investigate how ‘ethical eating’ varies across neighbourhoods and explore the classed nature of these patterns. While our focus is on ‘ethical eating’ (e.g. eating organics, local), we also discuss its relation to healthy eating. The analysis draws from interviews with families in two Toronto neighbourhoods – one upper and the other lower income. We argue that understandings and practices of ‘ethical eating’ are significantly shaped by social class as well as place-specific neighbourhood cultures which we conceptualize as part of a ‘prototypical’ neighbourhood eating style. At the same time, it is a city of extremes which juxtaposes ostentatious wealth and conspicuous consumption with grinding poverty and food insecurity. Not enough is known about the prevalence and nature of food insecurity in the city, making it dif!cult to challenge and plan to reduce the urban food gap. This study of the food security situation of the poor in Manzini, Swaziland’s economic hub, formed part of AFSUN’s baseline survey of eleven Southern African cities. It found that the urban poor here are less food secure than in any of the other cities in the survey. On the basis of the findings presented in this paper, AFSUN makes several policy recommendations to deal with food security challenges in the poor urban areas of Swaziland. Among these is that government needs to target urban households specifically in addition to its focus on poverty in rural areas. A more national approach …

This gender analysis of the findings of AFSUN’s baseline survey of poor urban households in eleven cities in Southern Africa in 2008 and 2009 has implications for urban, national and regional policy interventions aimed at reducing urban food insecurity. By comparing female-centred and other households, light is shed both on the determinants of urban food insecurity – which relate fundamentally to income, employment and education – and on the manifest gender inequalities in access to the largely income-based entitlements to food in the city. Purpose – The purpose of this paper is to examine the underexplored niche market potential of craft beer, especially as it may relate to independent food and beverage operations, as a means of gaining competitive advantage.

Design/methodology/approach – Data were collected through the distribution of a survey instrument to craft beer and home brewers, designed to assess the demographic profile, purchasing/restaurant selection, and decision behavior of this group and assess the likelihood of their future behavioral intentions toward continued participation in the craft beer segment.

Harare is at the epicentre of the economic meltdown and political crisis that has devastated Zimbabwe over the last decade and led to a mass exodus from the country. Those who remained in Zimbabwe’s largest city and capital endured unprecedented hardship as the formal economy collapsed, unemployment soared and poverty deepened. Household surveys conducted in Harare with official sanction between 2003 and 2009 appear to demonstrate that food insecurity was not a particularly serious problem, a conclusion sharply at odds with reality. There is plenty of food in Msunduzi, in South Africa’s KwaZulu-Natal province, but the urban poor regularly go hungry. This study of Msunduzi’s food security situation formed part of AFSUN’s baseline survey of eleven Southern African cities. The survey results show that the urban poor in Msunduzi are significantly worse off than their counterparts in Cape Town and Johannesburg. A third of the households reported that they sometimes or often have no food to eat of any kind. Household size did not make a great deal of difference to levels of insecurity but female-headed households are more food insecure than …

Scholarly debates on sustainable consumption have generally overlooked alternative agro-food networks in the economies outside of Western Europe and North America. Building on practice-based theories, this article focuses on informal raw milk markets in post-socialist Lithuania to examine how such alternative systems emerge and operate in the changing political, social, and economic contexts. It makes two contributions to the scholarship on sustainable consumption. In considering semi-subsistence practices and poverty-driven consumption, this article argues for a richer, more critical, and inclusive theory of sustainability that takes into consideration vernacular forms of exchange and approaches poor consumers as subjects of global history. …
