Textural And Sensory Qualities Of Muffins Prepared With Fermented Rice Bran, Breeanna Williams, Navam Hettiarachchy, Srinivas J. Rayaprolu 2013 University of Georgia

Textural And Sensory Qualities Of Muffins Prepared With Fermented Rice Bran, Breeanna Williams, Navam Hettiarachchy, Srinivas J. Rayaprolu

Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences

Rice is one of the most popular cereal grains in the world. Rice bran, a by-product of the rice milling process, contains an abundance of nutrients including protein, fiber, vitamin B complex, vitamin E, and other nutraceuticals. However, rice bran is underutilized in the food industry. In this project muffins were prepared with varying concentrations (2.5%, 5.0%, 7.5%, 10.0%, 15.0%, 20.0%, and 25.0%) of 60 mesh (250 µm) fermented rice bran (60 mFRB) and 80 mesh (180 µm) fermented rice bran (80 mFRB). A cappuccino muffin formulation was used as flavor for all the samples. The control sample was prepared …

Herbicide-Resistant Soybeans In Arkansas: Lessons Learned And Future Direction, Amy May West, Raven Bough, Hayley Jernigan, Mike Norton, Katie Beth Thomas, Curt R. Rom, Michael E. Vayda

Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences

In Arkansas Delta soybean production, glyphosate resistant (GR) Palmer amaranth has significantly impacted weed management. The incidence of herbicide resistant (HR) weeds has farreaching crop science, economic, and communications implications, which have been explored by the corresponding expertise of our research team members to form a comprehensive literature review. The review was used to develop policy recommendations to address current and future HR genetically modified (GM) crop use and the associated issues. The review of crop science research indicated an overall increase in herbicide application, as well as an increase in weed management programs focused around glyphosate rather than the …

Empowering The Citizen-Consumer: Re-Regulating Consumer Information To Support The Transition To Sustainable And Health Promoting Food Systems In Canada, Rod MacRae, Michelle Szabo, Kalli Anderson, Fiona Louden, Sandi Trillo 2012 Sheridan College

Empowering The Citizen-Consumer: Re-Regulating Consumer Information To Support The Transition To Sustainable And Health Promoting Food Systems In Canada, Rod Macrae, Michelle Szabo, Kalli Anderson, Fiona Louden, Sandi Trillo

Publications and Scholarship

Both health and sustainability are stated public policy objectives in Canada, but food information rules and practices may not be optimal to support their achievement. In the absence of a stated consensus on the purposes of public information about food, the information provided is frequently determined by the marketers of product. No institution or agency has responsibility for determining the overall coherence of consumer food messages relative to these broader social goals of health and sustainability. Individual firms provide information that shows their products to best advantage, which may contradict what is provided about the product by another firm or …

Obesity In The United States: The Food Environment And How It Is Linked To Obesity, Meredith Allenick 2012 Union College - Schenectady, NY

Obesity In The United States: The Food Environment And How It Is Linked To Obesity, Meredith Allenick

Honors Theses

The rising obesity rates have been constantly discussed in the media, academia, science, and society in the United States; from root causes and possible solutions to effects on individual health and the health of our nation. In my thesis, I focus on the social and economic causes of obesity, especially on the food environment in the United States. My ultimate goal is to effectively argue that obesity a problem rooted in society, often caused by factors such as the price of food, the availability of food, and the mass marketing of food to both children and adults.

Time To Cry Over Spilled Milk: An Investigation Into China's Food Safety System, Rachel Baker 2012 Union College - Schenectady, NY

Time To Cry Over Spilled Milk: An Investigation Into China's Food Safety System, Rachel Baker

Honors Theses

China is plagued with food safety scandals ranging from contamination of dairy, to exploding watermelons in the countryside. This thesis explores the four main reasons that China has many food safety regulatory issues: the wide dispersion of farms in China, the fragmentation of the food safety regulatory system, weakness of local implementation, and the poor structure of commerce. Using the case studies of the dairy and pork industries this thesis examines these four proposed flaws and proposed solutions for improving food safety in China. Governmental flaws and mistakes are mostly responsible for these problems, but the current structure of government …

Place, Ethics, And Everyday Eating: A Tale Of Two Neighbourhoods, Josée Johnston, Alexandra Rodney, Michelle Szabo 2012 University of Toronto

Place, Ethics, And Everyday Eating: A Tale Of Two Neighbourhoods, Josée Johnston, Alexandra Rodney, Michelle Szabo

Publications and Scholarship

In this article we investigate how ‘ethical eating’ varies across neighbourhoods and explore the classed nature of these patterns. While our focus is on ‘ethical eating’ (e.g. eating organics, local), we also discuss its relation to healthy eating. The analysis draws from interviews with families in two Toronto neighbourhoods – one upper and the other lower income. We argue that understandings and practices of ‘ethical eating’ are significantly shaped by social class as well as place-specific neighbourhood cultures which we conceptualize as part of a ‘prototypical’ neighbourhood eating style. People compare themselves to a neighbourhood prototype (positively and negatively), and …

Visualizing Fair Trade Coffee, Daniel Jaffee, Philip Howard 2012 Portland State University

Visualizing Fair Trade Coffee, Daniel Jaffee, Philip Howard

Sociology Faculty Publications and Presentations

The fair trade certification world has entered a period of major change. The recent departure of Fair Trade USA from the international certification system led by Fair Trade International (formerly FLO), and its decision to develop separate U.S. standards that permit certification of plantation-produced coffee, cocoa, and other crops, has thrown the meaning of the U.S. fair trade label into question. The recent appearance of a new certification—The Institute for Marketecology (IMO) “Fair For Life” label—has made the panorama even more complex. These developments follow a decade of struggles within the fair trade movement over the nature of its relationship …

No. 12: The State Of Food Insecurity In Johannesburg, Michael Rudolph, Florian Kroll, Shaun Ruysenaar, Tebogo Dlamini

African Food Security Urban Network

Johannesburg is the economic hub of South Africa and the Southern African region. At the same time, it is a city of extremes which juxtaposes ostentatious wealth and conspicuous consumption with grinding poverty and food insecurity. Not enough is known about the prevalence and nature of food insecurity in the city, making it dif!cult to challenge and plan to reduce the urban food gap. This paper uses AFSUN data from three lower-income areas of the city (Alexandra, Orange Farm and the Inner City) to examine the characteristics and drivers of food insecurity in Johannesburg. Despite high overall levels of food …

No. 15: The State Of Food Security In Manzini, Swaziland, Daniel Tevera, Nomcebo Simelane, Graciana Peter, Abul Salam

African Food Security Urban Network

This study of the food security situation of the poor in Manzini, Swaziland’s economic hub, formed part of AFSUN’s baseline survey of eleven Southern African cities. It found that the urban poor here are less food secure than in any of the other cities in the survey. On the basis of the findings presented in this paper, AFSUN makes several policy recommendations to deal with food security challenges in the poor urban areas of Swaziland. Among these is that government needs to target urban households specifically in addition to its focus on poverty in rural areas. A more national approach …

No. 14: The State Of Food Insecurity In Windhoek, Namibia, Wade Pendleton, Ndeyapo Nickanor, Akiser Pomuti

African Food Security Urban Network

AFSUN recently conducted a survey of poor urban households in eleven major cities in Southern Africa to better understand the seriousness of the urban food insecurity situation. This report looks in detail at the results for Windhoek and seeks to answer one central question, that is, why do the urban poor in Namibia’s capital generally appear to be better off than the urban poor in most of the other ten cities where the survey was conducted and why, at the same time, does Windhoek contain some of the most food insecure households in the region? As a city of migrants, …

No. 10: Gender And Food Insecurity In Southern African Cities, Belinda Dodson, Asiyati Chiweza, Liam Riley 2012 Western University

No. 10: Gender And Food Insecurity In Southern African Cities, Belinda Dodson, Asiyati Chiweza, Liam Riley

African Food Security Urban Network

This gender analysis of the findings of AFSUN’s baseline survey of poor urban households in eleven cities in Southern Africa in 2008 and 2009 has implications for urban, national and regional policy interventions aimed at reducing urban food insecurity. By comparing female-centred and other households, light is shed both on the determinants of urban food insecurity – which relate fundamentally to income, employment and education – and on the manifest gender inequalities in access to the largely income-based entitlements to food in the city. These insights can be used to design and implement practical and strategic interventions that could simultaneously …

Simplicity, Sustainability, And A Greening Of The Catholic Intellectual Tradition, Cara E. Erdheim 2012 Sacred Heart University

Simplicity, Sustainability, And A Greening Of The Catholic Intellectual Tradition, Cara E. Erdheim

Presidential Seminar on the Catholic Intellectual Tradition

This essay is in part academic and in part anecdotal, although, from my perspective, the two need not be mutually exclusive. A unique Service Learning experience last May has crystallized my personal reflections on the Catholic Intellectual Tradition, as well as clarified my literary scholarship in the field of American environmental writing.

No. 13: The State Of Food Insecurity In Harare, Zimbabwe, Godfrey Tawodzera, Lazarus Zanamwe, Jonathan Crush

African Food Security Urban Network

Harare is at the epicentre of the economic meltdown and political crisis that has devastated Zimbabwe over the last decade and led to a mass exodus from the country. Those who remained in Zimbabwe’s largest city and capital endured unprecedented hardship as the formal economy collapsed, unemployment soared and poverty deepened. Household surveys conducted in Harare with official sanction between 2003 and 2009 appear to demonstrate that food insecurity was not a particularly serious problem, a conclusion sharply at odds with reality. In 2008, at the height of the crisis, AFSUN therefore implemented its own baseline food security survey in …

No. 09: Migration, Development And Urban Food Security, Jonathan Crush

African Food Security Urban Network

Over the last decade, two issues have risen to the top of the international development agenda: Food Security & Migration and Development. Each has its own agency champions, international gatherings, national line ministries and voluminous bodies of research. There is thus a massive institutional and substantive disconnect between these two development agendas. The reasons are hard to understand since the connections between migration and food security seem so obvious. Food security needs to be “mainstreamed” into the migration and development agenda and migration needs to be “mainstreamed” into the food security agenda. Without this happening, both agendas will proceed in …

No. 16: The State Of Food Insecurity In Msunduzi Municipality, South Africa, Mary Caesar, Jonathan Crush, Trevor Hill

African Food Security Urban Network

There is plenty of food in Msunduzi, in South Africa’s KwaZulu-Natal province, but the urban poor regularly go hungry. This study of Msunduzi’s food security situation formed part of AFSUN’s baseline survey of eleven Southern African cities. The survey results show that the urban poor in Msunduzi are significantly worse off than their counterparts in Cape Town and Johannesburg. A third of the households reported that they sometimes or often have no food to eat of any kind. Household size did not make a great deal of difference to levels of insecurity but female-headed households are more food insecure than …

How Milk Does The World Good: Vernacular Sustainability And Alternative Food Systems In Post-Socialist Europe, Diana Mincyte 2012 CUNY New York City College of Technology

How Milk Does The World Good: Vernacular Sustainability And Alternative Food Systems In Post-Socialist Europe, Diana Mincyte

Publications and Research

Scholarly debates on sustainable consumption have generally overlooked alternative agro-food networks in the economies outside of Western Europe and North America. Building on practice-based theories, this article focuses on informal raw milk markets in post-socialist Lithuania to examine how such alternative systems emerge and operate in the changing political, social, and economic contexts. It makes two contributions to the scholarship on sustainable consumption. In considering semi-subsistence practices and poverty-driven consumption, this article argues for a richer, more critical, and inclusive theory of sustainability that takes into consideration vernacular forms of exchange and approaches poor consumers as subjects of global history. …
