Childhood is a critical time for the development of habits of a person. Food is frequently used to reward children for performing desired behaviors. Using food rewards can create a psychological connection to food that goes beyond metabolic need which may develop disordered eating habits, such as emotional eating, binge eating and food addiction. This thesis examines the roles of food rewards given in childhood and their impact on disordered eating habits in young adulthood. The purpose of this co-authored, mixed methods descriptive research study was to examine how the intersection of foodways and sustainable food practices helps define the food heritages of St. Louis area residents. While prior research examines these concepts separately, and even shows connections with other factors such as health and discrimination, none look at all of these concepts together—a gap this research fills. In this article we examine the adoption of food safety practices among produce growers in the south and discuss implications of food safety regulations in the U.S. Produce growers have adopted standard food safety practices to varying degrees, but there is still an adoption gap, particularly among small scale operations. Market-driven and regulatory food safety enforcement continues to tighten, and this can further hinder market access for small scale producers.

Community engagement is well established as a key to improving public health. Prior food environment research has largely studied community engagement as an intervention component, leaving much unknown about how food retailers may already engage in this work. The purpose of this study was to explore the community engagement activities employed by neighborhood food retailers located in lower-income communities with explicit health missions to understand the ways stores involve and work with their communities. The purposes of this study were to (1) determine beliefs in the health benefits of dietary fiber, an under-consumed nutrient of public health concern, and (2) determine the relationship between beliefs about dietary fiber and consideration of fiber when making food choices. We conducted a nationally representative within-subject randomized online survey of 42,018 US primary shoppers in May–June 2021. Participants selected health benefits they believed were associated with consumption of fiber from a list of six benefits recognized by the Food and Drug Administration (FDA), one indirect benefit, and one unrelated benefit. This dissertation examines Syria during the French Mandate using food as a primary unit of analysis. The exploration of food pushes this project beyond the boundaries of political and diplomatic histories of Syria during the French Mandate, bringing forward the hidden voices of the nonelite. Nonelites are often not visible in archives, but their absence in most written sources permits us to ascertain their experiences in studying the materials that comprised their everyday lives. The sources consulted for this work include memoirs, print media, and state archives, to name a few.

This paper uses a qualitative research method to answer if a Universal Base Income would be a good economic policy to adopt to optimize Black chestfeeding. The key idea this thesis aims to clarify is how anti Blackness is killing Black people and how one economic policy could improve health. People are typically involved in different activities while eating, particularly when eating alone, such as watching television or playing games on their phones. Previous research in Human-Food Interaction (HFI) has primarily focused on studying people’s motivation and analyzing of the media content watched while eating. However, their impact on human behavioral and cognitive processes, particularly flavor perception and its attributes, remains underexplored. In July 2021, California became the first state to pass a program which guarantees two meals a day to all K-12 students at no cost. This project examines California’s journey to pass this Universal School Meals Program (USMP) and explores how such a program can provide equity for students. I produce a legislative history which traces how school meals are funded and regulated at the federal level, California’s public education funding system, their state meal program, the policies which created changes that allowed the USMP to pass, and the legislation of the program itself. A collaborative partnership launched the Great Grocer Project (GGP) in March 2021 in Detroit, Michigan where health inequities, including deaths due to COVID-19, have historically been politically determined and informed by socially entrenched norms. Institutional and structural racism has contributed to a lack of diversity in store ownership among Detroit grocers and limited access to high-quality, affordable healthy foods as well as disparate food insecurity among Detroit residents. In-vitro meat (IVM) is an alternative that could reduce negative impacts associated with livestock production. The goal of this study was to examine consumers’ preferences for IVM.
