New plant engineering techniques (NPETs) may significantly improve both production and quality of foods. Some consumers and regulators around the world might be reluctant to accept such products and the global market penetration of these products may remain low. We develop a parsimonious economic model for R&D investment in food innovations to identify conditions under which NPET technology emerges in the context of international trade. The framework integrates consumers' willingness to pay (WTP) for the new food, the uncertainty of R&D processes, the associated regulatory cost of approval, and the competition between domestic and foreign products. This dispatch outlines some of the immediate consequences and long-term challenges posed by the Ukraine war on food security and production systems in Eastern Europe. We draw particular attention to the food aid and provisioning realities around many million (and increasing) numbers of Ukrainian refugees, and the current lack of systemic, government-coordinated responses to the humanitarian crisis. Further, we outline the distinct forms of agriculture characterising Eastern Europe, notably, the short supply chains and farming networks that are socially and environmentally unique and valuable, and are a result of the persistence of smaller, family-led farms. The first chapter introduces the thesis by highlighting a brief review of intertemporal preferences, active consideration of health outcomes, and health prompts during food choices. The introduction paves the way for the following two chapters, which are related, but stand-alone papers.

In the second chapter, we explore a novel question: how does actively considering health outcomes (both current and future) during decision-making affect the nutritional quality of food choices? It is the reproductive part of a marine worm that is released twice a year, October and November in Samoa, making palolo season a culturally significant time. Coral reefs, the palolo worm’s habitat, is under a plethora of environmental threats, which is an extremely prevalent concern for Pacific Islanders. Mad honey is a rare variety of cliff honey found in the mountainous regions of Turkey and Nepal and has been harvested by Indigenous groups for centuries. Forests play a critical role in mitigating climate change, and, at the same time, are predicted to experience large-scale impacts of climate change that will affect the efficiency of forests in mitigation efforts. Projections of future carbon sequestration potential typically do not account for the changing economic costs of timber and agricultural production and land use change. We integrated a dynamic forward-looking economic optimization model of global land use with results from a dynamic global vegetation model and meta-analysis of climate impacts on crop yields to project future carbon sequestration in forests. Research has strongly focused on their polyphenol and anthocyanin concentration, one of the highest amongst commonly consumed foods. Polyphenols have demonstrated antioxidant effects in vitro, and consuming polyphenol-rich foods is associated with protective effects towards non-communicable diseases, but their direct bioactivity in the human body remains to be fully understood. It is estimated that about 90 to 95% of the initial polyphenol intake reaches the colon without being absorbed.
