The rural communities of the province of Imbabura present multiple problems of environmental, educational, and economic kind. Previous studies show that the rural communities of the Ecuadorian population present serious problems of health and nutrition, among those that excel are: poliparasitosis, respiratory infections and diarrheal, malnutrition, deficiency of micro nutrients, sanitary deficiency, scarce economic resources and low level of instruction. All these factors have caused a decrease in the productive capacity of the country and affected their level of development. Calcium β-hydroxy β-methylbutyrate (HMB) supplementation has been reported to reduce catabolism and promote gains in strength and fat free mass in untrained individuals initiating training. However, the effects of HMB supplementation on strength and body composition alterations during training in athletes is less clear. This study examined the effects of 28-d of calcium HMB supplementation during intense training on markers of catabolism, body composition, strength, and sprint performance. In a double-blind and randomized manner, 28 NCAA division I-A football players were matched-paired and assigned to supplement their diet for 28-d during winter resistance/agility training (~8 hr/wk) with a carbohydrate placebo …

This randomized dietary intervention trial examined the effects of a high fruit diet on systemic BP in African-Americans. Thirty-eight free-living subjects with systolic BPs between 130-159 mm Hg and diastolic BPs between 85-99 mm Hg, were enrolled for a six week period. The cases were given daily supplements of potassium rich foods: bananas, orange juice and raisins, while no dietary advice or food was given to the controls.

After six weeks, the means systolic BP was 5.79 mm Hg ( p=.009) lower in the cases than the controls. The mean diastolic BP at week six was 3.76 mm Hg (p=.047) …

Consumption of long-chain n-3 polyunsaturated fatty acids (n-3 PUFA) is low among certain population subgroups in the United States, especially in people living in Midwestern states and those who dislike fish. Therefore, there is a need to identify acceptable food sources of n-3 PUFA. Vegetable oils, such as canola and soy, provide some n-3 fatty acids. However, these sources are high in n-6 fatty acids and there is concern that they may have detrimental side effects. Eggs enriched in n-3 PUFA can be produced by incorporating sources of these fatty acids into poultry rations. In acceptability studies, US consumers responded …

Pearl Street Grill & Brewery came into existence in 1997 at 76 Pearl St in downtown Buffalo, NY. It was initially formed as a partnership between a group of local investors and the Wynkoop Brewing Company of Denver, Colorado which was already a successful brewpub operation.

After only a few short years into the partnership, the local investors bought the Wynkoop in 1999 and continued to develop the brewpub into the icon that it is today. Over the years, successive floors have been remodeled and opened to the public for restaurant and banquet space.

Dietary intake of omega-3 fatty acids (n-3 PUFA) decreases the risk of heart disease, inhibits the growth of prostate and breast cancer, delays the loss of immunological functions, and is required for normal fetal brain and visual development. The US has not established a recommended daily intake for n-3 PUFA. However, Canada has established the Canadian Recommended Nutrient Intake (CRNI) at 0.5% of energy. Dietary sources of n-3 PUFA include fish, chicken, eggs, canola oil, and soybean oil. Food consumption studies in the US indicate that the majority of Americans do not meet the CRNI for n-3 PUFA. The purpose of this study was to compare the nutritional status of a rural population of Mossi people in Burkina Faso during the pre- and post-harvest seasons. Comparisons were made between the sample population and the American population, between the pre- and post-harvest seasons, between males and females in the sample population and between the various age groups in the sample population.

Recently maternal intake of multivitamins has been associated with a reduced risk of orofacial clefts (OFC) in human epidemiologic studies. In the Philippines, vitamin B-6 deficiency was found to be associated with increased risk of OFCs. The birth prevalence of OFCs in the Philippines is among the highest known, but Filipino emigrants in the United States have lower rates, indicating that environmental factors may play an important role in causing OFCs in the Philippines.

Research has shown that members of society are generally dissatisfied with their current weight. This study examines how individuals socially construct meanings of the word diet and the dieting process. Participants (n=443) were males and females who ranged in age from 7 to 68. Each were given a diet questionnaire to complete. The older groups were given the Multidimensional Health Locus of Control (MHLC) Scale in addition to the survey. The text for analysis was obtained by the surveys and four focus groups. The resulting data indicated that both males and females perceive the word diet means "to lose weight." …

This retrospective study determined whether percent deficit ideal body weight (IBW) was a risk factor for the prevalence, severity or healing of pressure ulcers. This study hypothesized that nursing home residents below their IBW with pressure ulcers have more severe, higher prevalence, and a slower healing rate than resident who are above their IBW. Medical record data were analyzed for all subjects that met the selection criteria from April, 1997 to April, 1998. Refeeding syndrome is a syndrome of electrolyte abnormalities, which occurs in patients who are fed orally, enterally, or parenterally (1). Patients at high risk of getting refeeding syndrome include people with chronic malnutrition-underfeeding, classic kwashiorkor, classic marasmus, anorexia nervosa, chronic alcoholism, morbid obesity with massive weight loss, patients unfed in 7-10 days with evidence of stress and depletion, patients with prolonged fasting, and patients with prolonged intravenous hydration (1,2). Characteristics or complications of refeeding syndrome include congestive heart failure, hypercapnia, hyperglycemia, rebound hypoglycemia, hypophosphatemia, hypokalemia, hypomagnesemia, and hypocalcemia. The purpose of this study was to examine the correlation between dietary trans fatty acids and levels of total serum cholesterol, high and low density lipoproteins, and the ratio of total serum cholesterol to HDL in apparently healthy post-menopausal women.

Subjects (n = 21) were current members of the Eastern Illinois University Adult Fitness Program. All were moderately active Caucasian women determined to be post-menopausal and not taking hormone replacement therapy or lipid lowering medications. Mean age of the subjects was 69.1 ± 9.1 years.

The objectives of this project were to detennine the omega-3 fatty acid (ω-3 FA) consumption of low-income pregnant women, and to identify food sources of ω-3 FA in their diets. Thirty women provided three days of dietary intake that were analyzed using the Food Processor Plus computer program. Mean daily consumption of ω-3 FA was 1.060 ± 0.030 g/day. The major form of the ω-3 FA was α-linolenic acid (α-LNA; 93%), with less from eicosapentanoic acid (EPA; 2%), and docosahexanoic acid (DHA; 5%). Foods that provided the most α-LNA were fats, oils, salad dressings, and milk products. EPA …

This study examined associations among the nutritional risks, the risk levels, and the ages of independently living elderly. The Checklist of the Nutrition Screening Initiative (NSI) was administered to a purposive sample of 1004 Northeast Florida elderly to estimate an age-profile at risk for malnutrition. Checklist nutritional scores (cumulative of ten risks) were grouped into risk levels of low (scores 0-2, 64.3%), moderate (3-5, 29.5%), and high (6 and greater, 24.2%). Within each level, Checklists were grouped by respondents' age into young-old (60-74), old-old (75-79), and fragile-old (80-102). Few studies have examined the risk factors associated with reduced bone mass in Asians, but none specifically investigated Singaporean Chinese women. The subjects in this study were 16 premenopausal, 8 perimenopausal and 13 postmenopausal women who participated in a larger study which began in 1986. Bone density was measured in 1986 and 1992. Dietary and lifestyle data were collected for this study by personal interview. Association between dietary and lifestyle factors and bone density variables and change in bone density at the end of the 6 year period were assessed by univariate regression analyses.

Epidemiological studies have emphasized environmental influences, especially a diet high in animal fat and low in fiber, as major risk factors for colon cancer. In order to examine the relationship between dietary fat and fiber and occurrence of colon cancer, patient medical records from the National Cancer Institute between 1981-1991 were used for the first hospital-based case-control study of diet and colon cancer in Thailand. A high percentage of American women do not consume the Recommended Dietary Allowance for calcium. Marginal intake of calcium (Ca) in the years when peak bone mass is being formed may have a detrimental impact on bone later in life. This study looked at the effect of low Ca intake and other dietary components on serum and urine values of Ca as well as the response to repletion.

Relationships between dietary nutrients and plasma and fecal estrone, estradiol-17β, testosterone, and plasma prolactin levels were studied in young Seventh-day Adventist men: 18 nonvegetarians (NV), 20 lacto-ovovegetarians (LOV), and 15 vegans (V). Blood samples and 3 d dietary records were obtained. Contemporaneously collected diet composites and stool samples were analyzed for fiber. The vegetarians consumed significantly more fiber than the omnivores, while NVs and LOVs consumed more saturated fat than the Vs. Although plasma steroid hormone status did not differ, the Vs had significantly higher fecal estrogen levels than the NVs or LOVs. Plasma prolactin levels were significantly higher in …

For the purposes of this study, eating disturbances were placed on a continuum ranging from disordered to normal, and family factors were examined via this framework. Research on anorectics and bulimics indicates that a variety of family variables contribute to the etiology of eating disorders. Research suggests the presence of a subgroup of persons who experience some disturbance in their relationships with food but not to the severity observed among eating disordered individuals. This study examined the relationship between family factors and eating disturbances.
