This study discusses the perceived negative effects of variants (C677T and A1298C) of the methylenetetrahydrofolate (MTHFR) gene on male and female fertility and fetal development, as well as the potential for nutrition changes to aid in reversing these negative effects. This research project was completed in order to discuss the possible association with and connection between nutrition and fertility in both male and female individuals who have either of the two most common MTHFR gene polymorphisms, 677C>T and 1298A>C. Intuitive Eating (IE) is a food mindset focusing on honoring hunger and fullness, while rejecting the diet mentality. Research demonstrates a clear link between IE and health outcomes across many populations, including college students. Despite a growing body of literature, we still know very little about what complexities food insecurity may present for individuals trying to adopt IE behaviors. Caffeine is commonly consumed throughout the world in items such as coffee, chocolate, tea, energy drinks, and carbonated soft drinks. Consumers and food manufacturers benefit from discussion surrounding caffeine because consumers use information to drive their purchases. The purpose of this paper is to describe how caffeine effects health and perceived bitterness, and the ways that the food industry modifies bitter tastes in caffeine-containing products. Moderate caffeine intake is defined as 240-400 mg/day. Moderate intake of caffeine is not correlated to increased risk of premature death caused by disease or cancer. Thrive is an after-school program for urban low-income school-aged children that utilizes elements of the Coordinated Approach to Child Health evidence-based model to teach nutrition concepts.1 Unique to Thrive’s design is providing exposure to new fruits and vegetables through a weekly healthy treat made with fresh produce. This descriptive research investigated whether differences existed in fruit- and vegetable-related behavior between Thrive and non-Thrive groups.

Background: This study examined the eating philosophy of college students at a public, four-year institution to build upon prior research of intuitive eating (IE), and to guide on-campus programming and services. Questions on whether IE behaviors and attitudes would differ between students pursuing health and non-health-related careers were also considered.

Methods: The Intuitive Eating Scale-2 (Tylka and Kroon Van Diest, 2013) was replicated into a 33-question Qualtrics survey, and participation was solicited via email. Purpose: Type II diabetes, hypertension, and overweight/obesity are three of the most common diet-related health conditions and are closely linked to negative health outcomes. Limited nutrition knowledge is associated with inadequate preventative care and poor diet quality, which may exacerbate the development of these conditions. Egg allergies are very common, and affect 1% to 2% of all children (Savage, 2007). For this reason, egg replacers that can be easily used by home cooks are an important area of research. In this experiment, a simple egg replacer of flour, oil, baking soda, and water was added to a standard cake mix, with variables consisting of a control product and a product made with no eggs using the egg replacer. It specifically worked with the Teen Mom and Young Mom programs as well as with their children in the Tiny Glancers program.
