Chronic diseases such as diabetes, heart and respiratory diseases, cancer, and stroke pose significant health challenges in the United States, with Arkansas experiencing some of the highest rates of related mortality. This project aimed to improve health literacy related to nutrition and physical activity among adults at risk for chronic disease in Arkansas, focusing on those living independently in Ozark, Ouachita, and Delta regions, as well as cooperative extension agents in Family & Consumer Sciences. The mouth is a mirror of overall health. Dentists have a vital role in the diagnosis of oral diseases, prevention, for health promotion. The purposes of our exploratory study were to investigate dental students’ attitudes and perceptions regarding nutrition education and to propose a curriculum checklist for integrating nutrition content into dental curricula.

An optional exploratory survey was distributed at two North American urban dental schools to 351 students, to compare student perspectives regarding implementation of nutrition education. This study qualitatively examined college students' perceptions of a pilot cooking and nutrition workshop, College Cooking Connection (CCC), through the Social Cognitive Theory (SCT) framework. Undergraduate students who attended at least one CCC workshop (N = 29) were invited to a 30 min virtual focus group. A trained moderator guided the discussion to gather perceptions of the program. Themes were identified using thematic analysis with a directive and deductive approach based on SCT. Focus groups revealed eight major themes across the SCT. Background & Aims: Diabetes disproportionately affects minority populations, including Jamaicans affected by dietary habits, sedentary lifestyles, and socioeconomic factors. Culturally relevant interventions are essential for promoting sustainable health behaviors to prevent diabetes. Virtual culinary medicine education interventions have the potential to improve dietary behaviors, nutrition knowledge, cooking skills, and health outcomes for ethnically diverse individuals with type 2 diabetes. The purpose of this study is to describe the adaptation of the Nourishing the Community through Culinary Medicine (NCCM) program for virtual delivery, and the protocol for pilot testing this intervention. The intervention includes five 90-min virtual NCCM sessions streamed live from a Teaching Kitchen. Feasibility outcomes are recruitment, retention, acceptability, and satisfaction. Refugees face many challenges related to obtaining and preparing adequate and culturally acceptable and desirable foods in their resettlement communities. These challenges often lead to risk of food insecurity and chronic diseases. A review of literature identified the existing delivery strategies and highlighted the need for nutrition education tailored to the refugees’ conditions. This study identified some of the barriers that refugees face, including the English language, transportation, finding items in grocery stores, availability of ingredients and equipment needed for cooking, affordability of food and budgeting. It also highlighted participants’ preference for having nutrition education.

Nutrition professionals report low levels of research utilization and engagement. This study explored the associations between completion of an applied nutrition research (capstone) course and students’ research-related perceptions, attitudes, and knowledge. Nutrition graduate students at a university in Pennsylvania completed an online survey at the beginning and end of a semester. The survey assessed perceptions of research participation and application, attitudes regarding research, and self-efficacy for conducting research, engaging in evidence-based practice, and collaborating on research. The purpose of this paper is to provide medical student perspectives on both the degree and necessity of nutrition education during medical school.

Methods: Medicine in Motion (MM) is a non-profit student-run organization founded in 2018 that aims to address burnout in medicine through physical activity, community service, and philanthropy. As rates of metabolic syndrome rise, children consume too few vegetables and too much added sugar. Because children tend to eat what is available at home, the home environment plays a key role in shaping dietary habits. This secondary analysis evaluated the effects of a school-based gardening, cooking, and nutrition education intervention (TX Sprouts) compared to control on the availability of vegetables, fruit juice, and sugar-sweetened beverages (SSBs) at home. Objective: The purpose of this study was to develop, test and evaluate a nutrition education tool kit at a mobile food pantry (MFP) in rural Virginia.

Design: Cross-sectional, mixed methods approach using both quantitative and qualitative data to evaluate the effectiveness of a tool kit training at increasing participant self-efficacy, basic nutrition knowledge and perceived readiness to conduct a nutrition lesson with MFP guests. The ability for participants to translate the training into practice was also observed and documented.

Substance use disorder (SUD) is one of the most detrimental health, social, and economic problems in the United States. Limited studies suggest providing tailored nutrition education during SUD treatment correlates with positive recovery outcomes. The University of Kentucky Nutrition Education Program conducted two focus group sessions to explore and determine educators’ instructional and programmatic needs who deliver nutrition education to clients in substance use recovery throughout Kentucky. Obesity and food insecurity are disproportionately experienced by African Americans compared to white Americans. African Americans encounter multiple barriers to healthful eating in their food environment, in part due to structural racism. Four studies were undertaken to understand how SNAP-Ed may best address the needs of African Americans and whether the program is serving African Americans in Louisiana equitably. In the first study, a scoping review was conducted to describe nutrition interventions addressing structural racism experienced by African Americans and compare them to the Getting to Equity in Obesity Prevention Framework. This study aimed to evaluate the content of school wellness policies and understand teacher perspectives about teaching nutrition education at their schools in Jeddah, Saudi Arabia. Furthermore, college students consume high amounts of ultra-processed products. NOVA, a food classification system, takes into account food processing and is thought to better fit the modern food environment.

This paper utilizes survey responses from local coordinators of LCF, an international micronutrient supplementation humanitarian organization, to provide insight into the challenges and personal rewards of providing nutrition education to parents of malnourished children. LCF is based in Utah and operates in 19 countries throughout the world. LCF recently introduced a series of health lessons geared toward parents of malnourished children. The rate of overweight and obesity among adolescents aged 12-19 years has more than tripled since 1980, and disproportionately impacts low-income and marginalized populations. Reduction in adolescent obesity rates may result in decreased health risks, decrease healthcare costs, and increased quality of life. Effective intervention methods for adolescent participants have incorporated nutrition knowledge and culinary skill building into afterschool programs. The purpose of this study was to determine if participation in a supermarket tour improves nutrition knowledge and eating behavior in adult participants. Participants were recruited in communities surrounding Food City stores, a local supermarket. Prior to completing a standardized tour, participants completed a survey to assess nutrition knowledge and eating behavior. This survey was given to participants again three months later. A program evaluation was given one time at the end of the tour. Lifestyle choices affect the risk of obesity and ill-health among youth. This study determined whether providing nutrition education to adolescent females enrolled in dance classes influenced their beverage and food choices. It was hypothesized that providing six 10-minute nutrition education sessions for three weeks to adolescent dancers would increase their healthy beverage and food choices. Sixteen girls (12-18 years), from two dance studios in Kingsport, Tennessee, completed this pre-test/post-test study. After nutrition education, soda consumption reduced by 7.7%; sugar sweetened beverages (excluding sodas) reduced by 23%; intakes of fruits and vegetables were enhanced by 5.6% and 21%, respectively. Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. The present study examines the effectiveness of customized nutrition education in improving 1) nutrition-related behaviors associated with food insecurity and 2) management of household food supply in food-insecure individuals with and without children.
