Intervention Approaches And Potential Impacts Of Nutrition Education In Youth Ages 3-14, Lauren Barnhard

This thesis explores the key factors impacting the health disparities associated with inadequate fruit and vegetable (FV) consumption in youth throughout America. Forms of nutrition education may be an effective means to increase FV consumption in youth, especially when utilizing specific teaching techniques such as taste education, experiential learning, enhanced curriculum, and adhering to age specific programming. According to the CDC, American students receive less than 8 hours of required nutrition education each school year, far less than the 40 to 50 hours that are indicated to affect behavior change. Previous research suggests that food insecurity is higher among college students and individuals from minority populations than the general population. Many college campuses have recognized this issue and developed on-campus food pantries to mitigate food insecurity among students. Nevertheless, barriers exist that prevent students from utilizing on-campus pantries. The purpose of this study was to investigate college students’ relationship to food and food access at Western Michigan University (WMU). Student satisfaction of WMU’s on-campus food pantry, The Invisible Need Project, was also explored. Data were gathered through a 28-question online survey and one in-person focus group. Childhood obesity is a health concern in the United States, putting children at risk for serious health problems. Although there has been significant research of childhood obesity, less is known about how eating behaviors and parenting styles of Hispanic and Latino parents impact the health problems (e.g., obesity) of children. Literature demonstrates that Latina and Mexican American cultures shape parents’ feeding practices but most research fails to recognize the contexts of feeding practices within Latino community (Slusser, Neumann, Cumberland, Renenger, Fischer, & Frankel, 2012). While the rise and spread of Western culture has created remarkable advances in science, healthcare, and technology, it has also brought about a variety of chronic diseases that never once existed. Much of these ailments can be attributed to the typical Western diet, which places heavy emphasis on meats, dairy, and refined grains, contrasting the typical Eastern or Oriental diet which primarily focuses on fruits, vegetables, fish, and whole grains. This dietary transition has resulted in increased glycemic load, increased levels of unhealthy fats and cholesterol, decreased micronutrient and fiber levels, and skewed acid-base and sodium-potassium ratios. Bread is a staple product in the diet of most consumers in America. It is also one of the ”Salty Six”; the top six processed foods containing the most sodium chloride (NaCl) or table salt. Dietary reference intake (DRI) guidelines are established by The Food and Nutrition Board of the Institute of Medicine. Per these values, children ages 9-13 should consume no more than 2.2 g/day of sodium, and men and women ages 14-70 and older should consume no more than 2.3 g/day.Yet the average intake of sodium in America is much higher than the DRI: 3.4 g/day.
