The prevalence of overweight and obesity among the American population is on the rise. This epidemic can be attributed to an increase in energy intake. Research has shown that increased consumption is associated with both individual and societal factors including an increase in the size of portions, the influence of the food industry, and confusion on the part of the consumer. The findings indicate that dietitians and other healthcare providers need to do their part by informing society of the importance of decreasing portions and helping the consumer recognize appropriate portion sizes.

The increased use of herbal supplementation appears to stem from a public demand for changes in health care. The general objective of this investigation was to implement and strengthen family orchards for the diversification of the diet and improvement of the consumption of vegetables and fruits available in the communities of the Rinconada and Cuambo. They collaborated in the implementation and strengthening of the family orchards and by means of focal group techniques determined the readiness, seasonal variance, and alimentary habits of the available vegetables and fruits. This study examined the effectiveness of consuming omega-3 fatty acid-enriched eggs (Omega Eggs) in increasing total diclary omega-3 fatty acids. Also examined was the impact of Omega Egg consumption on serum lipids. Sixteen hypercholesterolemic men and women with baseline serum total cholesterol concentrations of 5.17-7.76 mmol/L (200-300 mg/dL) followed the National Cholesterol Education Program Step I diet guidelines under the following conditions: (a) Step 1 diet without eggs, (b) Step I diet plus 12 regular eggs per week, and (c) Step I diet plus 12 Omega Eggs per week. In 1999, the FDA approved a health claim for a relationship between intake of 25 grams of soy protein per day and reduced risk of heart disease. Literature suggests that consumers are increasingly krtowledgeable about diet and disease risk factors. While gender, age, race, and family history cannot be altered, diet may be changed to decrease risks. This study explored the relationship of demographic characteristics to consumer knowledge and use of some of the more popular soy products and supplements. The purpose of this project was to determine if the addition of a laboratory measurement, i.e., measurement of serum cholesterol, would increase the effectiveness of nutrition counseling in young men. Subjects were a random sample of 45 healthy male students from a Midwestern university, between the ages of 20 and 25 who were consuming >30% of kcal from fat. Men were randomly assigned to one of four groups; nutrition counseling and measurement of serum cholesterol (NC + SC), nutrition counseling only (NC), measurement of serum cholesterol only (SC), or control (C). Low birthweight (LBW), defined as an infant weighing less than 2,500 grams (1), is a major determinant of infant mortality and contributes to infant and childhood morbidity and increased healthcare costs (2-4). LBW occurs due to preterm delivery (length of gestation less than 37 weeks), growth retardation, or both (2). In the United States, higher rates of LBW occur in urban areas with high concentrations of low-income ethnic minorities (5). Results of the 1997 Pediatric Nutrition Surveillance indicate that the rate of LBW in the United States was 13% for African-American infants, and 8% for whites (6). Healthy People 2010 …

The Effects Of A Hypocaloric Diet Enriched In Oleic Acid Using Almonds Versus Complex Carbohydrates On Metabolic And Anthropometric Parameters During Weight Reduction, Michelle Ann Wien

The purposes of this study were to determine the effect of almonds rich in oleic acid as an alternative to complex carbohydrates on metabolic and anthropometric parameters during weight reduction and to evaluate self-reported satiety and satisfaction. A convenience sample of 57 adults was recruited from the Diabetes and Cardiovascular Risk Reduction Program at City of Hope National Medical Center. Subjects were randomized to an almond-enriched hypocaloric diet or to a complex carbohydrate-enriched hypocaloric diet for twenty-four weeks. Mixed model analysis showed that the use of almonds more favorably influenced weight loss (p< 0.0001), body mass index (p = 0.0001), waist circumference (p = 0.0255) and fat mass (p = 0.0205) compared to complex carbohydrates. Additionally, blood ketone levels were statistically significantly higher in the almond group (p = 0.0230) than in the complex carbohydrate group. No significant difference was found in the total cholesterol:HDL ratio between the groups, however both groups had statistically improved ratios over time with resulting decreases in cardiovascular risk. Alzheimer's disease is a progressive dementia associated with increasing loss of memory, intellectual function, and disturbances in speech. It is the most common form of dementia. It is an incurable disease and has four stages which culminate in coma and death. The average survival rate for Alzheimer's is seven years. Presently, the only treatments approved in the United States for Alzheimer's are the drugs tacrine and donepezil. These drugs improve cognitive function in early Alzheimer's. Children ages 6 through 11 years are progressing in many aspects of their life. Of interest, children are establishing eating patterns that will be carried throughout their lives. Some of these patterns can be considered problematic and need to be addressed, these include: overfeeding or obesity, adequacy of major minerals and establishing healthy eating patterns. We conclude that while some children's eating patterns are problematic, there are means to resolve these trends. They include counseling, family involvement, physical exercise and nutrition education in school at a young age.

This study addresses diabetes knowledge and attitudes of West Virginia dietitians as they relate to Medicare certified provider guidelines. A questionnaire was developed using the Diabetes Attitude Scale, questions from A CORE Curriculum for Diabetes Education, and demographic questions addressing length and type of practice, route to registration, and specialty credentials. Responses were analyzed to determine overall knowledge and attitude as well as how demographic information affects knowledge and attitude. Results indicated demographic information (except for specialty credentials and hours working with diabetes) did not have a significant effect on the dietitian’s diabetes knowledge and attitude. Average Body Mass Index (BMI) and beverage intake were examined to determine if children who drank excessive amounts of beverages had a higher BMI than children who drank average amounts of beverages. Ninety-six WIC charts were reviewed. Average total fluid intake was 32.5 oz/day. For juice and total milk, the average intakes were 11.9 oz/day and 15.6 oz/day, respectively. The average intake of other drinks was 2.4 oz/day. Average BMI of children who drank excessive amounts and average amounts of total fluids was 16.143+1.60 and 16.457+1.90, respectively. No statistically significant differences were found between BMI and the consumption of total …

In Bolivia we have three very valuable Andean grains: amaranth (Amaranthus caudatus), quinoa (Chenopodium quinua), and canihua (Chenopodium pallidicaule), which combined with cereals and legumes can become a complete and balanced food in order to combat the malnutrition that is so widespread in our region. In this study, various nutritional mixes were formulated, based on amaranth and other Andean crops, and the three best were chosen according to nutrition, palatability, and cost. This study examined Neuro-Reflex Therapy, a type of reflexology, and effleurage massage for the treatment of diabetic neuropathy in men and women 40-73 years old with Type II diabetes. Participants were physician-referred to an alternative medicine clinic and were randomly assigned to Neuro-Reflex Therapy, effleurage massage, or a wait-list control group. The treatment groups received 12 individual 30 min sessions scheduled once a week for 12 weeks, and the control group received treatment after the study was completed. OBJECTIVE: To establish the prevalence of fear of fatness (the desire to be thinner) and associated factors, including obesity, reported energy, iron and folate intakes. The difficulties in defining overweight among Irish children and an assessment of dietary and socio-economic factors related to dental caries and also reported in the group. This paper discusses the maternal and neonatal risk factors associated with multiple birth pregnancies. Nutrition implications associated with nutritional care of the high-risk infant and obstetric population are emphasized. Statistical information was gathered concerning the population growth of multiple births over the past twenty years. Literature to identify both maternal and neonatal risk factors associated with multiple gestation pregnancies was also reviewed. Studies conducted over the past twenty years have shown that there has been an increase (25%-50%) in the amount of twin births throughout the world. Eating disorders are a debilitating mental illness that affects young people including those in the field of dietetics. Literature suggests that dietetic students have a higher prevalence of eating disorders than other students. Seventy-seven college student in Southern West Virginia enrolled in either dietetics or another major were included in a sample to determine if dietetic students have higher prevalence of disordered eating attitudes and behaviors. The participants completed a survey that included a general information section, a 26-item questionnaire concerning eating attitudes, and a behavioral information section.
