The Ten State Nutrition Survey (1968-1972) included West Virginia as a participant and provided data on the nutritional status of various age groups including preschool children. Information from biochemical tests, anthropometric measurements and a 24-hour dietary recall indicated that a significant number of children in West Virginia and the United States are malnourished or at nutritional risk. For this reason it is essential that nutritional evaluation of children be carried out during physical examinations. However, it may not be necessary for the evaluation to be completed by a nutritionist.

Our current practices will be compared to the historical factors such as feeding practices of one hundred years ago. The purpose of this study was to determine how well a group of ten men and eight women who attended one of four dinners could estimate measured and weighed portions of ten test foods by a 24-hour dietary recall over the telephone, with and without a food model book.
A paired t-test indicated that there was no statistically significant difference between the 24-hour dietary recalls estimated by the total group with and without the food model book. However, the standard deviation for the dietary recall using the food model book was less than half that of the recall from memory …

Twenty-four young adults, ages 18 to 30, from Cache Valley were studied to determine the incidence of lactose malabsorption. Lactose malabsorption was determined by a two-hour oral lactose tolerance test. The criteria for a malabsorber was a flat glucose curve in which there was a rise in serum glucose less than 20 mg. per 100 ml. above the fasting level. Four of the subjects were found to be lactose malabsorbers. The incidence of lactose malabsorption was determined to be 16.67 per cent. A 95 per cent confidence interval for this study indicated that the actual percentage could be expected to …

Isolation Of Bacteriophage Resistant Lactic Culture Strains With Known Temperature Sensitivity, Luna Ying-Chung Jeng

Seven strains of Streptococcus cremoris and Streptococcus lactis were tested for temperature sensitivity on a temperature gradient bar. A temperature of 37 C was the optimum for differentiating between temperature-sensitive and insensitive strains. Temperature-insensitive strains produced cell masses with absorbance values of 0.1 or higher and activity levels of 1.0 (expressed as a decrease in pH) or above at 37 C. Temperature-sensitive strains failed to produce these cell masses and activity levels.
Strain selection and resistant-mutant isolation made it possible to identify ten strains of Streptococci sufficiently free of phage sensitivity for use in a cheese plant rotation program. These …

The purpose of this study was to examine the effects of socio-demographic characteristics, knowledge of coronary heart disease and behavior variables on blood cholesterol concentration among 218 selected subjects in northern Utah communities.
The data were obtained from physicians' medical charts and a survey specifically designed for this study. A model was developed from an intensive review of literature and the current state of theoretical and empirical knowledge and was tested by means of path analysis. The effect of increasing the dietary protein and pyridoxine level on calcium balance and bone strength was studied in growing and adult rats. The loss of calcium due to urinary excretion of o-phosphoryl-ethanolamine on a high protein diet was also examined.
Three studies were conducted. In the first adult male rats were fed 40% protein diets with high or low pyridoxine or a low protein, low pyridoxine diet. Calcium balance and femur bending stress were determined. In the second study male weanling rats were given either 10 or 63% protein with 0.40 or 0.73% pyridoxine. The effective use of professional dietitians is predicated on the effective delegation of less demanding responsibilities and routine tasks to educationally qualified dietetic technicians. This is essential to effect optimal nutrition care at lowest cost.
The purpose of this research was to determine the degree to which dietetic technicians were performing identified tasks of the role as defined by the American Dietetic Association. A questionnaire was the survey instrument used to collect data from the 130 dietetic technicians who were members of the American Dietetic Association.

Almonds, peanuts, mung beans and soy beans were soaked in distilled water for 0, 2, 6, 18 and 24 hours, and the phytate in the seeds and in the soak water was quantitatively analyzed. A comparison of phytate content was made after the seeds were soaked in 0.01 N HCl or in saturated NaHco 3. The seeds soaked in distilled water served as controls. The effects of zinc and magnesium on stimulation of phytase in seeds were determined by comparing the quantity of substrate (phytate) with that of the control group.

The quality of nutrition education programs is seriously being considered today. Numerous concerns have led to the investigation of underlying problems associated with ineffective nutrition education programs. The need for a nutrition component to be integrated in all educational systems became apparent immediately following the 1969 National Nutrition Survey. West Virginia was one of ten states to be surveyed and results clearly indicated that the nutritional status of the individuals under consideration was less than adequate. The purpose of this study was to determine: (a) the level of disagreement/agreement (role consensus) between skilled nursing facility administrators and consultant dietitians on the activities, responsibilities, and guilities which compose the ideal role (role expectations) of the consultant dietitian; (b) the extent to which administrators and consultant dietitians perceive discrepancies/consistencies between ideal (role expectations) and actual (reality) performance of the dietitian at present; and (c) the common deterrents, which consultant dietitians perceive as the basis for the dichotomy between ideal (role expectations) and actual (reality) role performance.

Phytic acid was quantitatively analyzed in sprouted alfalfa, lentil, mung bean and soy bean seeds. Pulverized dry seeds served as a control and the various sprouting times were 12, 24, 48 and 72 hours after a 12 hour soaking. A comparison was made between sprouts grown in the light for the last 24 hours vs sprouts kept in darkened areas for the total growing time.

Hypothalamic and cortical extracts from various cariogenically grouped rats which had been maintained on either a Purina diet or a high sucrose diet (HSD) for three months were infused intravenously into 28 days old rats to determine if there was a titer of parotid hormone releasing factor (PRF) capable of facilitating fluid movement (FM) in the teeth. The hypothalamic and cortical extracts obtained from Purina-fed rats with 0-caries and the hypothalamic extracts from BSD-fed rats conclusively demonstrated FM stimulatory ability. Other Purina-fed groups were essentially biologically ineffective, however, extracts from HSD-fed caries groups including scores 11-40 demonstrated extremely potent FM …

Forty-eight weanling male Sprague-Dawley laboratory white rats were fed diets composed of whole wheat bread which was made with one of the three sweeteners studied and added before or after baking and adequate vitamins and minerals for the animals' needs. The rats were divided into six groups, designated A through F. Groups A, C, and E were fed bread diets that had the sweeteners honey, corn syrup, and white table sugar added respectively before baking, while Groups B, D, and F were fed bread diets with the sweeteners honey, corn syrup, and white table sugar added respectively after baking.

This thesis describes a comparative study of 82 vegetarian and 21 non-vegetarian Seventh-day Adventist females ages 25 to 65 to discover if there is a possible correlation between diet and weight. The subjects were chosen by random sampling in the specified target population and were personally interviewed by the use of a questionnaire.
The general linear hypothesis analysis shewed that present age and relative weight at age 25 were significant in terms of present relative weight; however, physical activity and socioeconomic stratum were not significant. Diet, defined as vegetarian or non-vegetarian, was only marginally significant.

Fasting blood was collected at weekly intervals and the level of 2,3-DPG of the red blood cell was determined in 15 male subjects age 28 to 57 with serum cholesterol levels greater than 250 mg%. A lactovegetarian diet containing no cholesterol, a high level of dietary fiber and a P/S ratio of 4.0 was provided for 28 days.
During the course of the experimental period the 2,3-DPG increased by an average of 0.83> «moles/ml red blood cell which was highly significant (p^.001). This significant increase of 2,3-DPG which relates to an increased oxygen delivery capability of the red blood cells …

Ground turkey samples were prepared with different fat levels, fat types, percent mechanically deboned meat and grind. All samples were analyzed at three different time-intervals. Samples were evaluated by chemical, sensory, and physical measurements, in term of stability, water content, fat content, press fluid, water loss, flavor, texture, and hedonic values. Significant differences were determined by analysis of variance.
Coarse ground (5/8") samples showed significantly higher TBA numbers, fat content, total loss, and juiciness. Water content, flavor scores, amount of press fluid, texture scores, and hedonic scores were lower when compared to the fine and medium ground samples.

The purpose of this study was to evaluate the nutritive value of ogi, which is the national weaning food in Nigeria, and to supplement it with indigenous foods that are easily produced in Nigeria, available in the local market, locally used, and within the economic capacity of the people. The protein content of corn and ogi was determined by the Kjeldahl method and the amino acid content was determined by ionexchange chromatography. The quality of the foods was evaluated by the rat growth method and the protein efficiency ratio (PER).
