Binding Of Steroid Hormones In Vitro By Water-Insoluble Dietary Fiber, Crystal G. Whitten

Previous work conducted in our laboratory has shown that steroid hormones bind to natural (e.g., brans, oat hulls) and purified (e.g., cellulose, lignin) fiber components. To explore this relationship further, we assessed the in vitro binding of estrone, estradiol-17β, and testosterone to a water-insoluble fiber fraction obtained from composite food samples of 18 Seventh-day Adventist (SDA) nonvegetarian (NV), 20 SDA lacto-ovovegetarian (LOV), and 15 SDA vegan (V) men. Three-day dietary food records and 72-hr food composites were obtained contemporaneously from each subject. The LOV and V subjects consumed significantly more crude, dietary and water-insoluble fiber than the NV subjects. Water-insoluble …

The time delayed complementation of plant proteins was tested in weanling Sprague-Dawley male rats by measuring growth rates as well as plasma and tissue free amino acids. Diets of pinto beans with rice, corn or wheat were pair-fed in combination or alternating 4 times a day at 6 and 11 am, and 4 and 9 pm for 4 weeks. Plasma, liver and muscle samples were obtained 2 hours postprandial, a time determined most suitable for sacrifice, and analyzed for free amino acids via ion-exchange chromatography. The prevalence of hypertension in the U.S. and similar industrialized countries continues to rise. Millions of people are affected in America alone. Usual treatment includes a low sodium diet, weight loss if needed, and drug therapy. Some health providers also encourage stress management as an adjunct to therapy. These treatments have been shown to be effective but patient compliance continues to be poor. This study described three days of dietary intake, physical activity, and glycemic control in 14 female and eight male adult diabetics using Continuous Subcutaneous Insulin Infusion (CSII). Changes in weight after initiation of CSII were also described.
Dietary intakes were analyzed using the NUTREDFO computer program then compared to established standards. Both sexes had mean intakes of zinc, folate, vitamin B6, and magnesium below the Recommended Dietary Allowances (RDA, 1980) for age and sex. The effect of ultrafiltration, diafiltration, and preacidification of milk on the partition of specific milk components between retentate and permeate was studied. Percent retention (for any component Y) was determined as:
[1 - (%Y in soln. permeate/%Y in soln. retentate)] X 100 where %Y in soln. = [%Y / (%Y + %H2O)]
Simultaneous samples of retentate and permeate were taken at several points during each process. Percent retention of total solids, fat, total protein, rennet clottable nitrogen, lactose, total calcium, ionic calcium, sodium, phosphorous, and riboflavin was determined at each sampling point. This research project consisted of seven case studies of obese women who sought treatment for their weight problems at a hospital weight loss clinic and fitness center. The purpose of these studies was to consider the extent to which heredity and /or environmental factors contributed to these subjects being overweight. The case studies suggested that six of the subjects' overweight. problems were mainly caused by environmental factors. It was determined that one subject was overweight largely due to genetic predisposition, but that environmental factors also played a role. The purpose of this study was to investigate the relationship between nutrition and alcoholism in general, specifically how nutritional therapy and education can benefit the recovering alcoholic, and to explore the degree to which nutritional aspects have been developed and practiced in residential and inpatient programs in region 2, excluding the city of Chicago, and in region 3B as defined by the Division of Alcoholism, Illinois Department of Mental Health and Developmental Disabilities, January 15, 1980.
