Nutrition Knowledge Of Young Adults: How Has K-12 Education Affected The Health Of Young Adults In 2023, Anna Polo

Scholars Day Conference

Background: Nutrition knowledge is very important in order to live a healthy lifestyle and to positively impact overall health. There is research studying the effects of nutrition education and that affects students involved in K-12 schooling, but there is a lack of research following those students beyond the classroom and to their young adult years.

Objective: The researcher’s goal was to better understand how much young adults know about basic nutrition from previous education, if different types of schooling (public, private, homeschool, etc.) taught nutrition related classes/lessons, and if different geographical regions provided nutrition education.

Design: the design was a …

University Students' Understanding Of The Endocannabinoid System And Its Relevance To Nutrition, Brittney Burford, Allyson Melton, Robbie Otero

Scholars Day Conference

The Endocannabinoid System (ECS) is a complex cell-signaling system that was identified in 1988, the ECS is the largest receptor system and regulator of homeostasis. Endogenous cannabinoids, or endocannabinoids, are naturally occurring, lipid-based neurotransmitters. Neurotransmitters are chemical messengers in the body that send signals between nerve cells. The ECS system regulates and controls many of our most critical bodily functions such as learning, memory, emotional processing, sleep, temperature control, inflammatory immune responses, and appetite. Tetrahydrocannabinol (THC) and cannabidiol (CBD) are the most known phytocannabinoids. Phytocannabinoids are plant byproducts that closely mimic cannabinoids and have adverse effects on the body. Endogenous …

The Relationship Between Breakfast Consumption And Gpa Among University Students, Sarah Baxter Apr 2023

The Relationship Between Breakfast Consumption And Gpa Among University Students, Sarah Baxter

Scholar Week 2016 - present

Background

University students are not recognizing the correlation between breakfast consumption and academic performance. It is suspected that certain health behaviors such as consistent meal skipping and busy schedules cause students to view breakfast consumption as a low priority. If university students practice certain health behaviors, such as regular breakfast consumption, they should begin to see increased focus in the classroom and recognize the benefits of this important meal.

Methods

A quantitative design was used. One validated questionnaire, The Student Health Behavior and Academic Success was administered to all undergraduate students (N=2,800) at a small Midwestern university. One hundred and …

Social Media’S Influence On College Students’ Recognition Of Inaccurate Nutrition Information, Meghan Olthoff Apr 2023

Social Media’S Influence On College Students’ Recognition Of Inaccurate Nutrition Information, Meghan Olthoff

Scholar Week 2016 - present

Background

Basch et al. (2018) found that 74% (n=190) of students indicated that they would often or always use the internet for health information. Nutrition literacy is an important aspect of health literacy. Health literacy is defined as the skills or ability needed to comprehend and apply nutrition or health information (Svendsen et al., 2021). Nutrition misinformation can be harmful to an individual’s wellbeing because of the fallible, misleading, and erroneous content (Wansink, 2006). The purpose of this study was to explore students’ knowledge as it pertains to the inaccurate nutritional information found within social media.

Introducing Various Foods During Infancy And The Development Of Food Allergies During Toddler/Preschooler Years, Sara Digrazia Apr 2023

Introducing Various Foods During Infancy And The Development Of Food Allergies During Toddler/Preschooler Years, Sara Digrazia

Scholar Week 2016 - present

Introduction: Children are developing food allergies that persist into their adult lives. Literature hypothesizes that introducing foods into a child’s diet late increases the risk of developing food allergies. The purpose of this quantitative study was to explore the relationship of introducing allergy foods within the first nine months to determine if allergen symptoms were observed by the age of two.

Methods: The FDA/CDC Global Opinion Panel Section C of the Infant Feeding Practices Survey was administered to 60 parents of children aged 2-5 participated. Twenty-two responses were returned and analyzed using a Chi-Squared Test of Independence. Parents were recruited …

Ingredient Classification Using Food Ontology, Ricky Flores

UNO Student Research and Creative Activity Fair

A food label provides some of the most crucial information for a food product. The food label is a key resource for many health-conscious consumers for understanding ingredients. It is also vital for individuals to avoid food allergens or help patients follow dietary recommendations. While the food labels in the United States are regulated by the Food and Drug Administration (FDA) many labels contain additional information or statements that are not regulated. Moreover, the food label may be complex or contain terminology that the layperson may not understand. Evidence has indicated that consumers often find nutrition labels confusing, especially when …

The Relationship Between Black Coffee Consumption And Weight Status In Undergraduate Students, Amy Kaczor Apr 2019

The Relationship Between Black Coffee Consumption And Weight Status In Undergraduate Students, Amy Kaczor

Scholar Week 2016 - present

In the current study, the coffee additives (such as cream, sugar, and milk) as a confounding factor are eliminated so that black coffee consumption and weight status can be studied solely. Additionally, the current study measures amount of black coffee consumed per week (considering that some do not drink coffee seven days a week) to further examine whether a statistically significant relationship exists. The purpose of the current study is to explore the relationship between black coffee consumption per week on weight status (through Body Mass Index) to measure the relationship between black coffee consumption and BMI. Based on the …

Coffee Drinking And Leukocyte Telomere Length: A Meta-Analysis, Bella Kotlyar Feb 2018

Coffee Drinking And Leukocyte Telomere Length: A Meta-Analysis, Bella Kotlyar

Yale Day of Data

Telomeres are long tandem nucleotide repeats responsible for maintaining chromosomal integrity. They shorten with each cell division, serving as markers for cellular aging and replicative ability, and shorter telomere length has been associated with greater risk of various chronic diseases of aging. There is increasing interest in the relationship between telomere length and lifestyle factors, such as components of the diet, that are associated with age-related chronic diseases, like cancer and diabetes.

There is mounting evidence that coffee, one of the most commonly consumed beverages in the world, has potential protective effects against chronic disease and mortality. Few studies have …

The Sensory And Textural Evaluation Of A St. Louis Style Butter Cake Made With Greek Yogurt As A Fat Replacer, Caprisse Johnson

Posters-at-the-Capitol

In modern America, many nutrition-related health issues are on the rise, including diabetes, obesity, and heart disease. Many nutrition professionals link the rise in these three diseases to the Western Diet, which includes a high fat and sugar content within its foods. Due to the increased consumption of this diet high in sugar and fat, obesity, heart disease, and diabetes rates seem to be rising. However, many people who eat this diet and are at risk for these complications, hesitate to change their diet because they feel that healthier alternatives are bland in flavor or have a repugnant taste when …

Senior Honors Projects

Over the past decade sustainability has become more than just a buzzword at the University of Rhode Island. We have adapted it into the fabric of our school and created a student body that is focused on the health of our future, on promoting environmental, social and economic prosperity that is created and sustained by action on a local level. In other words, we have realized that before we can “Think Big”, we have to first consider the impact our actions have on every level of society. This project focuses on how the action of eating is a direct reflection …
