Cheesemaking is a process susceptible to defects caused by microbes not purposefully added by the manufacturer. While these bacteria are not a health concern, they can cause problems such as producing carbon dioxide inside the cheese. This can cause slits and cracks in cheese making cheese unsuitable for slicing. One such bacteria identified by cheese researchers at Utah State University and Weber State University is Paucilactobacillus wasatchensis. Moderate to high intensity endurance exercise is a known cause of exercise-induced gastrointestinal syndrome, a condition often associated with intestinal complaints such as discomfort, cramps, and diarrhea. Oftentimes, elevated intestinal inflammation and permeability (a “leaky gut”) are also observed. Previous research has shown that flavonoids, natural compounds found in many fruits and vegetables, may mitigate these exercise-induced effects. In particular, certain cocoa powders contain high levels of flavonoids, and chocolate milk is a good source of protein and sugars for sustaining intense activity. The 15 different cheese samples used in this study were purchased in the retail market from various manufacturers and different origins of manufacture. Sepsis is defined as the presence of an infection in combination with systemic inflammation in a host. One of the detrimental results of sepsis is multiple organ failure which eventually leads to death. Lipopolysaccharide (LPS), an endotoxin that can be found on the outer surface of gram-negative bacteria, can be used as a model for sepsis. LPS present in the circulatory system of hosts can induce symptoms that are seen in patients during septicemia.

Cheddar cheese is manufactured by fermenting milk with lactic acid bacteria added as Lactococcus lactis. The two major subspecies used are lactis and cremoris. Starter culture for this study was prepared and donated by Vivolac Cultures Corporation, Greenfield, Indiana. Cheddar cheese was made in duplicate using two strains of lactis and cremoris. Milled curd was salted with 2.0, 2.4, 2.8, 3.2 and 3.6% salt, pressed for 3 h and stored at 6¬∞C. The curd was sampled during cheese making and after 6d storage. Treating children (0-18 years of age) is often challenging and requires specialized training. Concentrated milk was provided by the South Dakota State University and starter culture for this study was prepared and donated by Vivolac Cultures Corporation, Greenfield, Indiana.

The project initiated as a continuation of a previous study on effects of protein concentration, coagulum cut size and set temperature on curd moisture loss kinetics while stirring during cheesemaking. We explored using de-oiled algal biomass (algal cake) as a low-value substrate for production of lactic acid in fermentations with Lactobacillus casei, and strategies for increasing lactic acid production at low pH. L. casei 12A algal cake (AC) fermentations showed carbohydrate and amino acid availability limit growth and lactic acid production. These nutritional requirements were effectively addressed with enzymatic hydrolysis of the AC using α-amylase, cellulase, and pepsin. Carotenoids are pigments found throughout nature in a large variety of plants including fruits and vegetables (F/V). Carotenoids provide much of the color we see in nature but are perhaps most noticeable in plants with yellow, orange, or red flesh. Carotenoids are antioxidants that serve as a protection against harmful ultraviolet radiation and other free radical producing processes in the body and in plant tissues. Once consumed, carotenoids are deposited in the skin, particularly in fatty tissue. Physically active females, or female athletes, are at risk for the condition known as the female athlete triad (Triad). The Triad is made up of three components that are distinctly separate, but intertwined: consuming inadequate energy for how much they are exercising, poor bone health, and problems with their menstrual periods. The effect of commercial shortenings (butter, lard, margarine, all-purpose shortenings, soybean oil, and interesterified soybean oil) on the physical and sensory characteristics of baked products was evaluated. Results showed that lipid viscoelastic character, melting point, onset melting temperature (Ton), and melting enthalpy (ΔH) affect the physical qualities of baked products, such as batter density of cake, spread of cookies, and breaking strength of pie crust. This research studied the effects of the two isomers of 24,25(OH)2D3 on phosphate absorption in vivo to increase our understanding of the effects of 24,25(OH)2D3 on phosphate transport in vivo, and its two isomers. The current work demonstrates that 24R,25(OH)2D3 is capable of decreasing phosphate absorption after a 1h injection in vivo and 24S,25(OH)2D3 can increase phosphate absorption after a 5h injection, but this stimulation disappears at time points after 5h.

This study aimed to implement and assess a school-based multi-component intervention aimed at increasing elementary school-aged children's knowledge of, preference for, and intake of vegetables. The multi-component intervention included lunchroom exposure, nutrition curriculum in the classroom, after school program vegetable curriculum, family friendly nutrition newsletter, vegetable fair and parent cooking class. Lunchtime vegetable consumption was assessed by direct observation. Changes in preference, attitude, and knowledge were assessed using a pre- and post-intervention survey.

It is now accepted that 1,25(OH)2D3 mediates its rapid actions on the control of phosphate and calcium homeostasis through its membrane receptor termed the 1,25D3-MARRS (membrane associated rapid response steroid binding) protein. I determined the various PKC isotypes involved in the rapid regulation of phosphate uptake and calcium extrusion in chick intestinal cells. 1,25(OH)2D3-mediated phosphate uptake was stimulated within 1 min after addition of the hormone. Western blot analyses on isolated intestinal cells treated with steroid hormone resulted in dose-dependent increases in PKC alpha and PKC beta in postnuclear centrifugation fractions, but not in the low speed centrifugation fractions. Carbohydrates are a major energy source for the human body and particularly glucose is the only energy source for the brain. Thus glucose metabolism is important to maintain normal brain function. Lactic acid bacteria are essential as flavor producers of cheese and fermented products. They are capable of catabolizing aromatic, branched chain, and sulfur amino acids to flavor compounds. During cheese ripening the numbers of lactococcal colonies decrease, but lactococci survive without replication in culture. This prompted an investigation into possible mechanisms of catabolism of branched chain amino acids into branched chain fatty acids and the physiological relevance of amino acid catabolism to the bacteria. We hypothesized that lactococci catabolize branched chain amino acids to branched chain fatty acids during nonculturability.

This study compared the effect of packaging method (0.4% carbon monoxide, 80% oxygen or vacuum), storage time (7, 14 and 21 days) and internal cooking temperature 49, 57, 66, 71 and 79°C) on color and thiobarbituric acid (TBA) values of top sirloin steaks and ground beef patties. Ground beef was obtained from 3 different sources (chuck, loin and trim). All samples were stored at 2°C for 7, 14 and 21 days.

Recently maternal intake of multivitamins has been associated with a reduced risk of orofacial clefts (OFC) in human epidemiologic studies. In the Philippines, vitamin B-6 deficiency was found to be associated with increased risk of OFCs. The birth prevalence of OFCs in the Philippines is among the highest known, but Filipino emigrants in the United States have lower rates, indicating that environmental factors may play an important role in causing OFCs in the Philippines.

The prevalence and possible causes of vitamin B-6 deficiency were investigated through dietary and biochemical assessments in case-control study in Negros Occidental, Philippines. Mothers with OFC …
