There is evidence of a link between body image and disordered eating among females, and some research that suggests exposure to the media exacerbates both body dissatisfaction and eating pathology. Despite these claims, little research has been done on the effects that exposure to photo-shopped images specifically has on body dissatisfaction and eating pathology. The present study sought to further understand the relationship between cognitive distortions of body image and eating attitudes and to examine the effects that exposure to the thin-ideal found in the media has on body dissatisfaction among college aged women. In the United States, the major dietary source of protein is poultry meat, particularly chicken. Phosphorus absorption in chickens is a critical problem in poultry production. It therefore is important to understand the cellular and molecular regulation of phosphorous absorption in intestine to increase efficiency of the process. This would provide the benefits of reducing feed costs and reducing phosphorous excretion, thereby contributing to the sustainability of agriculture in the United States. Therefore, the focus of this thesis is determining the effect of vitamin D metabolites involved in phosphate homeostasis using the chicken as a model.

Introduction: As the aging population increases, the need for accurate assessment of chronic disease risk also increases. There is considerable debate over the best way to assess this risk. BMI is a weight-to-height ratio that is commonly used to assess adiposity and obesity related risk. However, it does not differentiate lean (i.e., muscle and bone) versus fat mass – the true predictors of obesity-related diseases (e.g., cardiovascular disease and diabetes). This is prevalent in post-menopausal women who often experience age-related gains in fat mass and losses in lean mass.

Additionally, it is believed that lipolysis helps dieters feel more energetic, lose weight, and improve physical performance. For these reasons, many athletes and active people are drawn to diets such as the Atkins Diet, the South Beach Diet, the Paleo Diet, and the Zone Diet. Addiction to highly refined foods, specifically sugar, may result in excessive caloric intake, which enhances comorbidity risks, such as obesity and cardiovascular disease. The American Heart Association recommends that women limit “added sugar” intake to 25 g per day (1). Purpose: To determine the relationship between food addiction and sugar consumption. Methods: IRB approved the study, and IT Services sent out a recruitment email to 1992 college-aged females. Participants gave their informed consent and completed two surveys: the Yale Food Addiction Scale (YFAS) (n=160) and the Automated Self-Administered 24-hour dietary recall (ASA24) (n=57). In response to raised consumer awareness of health and well-being many manufacturers are transforming popular food items into functional foods with higher nutritional value. Typical pasta recipes consist of all purpose (AP) flour and/ or semolina flour which contain minimal nutritional value. Resistant Starch (RS) contains a high fiber profile accompanied by many physiological benefits. Background
Gluten sensitivity and the incidence of Celiac disease are ever increasing. The aim was to measure the effectiveness of an enzyme based dietary supplement on the reduction of symptoms encountered upon the consumption of gluten.

Results
The data showed a statistically significant improvement when compared to the placebo group in the following categories: pain, bloating, emptying of bowels, hunger pains, rumbling of stomach, lower energy levels, headaches, and food cravings. There was no statistically signficant improvement in the following symptoms: comfort, nausea, and loss of appetite.

Conclusion
Overall, the dietary supplement, Glutalytic, reduced many of the symptoms that are …

Caloric restriction (CR) was recently demonstrated by us to restrict ovarian cancer growth in vivo. CR resulted in activation of energy regulating enzymes adenosine monophosphate activated kinase (AMPK) and sirtuin 1 (SIRT1) followed by downstream inhibition of Akt-mTOR. In the present study, we investigated the effects of metformin on ovarian cancer growth in mice fed a high energy diet (HED) and regular diet (RD) and compared them to those seen with CR in an immunocompetent isogeneic mouse model of ovarian cancer. While measuring steady shear viscosity of Mozzarella-type cheeses in a rotational rheometer at 70 °C, three main difficulties were encountered; wall slip, structural failure during measurement and viscoelastic time dependent effects. Serrated plates were the most successful surface modification at eliminating wall slip. However, even with serrated plates shear banding occurred at higher shear rates. Because of the viscoelastic nature of the cheeses, a time dependent viscous response occurred at shear rates <1 >s−1, requiring longer times to attain steady shear conditions. Prolonged continuous shearing altered the structure of the molten cheeses. The effects of structural change were greatly reduced by …

This study determined if the co-ingestion of carbohydrate (CHO) with branched-chain amino acids (BCAA) or L-leucine (LEU) preferentially affected serum IGF-1 and the expression of myogenic-related genes in response to resistance exercise (RE). Forty one, college-age males were randomly assigned to 1 of 4 groups: CHO, CHO-BCAA, CHO-LEU, or placebo (PLC). Resistance exercise consisted of 4 sets of leg press and leg extension at 80% 1RM. Supplements were ingested peri-exercise, and venous blood and muscle biopsies were obtained pre-exercise (PRE), and at 30, 120, and 360 min post-exercise. Background: With the global rise of individuals classified as overweight and obese, weight-related screenings have been promoted to combat their high prevalence and associated health problems. Despite their low cost and high nutrient density, the contribution of eggs to nutrient intake and dietary quality among Mexican-American postpartum women has not been evaluated. Nutrient intake and dietary quality, as assessed by the Healthy Eating Index 2010 (HEI-2010), were measured in habitually sedentary overweight/obese (body mass index (BMI) = 29.7 ± 3.5 kg/m2) Mexican-American postpartum women (28 ± 6 years) and compared between egg consumers (n = 82; any egg intake reported in at least one of three 24-h dietary recalls) and non-consumers (n = 57). Home availability of both healthful and unhealthful foods may influence consumption among rural adolescent populations. In conjunction, the availability of food in an individual’s local food environment has the potential to significantly impact what is procured for the home and eaten away from the home. The purpose of this study was to determine how in-store food availability and parental purchases influences home availability and, ultimately, dietary intake among adolescents. Total nutrient admixture (TNA) is a complete parenteral nutrition (PN) formulation composed of all macronutrients, including dextrose, amino acids, and intravenous fat emulsions (IVFE), in one bag. The TNA may be safely administered to the patient, with all components aseptically compounded and minimal administration manipulation required, lending itself to decreases in risks of catheter contamination and patient infections. The TNA is compatible and stable at recommended concentrations, and since the IVFE is in the TNA, it is infused at slower rates, allowing for better fat clearance. Nutrition education is an essential component of medical education if new physicians are to be equipped to address common chronic diseases, including obesity and the associated diabetes, cardiovascular disease, and cancer. Most medical students recognize this need and desire nutrition education; however, finding time in a medical school curriculum and funding are challenging. Available, free online resources and small group exercises can be utilized to provide basic, up-to-date nutrition information to medical students.

Objectives: The goal of this project was to determine the nutritional needs of preschool age children to help guide intervention development. The research aims were 1) to examine and describe young child (ages one to five) nutritional status as it relates to key nutrients associated with stunting and wasting; 2) to determine what key macro- and micro-nutrient deficiencies (primarily iron and zinc) are associated with wasting and stunting.

For this experiment, two groups of paid volunteers, aged 18-34, provided written quantitative and qualitative data on preferences between waffle fries (test) and potato wedges (control). Each participant provided demographic information and then answered a series of questions, using a hedonic rating scale or by composing a written response. Participants also provided qualitative data about what influenced their preference between the test and control. The experiment confirmed the hypothesis was correct: Millennials prefer waffle fries over potato wedges. Yet, little research has compared the impact of this approach to a traditional weight loss program on diet, while physical activity, anthropometric and health indicators have been mixed. Objective. The deregulation of snacks by the National Collegiate Athletic Association (NCAA) permits institutions to provide enhanced snacks incidental to participation. Athletes may now have the opportunity to improve their diet quality. The purpose of this research was to assess the consumption of fruits and vegetables as well as body composition of Division I collegiate athletes. The sample included 19 American football players and 8 volleyball players. Paired t-tests were performed to compare fruit intake, vegetable intake, and body fat percentage pre- and post-deregulation of snacks.
