Model Mozzarella cheeses with varied amounts of shear work input were prepared by working molten cheese mass at 70 °C in a twin screw cooker. Rheology and melt functionality were found to be strongly dependent on total shear work input. A non-linear increase in consistency coefficient (K from power law model) and apparent viscosity and decrease in flow behaviour index (n from power law model) were observed with increasing amounts of accumulated shear work, indicating work thickening behaviour. BACKGROUND: The percent absorption of lutein from supplements falls well below that from lutein enriched egg yolk, a rich source of phospholipids. Therefore, a supplement of lutein plus phospholipids was tested for effects on serum accumulation.
METHODS: A 10 day supplementation with a solid-lipid particle (SLP) lutein complex or conventional lutein ester was done in apparently healthy people (both supplement types taken with fat containing meals). Plasma lutein was measured pre- and post-supplementation as well as 7 days after supplementation stopped. Changes within each supplement group were analyzed by paired t-test; group comparisons were done by unpaired t-test.

The health of America’s youth is jeopardized as obesity, often beginning in childhood, becomes a major epidemic. Parents have exceptional influence on their children, especially nutritionally, which impacts how their children grow and develop. Parents with minimal nutrition education and who do not practice healthy eating habits may unintentionally influence their children in practices that could lead to nutrition-related disease and/or obesity. The obesity pandemic will afflict future generations without successful prevention, intervention and management. Attention to reducing obesity before, during and after pregnancy is essential for mothers and their offspring. Preconception weight loss is difficult given that many pregnancies are unplanned. Interventions aimed at limiting gestational weight gain have produced minimal maternal and infant outcomes. Therefore, increased research to develop evidence-based clinical practice is needed to adequately care for obese pregnant women especially during antenatal care. Fruit and vegetable intake as well as physical activity participation in Mississippi is consistently lower than recommendations. We conducted a cross-sectional study to examine fruit and vegetables consumption, fat intake, and moderate-intensity physical activity participation and how these variables relate to socio-demographic factors among medically underserved adults in south Mississippi. Fruit and vegetable consumption and fat intake along with physical activity participation and socio-demographic characteristics was collected from a sample of 161 (48 male and 113 female) adults in south Mississippi. A growing concern throughout the world, especially the United States, is the health of our population. According to the National Health and Nutrition Examination Survey (NHANES) performed in 2009-2010, approximately 35% of both men and women in the United States are obese (Flegal, 2012). In 2005, more than 300,000 deaths in the United States were attributed to obesity. However, the World Health Organization listed obesity as one of ten most preventable health risks (Wilborn, 2005).

This study is designed to investigate whether the current system of administering fluid to enteral nutrition patients in a mid-sized community hospital is effective based on the enteral feeding order, outcomes recorded by the dietitian in the medical record, or comparison to widely- accepted standards for estimating fluid needs. Data of this retrospective chart review came from 566 medical records that were pulled based on admission date within a one year time span and an order for enteral nutrition (EN) during the patient’s stay. The aim of the present study is to investigate whether a low-carbohydrate ketogenic diet (LCKD) is an effective strategy to decrease overall weight and fat mass, and preserve lean body mass (LBM) without compromising performance in trained, power-lifters. This was a six-week randomized controlled trial, with a LCKD intervention group and a normal diet control group (CON). The LCKD group was instructed to consume a diet with less than 7% carbohydrates, 50% fat, and 45% protein. Those in the CON group maintained an ad libitum diet. Diets of children and adolescents are often lacking in key nutrients due to their low intakes of important food groups (e.g. fruits, vegetables, whole grains, and dairy). This study examined nutrients of concern for growing girls compared to dietary recommendations. Specifically iron and calcium were analyzed to determine the highest dietary sources of these micronutrients and the impact of supplementation on girls’ mean intake. The objective of this Capstone is to study the healthfulness of the college dining environment and compare students’ perceptions of dining hall healthfulness and their behaviors by their dieting status.
The methodology used in this Capstone included the distribution of a healthy campus survey to a convenience sample of students at Syracuse University. This survey assessed health-oriented perceptions of the environment and behaviors, meal intentions, height, weight, desired weight status, and demographics. There is a growing interest in the practice of mindful eating as it is shown to be effective for weight management and improving diet. Background: The goals of the study were (1) to determine the impact of inorganic mercury exposure on glucose homeostasis; and (2) to evaluate the effectiveness of two community-based interventions in promoting dietary changes among American Indian college students to reduce risk factors for Type-2 Diabetes including fasting glucose, insulin, and mercury levels, weight, and body mass index.

Metabolic bone disease is a frequent co-morbidity in newly diagnosed adults with celiac disease (CD), an autoimmune disorder triggered by the ingestion of dietary gluten. This systematic review of studies looked at the efficacy of the gluten-free diet, physical activity, nutrient supplementation, and bisphosphonates for low bone density treatment. Case control and cohort designs were identified from PubMed and other academic databases (from 1996 to 2015) that observed newly diagnosed adults with CD for at least one year after diet treatment using the dual-energy x-ray absorptiometry (DXA) scan. We have reported that microRNAs (miRNAs, miRs) in bovine milk regulate human genes. In milk, many miRNAs are encapsulated in exosomes, thereby conferring protection against degradation and a pathway for intestinal transport of miRNAs. We hypothesized that the uptake of bovine exosomes in human intestinal colon carcinoma Caco-2 cells and rat primary small intestinal IEC-6 cells is mediated by endocytosis. Transport studies were carried out using fluorophore-labeled exosomes purified from bovine milk. Obesity among children and adolescents is increasingly becoming a major public health problem. Poverty and lower socio-economic status as well as lack of parental awareness regarding a balanced diet and adequate exercise all contribute towards childhood obesity. Unfortunately minority children have been especially vulnerable, among them inner-city Latino children continue to have the highest incidence rates of overweight and obesity; hence targeted intervention for this population group is of paramount importance. Based on current literature, oral health in long-term care (LTC) facilities is frequently of low priority and does not follow evidence-based best practices. Poor oral health reduces the quality of life of older adult residents and patients and can lead to systemic diseases, such as cardiovascular disease, stroke, and pneumonia, the leading cause of death in LTC. Occupational therapists can play an instrumental role as oral care consultants, and educators, and can act as resource guides to raise the standards of oral care in LTC facilities.
