Water kefir is traditionally fermented using dark brown sugar due to a fast growth rate, however the use of other sweeteners, such as honey, is relatively unexplored. This paper describes the investigation of using alternative mediums made with honey, agave nectar, Truvia/stevia, and monk fruit sweetener, each supplemented with dark brown sugar on the biomass growth of water kefir grains (WKGs). Growth in these alternative mediums was compared to WKG growth in the standard medium prepared using only dark brown sugar. Background: Dietary interventions for high cholesterol, a primary risk factor for cardiovascular disease, are generally considered before prescribing drugs.

The consumption of ready-to-eat (RTE) foods has increased with popular RTE salad blends including non-traditional ingredients such as shredded Brussels sprouts, kale, red and green cabbage, chicory, and broccoli stalk. Concurrently, there has been an increase in the number of foodborne illnesses and outbreaks associated with leafy greens. In 2019, around 40% of school-aged children in Arkansas were classified as overweight (~17%) and obese (~23%), according to BMI data collected. Children with obesity have an increased risk of developing type 2 diabetes, hypertension, and dyslipidemia. Unhealthy eating habits, such as skipping breakfast, have been strongly associated with overeating, weight gain and obesity. Breakfast is a key component of a healthy diet and can positively impact children’s health and well-being. This experiment was conducted to compare the effects of different diet compositions on performance and carcass yield of male broilers from 15 to 36 days of age. In total, 593 male birds were divided across a randomized design that consisted of 6 dietary treatments, each with 8 replications. The treatments included pelleted diets that varied in grain type and crude protein (CP) value: 3 sorghum-based diets at 20%, 18.75%, and 17.5% CP and 3 corn-sorghum blended diets at the same CP levels. These 23 million barrels of craft beer account for 12.3% of the United States beer consumption in 2020. The American craft beer industry is substantial and needs to protect its product from bacterial contamination.
Overall, beer is a microbially stable product. Listeria monocytogenes is a known microbiological hazard associated with raw, RTE seafood. The patented Carbo Rock-It system was developed to carbonate beverages for the craft brewing industry with the goal of reducing time, cost, and environmental impacts of the carbonation process. This research field tests, models, analyzes and optimizes the engineering and economic performance of a commercial-scale Carbo Rock-It placed in production at an operating brewery (Core Brewing and Distilling Co., Springdale, AR). Global population growth and increased meat demand present challenges for the agricultural industry to produce meat sustainably. In-vitro meat (IVM) is an alternative that could reduce negative impacts associated with livestock production. The goal of this study was to examine consumers’ preferences for IVM. In the United States, many communities lack sufficient access to fresh produce. To improve access to fresh fruits and vegetables, the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) provides eligible participants vouchers through the Farmers Market Nutrition Program (FMNP) that can be redeemed directly from farmers at markets or farm stands. However, FMNP voucher redemption rates in New Jersey remain lower than those in neighboring states. Detecting microorganisms on environmental surfaces via an environmental monitoring (EM) program is part of a preventive food safety culture. Environmental monitoring should 1) verify that food safety plans are reducing cross-contamination risk from surfaces to food, 2) pinpoint microbial niches, and 3) prevent the transmission of pathogens. The purpose of the present study was to assess the effectiveness of hydrogen peroxide vapor (HPV) at inactivating Salmonella inoculated in whole black pepper when used as fluidizing gas media. HPV treatment was conducted at two different temperatures (45°C and 60°C) and two dwell times (30 min and 60 min). Microbial reduction and residual hydrogen peroxide were measured at three storage times: 0 h (immediately after treatment), 24 h and 48 h post-treatment. Functional flavored water has emerged as a major space in the beverage industry in recent years. However, no research has explored the point that consumers begin to reject a specific flavor concentration within a flavored water matrix (i.e., a consumer rejection threshold). Hand-harvesting parameters and postharvest marketability attributes of fresh-market blackberries (Rubus L. subgenus Rubus Watson) were characterized to develop a prototype for a soft-robotic gripper for robotic harvesting. A custom-made, force-sensing apparatus attached to the thumb and fingers of a person hand-harvesting blackberries was developed to quantify forces used to harvest and to identify appendages for harvesting. Four cultivars of blackberries grown in Arkansas were harvested at optimal ripeness and stored at 2 °C for 21 days to determine the impact on marketability attributes (leakage, decay, and red drupelet reversion). Microgreens are the young, edible seedlings of various vegetables, spices, herbs, and considered as the intermediate stage of sprouts and mature greens, suggesting microgreens may share similar food safety risks with both of these produce. Even though there are no known outbreaks due to contaminated microgreens, multiple product recalls have been reported, indicating food safety risks associated with microgreens should not be underemphasized. A recent national survey of the U.S. microgreens industry reported that almost half of growers (48.3% of 176) learned to grow microgreens by viewing websites and videos on the internet.1 However, it is unknown whether the …

The effects of pasteurization temperature and time on the change in seven peach puree variables over a 6-week accelerated shelf-life test (35°C) were evaluated. The variables of interest were three color measures [ L* (lightness), a* (redness), and b* (yellowness)]; two brown pigment measures [spectrophotometric absorption at 420 nm (Browning Index) and 443 nm (Hydroxymethylfurfural)]; °Brix; and pH).
