Enoyl-ACP reductase (FabI), an enzyme which is inhibited by catechin, is essential for lipid biosynthesis in bacteria (E. coli). Another FabI inhibitor, triclosan, has strong antibacterial effects,1 but overuse can be detrimental to the environment. Flavonoids, a class of dietary compounds, are known to have potent inhibitory effects on FabI and other kinases.2,3,4 Adducts form as a result of the biochemical reaction between flavonoids and cysteine, a modification which can be verified by m/z shifts on the mass spectra.5 Samples of E. coli protein with overexpressed FabI are utilized: the wild type with ordinary primary structure, and mutant type lacking …

Global agriculture is beset by numerous challenges which must be surmounted to feed a developing world, from combating climate change to the cultivation of sustainable food products. This, in addition to protein and nutrient deficiencies in the developing world, makes considering alternative protein sources, such as a crickets, an attractive option. Crickets use a fraction of the land and water that protein sources like beef cattle do, and can be cultivated in urban environments in stacked boxes. Financial incentives from the state and wider distribution potential have lured many west coast brewers to open satellite breweries in Virginia. Quality control is crucial for any brewery and especially important in satellite breweries that need to imitate the standard set by the parent brewery. Zinc, magnesium, iron, sodium manganese, and calcium are trace elements found in wort and are essential for enzymes that catalyze fermentation reactions. These elements protect against cell stress, play a crucial role in flocculation, and can affect the flavoring and coloration of beer. Resveratrol is a naturally occurring polyphenolic compound showing health benefits, including anti-carcinogenic, anti-microbial, anti-HIV/AIDS, neuro-protective, and cardio-protective activities. It has been proposed as a promising dietary supplement or functional ingredient in foods to lower the prevalence of many chronic diseases. However, due to the molecule’s chemical instability, low bioavailability, and poor water solubility, its application was vastly limited. Therefore, extensive research has been conducted regarding microencapsulation of resveratrol. In this study, resveratrol was double encapsulated with zein, a prolamine protein found in maize, and chitosan, a hydrophilic, linear polysaccharide derived from chitin via a deacetylation reaction. Given worldwide problems of access to safe potable water, this presentation examines how tools of economics can aid in drafting appropriate mitigating policies. Utilizing partial equilibrium analysis, it demonstrates the role that prices play in social coordination and then applies the framework to real world examples. In addition it examines Pigouvian Taxation and Coasean Bargaining as two classic methods for dealing with externalities in the context of water pollution. Second-best solutions such as tradable permits and metered pricing by public utilities are discussed. Research suggests that whole grain intake may decrease the risk of heart disease, type II diabetes, hypertension, obesity, and many types of cancer. The overall goal of this work is to increase the health status of an older adult population through comprehensive nutrition risk assessment and exposure to tailored nutrition education interventions. This project involved assisting in baseline and post-intervention assessment of the knowledge, attitude, and intake of whole grain foods within a convenience sample of fifty-eight older adults residing in low-income housing sites across Rhode Island. This presentation covers what Public Choice economists refer to as ‘rent seeking,’ generally seeking favor or special privilege from government through subsidies or regulatory advantages. Particularly, the biotech industry is the area of focus for this presentation. Problems with rent seeking in the biotech industry involve less innovation and industry consolidation. Policies related to biotech regulation, school lunch programs, the Clean Air Act, and ethanol subsidies are discussed. A game theoretic approach is used and it is concluded that issues related to rent seeking and special interests are not adequately addressed by recent campaign finance reform efforts.
