The purposes of this senior project were to identify college students’ perceptions and knowledge of organic food. This study also focuses on the respondents’ purchasing and budgeting of organic food. This information is essential to inform farmers and ranchers because it serves as an indicator of future market’s demands.
A thirteen item questionnaire was distributed to sixty-five students attending California Polytechnic State University, San Luis Obispo, enrolled in either Agricultural Education and Communication courses or Agricultural Business courses. Due to the recent changes in the economy of Kentucky tobacco production, some producers are seeking an alternative crop that will provide similar economic gains to tobacco without needing more acreage. Tomatoes are an existing crop in Kentucky that have been declining in acreage over the last five years. There is evidence to suggest that, through niche and local marketing, tomatoes may be able to fill the void left by tobacco. However, there is concern among producers that they will lose yield and/or quality if they switch to one of these niche production systems or cultivars.

This study determined the impact of starches on the properties of low fat rennet curd as measured by microstructural and instrumental analysis. In experiment 1, 17 starches were initially screened for swelling power, impact of curd yield at 5 g/L and 10 g/L in milk, and settling in rennet-induced partially acidified low fat curd.
Starches examined were narrowed down to five in experiment 2; they included: modified waxy corn starch, waxy rice starch, instant tapioca starch, dextrin, and a modified tapioca starch. These starches were added to skim milk to make rennet-induced partially acidified milk gels. Gels were made by …

The effects of oscillating and static retort thermal processing on heat penetration using an institutional size pouch were evaluated. A literature review of general information on retort thermal processing, process modes, processing mediums, retort pouches and starch was presented.
Frigex-W starch (National Starch Food Innovation) and water mixtures were prepared at three different concentrations (1%, 3% and 5%). Five replications of starch and water mixtures were processed using water spray as the processing medium in institutional size retort pouches (29.2 cm. x 38.1 cm.) using both oscillating and static processing modes.

After several years of working as a nutritionist in hospitals Louise Lepeze joined the Louisiana Department of Education child nutrition programs as an Area Supervisor in 1980. She later became the Section Chief. Lepeze left the state in 1991 to join USDA at the Southwest Regional Office in Dallas as the Net Coordinator, Nutrition Education and Training Program. She has been back in Baton Rouge since 2005, working for USDA in the area of School Meals Initiative.

Treponema denticola has been identified as an important cause of periodontal disease and hypothesized to be involved in extra-oral infections. The objective of this study was to investigate the role of T. denticola cell length and motility during mouse peritoneal macrophages in vitro uptake. Macrophages, incubated under aerobic and anaerobic conditions, produced a similar amount of TNF-α when stimulated with Escherichia coli LPS. The uptake of FlgE- and CfpA-deficient mutants of T. denticola was significantly increased compared with the wild-type strain, due to cell size or lack of motility. Opsonization with specific antibodies considerably improved the treponemes’ uptake. …

Adverse socioeconomic conditions in childhood can have lasting effects on health, but evidence is lacking from prospective studies concerning the effects of early poverty on abdominal obesity in adulthood. Cross-sectional studies in adults from middle and high-income countries show that current socioeconomic status is inversely related to obesity in women, but the pattern in men is not consistent. A systematic review was undertaken to assess the influence of early socioeconomic status on waist circumference, hip circumference, and waist-hip ratio in adulthood. In this research project, real natural strawberries bought from different local sources were profiled by gas chromatography-mass spectroscopy (GCMS). These profiles were then used as a reference to compare GCMS profiles of commercial artificial strawberry flavor products such as strawberry flavored Cool Splashers™, Gatorade®, and Aquacal® flavored water. The chromatograms obtained were patterned using simple visual observations, scatter plot designs, Mann-Whitney U Test, and correlation coefficients. The artificially flavored commercial products tend to have simpler chromatograms. The Burger King® milkshake, Gatorade®, and Hi-C® are the most similar to that of the natural strawberry flavor. Alliin is a predominant flavor precursor in garlic cloves. It interacts with the enzyme alliinase when garlic cloves are crushed, cut, or chewed to produce allicin, an unstable thiosulfinate that is the main biologically active component of fresh crushed garlic. Biological functions and health benefits of garlic include reduction of cancer risk in humans, improving immune system, and anti-microbial, anti-oxidant, and anti-hypertensive activities. The quality of fresh garlic and garlic products is usually related to its alliin content and allicin release potential. Objective:Obesity is an increasingly prevalent nutritional disorder throughout the world. In particular, abdominal obesity is associated with cardiovascular and metabolic risk. The present study aimed to evaluate the effects of skin colour and life-course socio-economic indicators on waist circumference (WC), hip circumference (HC) and waist:hip ratio (WHR) in young adults.

Cardiovascular disease (CVD) is a major health risk in the United States. Major indicators of CVD risk include obesity, blood lipids, and blood pressure. Modifiable risk factors associated with CVD include body composition (body mass index and waist circumference), serum lipids, and blood pressure. Data suggest calcium intake may play a role in regulation of weight, serum lipids, and blood pressure. The purpose of this study was to assess relationships of dietary calcium intake with weight status, and cardiovascular disease risks in African American population participating in the Jackson Heart Study.

Chitosan is a naturally derived material that has anti-microbial properties. Studies have shown that chitosan is effective when it is in contact with the surface of the product upon which the antimicrobial effect is desired. This suggests that chitosan should be on the inside surface of the package. In this work, a machine coatable chitosan coating was developed for application to the sealable (LDPE) side of a PET/LDPE lamination. Background: The cellulose synthase superfamily has been classified into nine cellulose synthaselike (Csl) families and one cellulose synthase (CesA) family. The Csl families have been proposed to be involved in the synthesis of the backbones of hemicelluloses of plant cell walls. With 17 plant and algal genomes fully sequenced, we sought to conduct a genome-wide and systematic investigation of this superfamily through in-depth phylogenetic analyses.
Results: A single-copy gene is found in the six chlorophyte green algae, which is most closely related to the CslA and CslC families that are present in the seven land plants investigated in our analyses. …

Folate degradation in micronutrient fortified corn masa and tortillas was evaluated using masa prepared from either nixtamalized corn flour or fresh nixtamal. A laboratory evaluation of the effects of pH, iron, and holding time at elevated temperature on folate loss in corn flour masa failed to show significant differences in any variable-treatment combination. An additional study was conducted at a commercial tortilla mill in Guadalajara, Mexico using masa prepared from fresh nixtamal. Commercial nixtamal was fortified with one of two different micronutrient premixes, containing iron, zinc, riboflavin, thiamin, niacin and either unencapsulated or lipid-encapsulated folic acid. Galactooligosaccharides (GOS) are prebiotics that have a beneficial effect on human health by promoting the growth of probiotic bacteria in the gut. GOS are commonly produced from lactose in a reaction catalysed by β-galactosidase, termed transglycosylation. In the present work the synthesis of GOS from Whey Permeate (WP) using commercially available β-galactosidases was studied. The enzymes used were from Kluyveromyces lactis (Maxilact® L2000) and Escherichia coli. Initially, a novel quantitative TLC-based assay to monitor GOS synthesis was developed. Using cryo-electron tomography, we are developing a refined description of native cellular structures in the pathogenic spirochete Treponema denticola. Tightly organized bundles of periplasmic flagella were readily observed in intact plunge-frozen cells. The periplasmic space was measured in both wild-type and aflagellate strains, and found to widen by less than the diameter of flagella when the latter are present. This suggests that a structural change occurs in the peptidoglycan layer to accommodate the presence of the flagella. In dividing cells, the flagellar filaments were found to bridge the cytoplasmic cylinder constriction site. Cytoplasmic filaments, adjacent to the inner membrane, …

The peptide toxins of poisonous Amanita mushrooms are bicyclic octapeptides (amatoxins) or heptapeptides (phallotoxins). In Amanita bisporigera, α-amanitin and phallacidin are synthesized as 35- and 34-amino acid proproteins, respectively, in which the amino acid sequences found in the mature toxins are flanked by conserved amino acid sequences. The presence of invariant Pro residues immediately upstream of the toxin regions and as the last predicted amino acid in the toxin regions themselves suggests that a Pro-specific peptidase is responsible for the initial post-translational processing of the Amanita toxin proproteins. Inactivation of Escherichia coli in liquids was carried out using power ultrasound. Parameters examined included amplitude levels (0.4µm, 7.5 µm, 37.5 µm), treatment time, cell condition (non-adapted cells, acid adapted cells), liquid media (TSB, model orange juice and model apple juice) and E. coli strain (ATCC 25922, NCTC 12900). The efficacy of ultrasound treatment was found to be a function of amplitude level, treatment time and media (p0.95), with the highest inactivation achieved using an amplitude of 37.5 µm. The D-values of E. coli 25922 at all amplitudes in model orange juice were not significantly different than in TSB media. …

Mushrooms have a short postharvest shelf life compared to most vegetables, due to a very high metabolic activity and high water content, making them prone to microbial spoilage and to exhibit enzymatic browning.
