[Objective] To address key industrial challenges of leisure dried tofu subjected to mild sterilization, namely shortened shelf life (30~90 d) and susceptibility to photoenzyme -induced oxidative deterioration, this study aimed to elucidate the mechanisms by which tert -butylhydroquinone (TBHQ ) inhibits quality deterioration in leisure dried tofu induced by photoenzyme initiators. [Methods] Leisure dried tofu was prepared using marinade treated with TBHQ and photoenzyme initiators (chlorophyll and azodiisobutyronitrile ). [Objective] To establish a method for authenticity identification of camellia seed oil. [Methods] The fatty acid composition of camellia seed oil and six common vegetable oils are determined by gas chromatography. Principal component analysis (PCA) is employed to explore the distribution patterns of fatty acids among the vegetable oils and to screen for potentially adulterated oils. Partial least squares discriminant analysis (PLS-DA) is applied to establish a model between fatty acid profiles and actual adulterated oils. [Objective] To comprehensively compare and screen glycoprotein preparation processes for six representative medicinal materials from the genus Panax. [Methods] Glycoprotein yield, DPPH radical scavenging capacity, hydroxyl radical scavenging capacity, and Fe2+ chelation inhibition rate were used as evaluation indicators. [Objective] To optimize the extraction process of flavonoids from Xinyang Camellia sinensis and to compare the in vitro antioxidant activities of total flavonoids before and after purification. [Methods] Using Xinyang C. sinensis as raw material, a one-factor test is conducted to investigate the effects of ethanol volume fraction, ultrasonic time, ultrasonic power, and material–liquid ratio on the yield of flavonoids. This article investigates the effect of ellagic acid isolated from Maclura pomifera fruit on the staling dynamics during the storage of bread products. The study aimed to determine the effectiveness of ellagic acid's antioxidant and antimicrobial properties in preserving the microbiological stability and technological quality of bread. Experiments were conducted on bread samples with ellagic acid added at concentrations of 0.05% and other levels. The results showed a slowdown in the staling process, as indicated by moisture content, water retention, shrinkage, and penetrometric measurements. [Objective ] This study aimed to explore the antioxidant and anti-fatigue properties of Malus spectabilis fruit polysaccharides (MPPs ) and analyze the structure-activity relationships.[Method ] Two types of MPPs were prepared via acidic (AC-MPC ) and alkaline (AL-MPC ) extraction methods.The polysaccharide composition was identified by high-performance anion-exchange chromatography (HPAEC ).The changes in mouse body mass,serum biochemical indicators,and exhaustive swimming time were measured to assess the in vivo antioxidant and anti-fatigue effects of MPPs.[Result ] Galacturonic acid was the main component in both types of MMPs,while AL-MPC had higher mass fraction of total polysaccharides.The in vivo experiments demonstrated that both …

[Objective ] This study aims to improve the dispersion and utilization of caffeic acid phenethyl ester (CAPE ) in aqueous solutions.[Method ] CAPE-loaded hordein (CAPE-HD ) nanoparticles were constructed via an anti-solvent precipitation method.The physicochemical properties of the nanoparticles were characterized,and the antioxidant properties of the nanoparticles within Caco- 2 cells were investigated.[Result ] The components within the CAPE-HD nanoparticles interacted through non-covalent bonds,such as hydrogen bonding,resulting in an altered state of CAPE upon nanoparticle formation.The CAPE-HD nanoparticles exhibited near-spherical morphology with an average particle size of 193.93 nm,an average polydispersity index (PDI) of 0.26,and average Zeta potential of 14.50 …

Jujube seed extract (JSE), rich in polyphenols and flavonoids, exhibits neuroprotective and sleep-enhancing properties.In vitro, JSE protected HT22 cells against oxidative stress by activating the Nrf2/HO-1 pathway and upregulatingantioxidant enzymes. In vivo, JSE increased non-REM sleep and delta wave activity in pentobarbital- and caffeine-induced sleep models. Spinosin contributed to these effects. Long-term JSE administration upregulated GABAA, GABAB, and 5-HT1A receptors in brain tissue. These findings suggest that JSE offers dual benefits in mitigating oxidativestress and promoting sleep through antioxidant defense and neurotransmitter modulation, supporting its potential as a natural therapeutic agent.

Plant-waste-derived bioactive compounds have generated growing interest recently. In this context, this project examined the phenolic content, antioxidant capacity, antimicrobial activity, and antibiofilm capability of the seed extract of Phoenix dactylifera. Six date seed varieties (Fardh, Sukarri, Negal, Majdool, Zahidi, and Khadrawy) were studied. In this study, a novel ultrasound-assisted extraction technique is compared with the conventional extraction method (maceration using 80% ethanol), taking into account both the quality and quantity of polyphenols. The research and development value of rape bee pollen, a natural health raw material, is increasing as public awareness of health issues develops. This review introduced the various nutrients and active substances contained in rape bee pollen and summarized the biological activities and pharmacological effects of rape bee pollen in antioxidant, anti-inflammatory, immune enhancement, antibacterial, prostate protection, anti-diabetic complications, anti-tumor, intestinal regulation, and ovarian protection. Objective: The changes in the main chemical components in water extracts of Tibetan tea during the pile fermentation process were investigated. Methods: Research was done on tea samples and water extracts from various fermentation stages of Tibetan tea. Soluble solids, soluble sugars, total polyphenols, total flavonoids, and in vitro antioxidant activity (ABTS and DPPH) were all examined. Additionally, ultra-performance liquid chromatography (UPLC) was used to find theophylline, caffeine, gallic acid (GA), and 8 catechins monomers. Methods: Polyvinyl alcohol/nanocellulose crystal/pomegranate peel polyphenol composite antibacterial films were prepared by blending method with pomegranate peel polyphenol as functional active substance, and their properties were characterized. Results: The continuity of the film surface was affected by the addition of pomegranate peel polyphenols. Based on the antioxidant capacity of fermented beverage of Malus doumeri fruits, the single factor test and the response surface methodology were used to find out optimal fermentation conditions. This study characterized the physicochemical, technofunctional, and in vitro antioxidant properties along with the AA profile and score of a sprat protein enzymatic hydrolysate (SPH). Furthermore, the impact of the SPH on the growth, proliferation, and muscle protein synthesis (MPS) in skeletal muscle (C2C12) myotubes was examined. The SPH displayed good solubility and emulsion stabilization properties containing all essential and non-essential AAs. The goal of our present study is to assess the pharmacological potential of essential oil extracted from Spartium junceum cultivated in Lebanon. This oil was obtained by hydrodistillation using the Clevenger apparatus. Then, an organoleptic characterization and an evaluation of its antioxidant, repellent/insecticidal, and antibacterial activities have been evaluated. The obtained results showed that this oil had an antioxidant activity reaching 82 % dependent on the dilution used. In addition, it showed an insecticidal effect and an antibacterial effect.
