Utah farmers markets play a critical role in food access, small business viability, and community connection, yet limited statewide data document their impact. The Utah Farmers Market Network (UFMN) and Utah State University (USU) Extension conducted a mixed-methods evaluation (2023–2025) and found that farmers markets make valuable contributions to the community.

Climate change, import restrictions, and global conflicts are significantly impacting brewing raw material supply and costs. To shield the malting and brewing industries from these disruptions, alternative crops to barley must be explored. Rice presents a promising option, yielding twice as much per hectare as barley and showing greater climate resilience. Monte Carlo simulations estimated the economic and agronomic impact of using rice for malting. While rice malt is more expensive to produce, it remains an attractive gluten-free alternative. Beer brewed from 100% rice malt costs 33% more than barley-based beer but reduces acreage requirements by 50-67%. Using rice malt …

This project explores the pathways by which agriculture affects the environment and determines which foods have the greatest climate, water, and land impacts. Agricultural effects on the environment are extensive, from loss of habitat and declines in regional biodiversity to disruption of global nutrient cycles and climate change. Global food production accounts for 26-34% of annual anthropogenic greenhouse gas emissions, makes up 38-46% of habitable land, and is responsible for 70% of freshwater extraction. From 2022, the European Union Waste Framework Directive (WFD) requires member states to report annual food waste from each food supply chain stage. Comprehensive food losses and waste (FLW) data can be challenging to obtain for the primary production stage, i.e., farming and fishing. However, this information is vital in developing FLW mitigation actions appropriate to each country. This study describes the nature and extent of FLW from primary production in Ireland, using methods approved for WFD reporting. In this paper, we discuss dietary and possible medicinal practices of an Early Formative period (2000–1000 BCE) community transitioning from Archaic-style to Formative-style lifeways. The results we present come from the analysis of plant residues, including microbotanical and macrobotanical remains, which were excavated at the village site of La Consentida in coastal Oaxaca, Mexico. Phytoliths and starch grains were recovered by sonication from twenty ceramic and lithic artifacts. The microbotanical analyses identified plant remains from four different families: Bombaceae (flowering plants), Dioscoreaceae (yam family), Fabaceae (bean family), and Poaceae (grasses, including maize). By using this project as a jumping off point for discussing local food networks, buzzwords such as "organic" and "local" are analyzed and re-defined. The following report details a life cycle assessment of several dietary and meal scenarios with and without pork. The goal of the LCA was to identify the impacts of greenhouse gas emissions, water use, and land use of pork containing and porkless diets and meal plans in a field-to-fork analysis. The dietary and meal plan scenarios are iso-caloric meaning they contain the same number of calories. The first set of diets is based on a USDA consumption pattern, 2000 kcal per day. Models are valuable tools for explaining and testing systems. Small-scale models can be especially useful for educational purposes. For models to be useful, they have to accurately depict the larger system that they are describing. A novel man-made system, known as an agrivoltaic structure, is being constructed at Biosphere 2 near Oracle, Arizona. The word agrivoltaic is a combination of agriculture and photovoltaics, or solar farming. My research involved creating a small-scale version of this system for educational purposes.
