Maintaining meat quality during cold temperature storage is an important goal for increasing consumer satisfaction and reducing food waste. Following a literature review on the importance of cold meat storage, a study was conducted as a part of Electrolux refrigerator research and development. Chicken breast and beef sirloin filets were stored at -2°C, -5°C, and -18°C and monitored for quality changes over a 7-day period. Temperature fluctuations and relative humidity data were monitored automatically by sensors. Meat quality was evaluated by measuring water activity, moisture content, pH, colorimetry, sensory, and drip loss. Microbial plate counts were used to monitor the …

The quality and microbiological characteristics of quail eggs were evaluated after eggs were pickled in different vinegar brine solutions. Pickling food in vinegar is one of the oldest preservation methods; however, little research has been conducted on pickled quail eggs. Commercial quail eggs obtained from a local producer were boiled, peeled, and placed into various pickling solutions and held for 24 or 48 hours at room temperature. After the holding period, eggs were removed from the solutions, weighed, and tested for pH, water activity, texture, and color. Heat-stabilized defatted rice bran (HDRB) is an abundant and inexpensive agro-industrial by-product of rice milling and rice oil extraction process. Furthermore, HDRB is a potential source of proteins. However, the direct protein extraction has low yield of protein due to the impact of heat stabilization and oil extraction process which made the HDRB proteins bound and interact with other components. This research is based on using solid-state fermentation (SSF), which is a natural and cost-effective approach to facilitate protein extraction from HDRB using Bacillus subtilis (natto) Takahashi as a microorganism.

Within the fields of psychology, notably cultural psychology, the analytic-holistic cognitive style theory has been introduced, developed, fine-tuned, and validated across a wide range of situations, stimuli, and populations. This research, combined with recent applications of the analytic-holistic theory, suggests that the differences in analytic or holistic tendencies of individuals in food, sensory, and consumer tests can impact food perception and associated behaviors. This dissertation aimed to investigate the impact of analytic-holistic cognitive styles of consumers in food situations. University dining halls are understudied food environments that affect student diet quality. This study (1) assessed dining hall offerings at the University of Rhode Island (URI) using the Partnership for a Healthier America’s Healthier Campus Initiative (PAHA) criteria for healthier campus food environments and (2) evaluated student perceptions of the dining hall through a campus-wide survey (n=165). We evaluated breakfast, lunch, and dinner using spring cycle menus (16 weeks in 2019 and 4 in 2021) from two full-service dining halls totaling 29 meals in 2019, and 84 meals in 2021 to determine adherence with PAHA criteria for availability of: 1) …

Food allergies have become a global epidemic, affecting over 10% of the general population and 8% of children worldwide. Eliminating or limiting a food group from the diet can have adverse effects on micronutrient consumption. Milk allergies, for instance, can influence the amount of calcium consumed in the diet, particularly when limiting or excluding milk/milk-containing products from the diet. As milk products tend to be a primary source of dietary calcium, a milk allergy can serve as a barrier to meeting daily calcium needs.

Haiti is a unique rice market in the sense that, despite the high poverty rates and dependency on rice as a staple, it relies on imports (80% of total consumption) of high-quality milled rice for which it pays a premium price. Haiti requires that all imported rice have a maximum of 4% broken kernels, which results in Haiti importing one of the most expensive non-fragrant long grain rice in the world. One of the Carbo Rock-It’s main features is that it does not add a significant volume of undissolved gas bubbles to the brite tank in which the beverage is carbonated. Orange peel (OP) is a major byproduct from orange juice production, and is a good source of fiber and flavonoids, particularly nobiletin. Nobiletin has been reported to exhibit pharmacological activities including anti-inflammation and antioxidation. Incorporating orange peel into food products would harness economic benefit of this industrial byproduct and support a sustainable food chain. This study was performed to evaluate consumer perception of gluten-free oat-based snack bars (GFOSBs) containing orange peel.

Prevention of the growth of harmful microorganisms in food products is an important requirement for ensuring food safety and quality. Mathematical models to predict the quantitative changes in microbial populations in food to the variations of environmental conditions are useful tools in this regard. Flavonoids are bioactive plant compounds that are widely present in the human diet. Estimating flavonoid intake with a high degree of certainty is challenging due to the inherent limitations of dietary questionnaires and food composition databases. From 2022, the European Union Waste Framework Directive (WFD) requires member states to report annual food waste from each food supply chain stage. Comprehensive food losses and waste (FLW) data can be challenging to obtain for the primary production stage, i.e., farming and fishing. However, this information is vital in developing FLW mitigation actions appropriate to each country. This study describes the nature and extent of FLW from primary production in Ireland, using methods approved for WFD reporting. In the United States, the tomato industry was worth $1 billion in 2020, and tomatoes are currently ranked second as the most consumed vegetable after potatoes. Sagebrush (Artemisia spp.) are dominant wild plants in large areas of the U.S., Canada and Mexico, and they include several species and subspecies. The aim was to determine if there are significant differences in essential oil (EO) yield, composition, and biological activity of sagebrush within the Bighorn Mountains, U.S. The EO yield in fresh herbage varied from 0.15 to 1.69% for all species, including 0.25–1.69% in A. tridentata var. vaseyana, 0.64–1.44% in A. tridentata var. tridentata, 1% in A. tridentata var. wyomingensis, 0.8–1.2% in A. longifolia, 0.8–1% in A. cana, and 0.16% in A. ludoviciana. In the literature, the majority of research efforts are dedicated to food recognition. Relatively few works are conducted for food counting and segmentation, which are essential for portion size estimation. The pasting properties of unripe plantain, unripe cooking banana, some selected cereals and their composite flours were investigated in relation to their food values. Each of the samples was cleaned, air–dried and pulverized to form the native flours which were mixed in different proportions to form the composite flours. Soft doughs were prepared from the flours and subjected to textural evaluation. The adjudged best from each set was analysed using Rapid Visco–Analyser followed by determination of their proximate composition and functional properties. This study evaluated the effects of roasting on jackfruit seeds (JFS) and amaranth grain composite complementary flours. Eleven formulations were used for the study. The moisture, crude protein, crude fat, crude fibre, crude ash and carbohydrate contents varied from 6.5 to 8.7%, 10.66 to 20.9%, 0.93 to 5.98%, 4.46 to 10.2%, 2.6 to 3.76% and 51.3 to 71.7%, respectively. The water absorption capacity (WAC), water solubility index (WSI), oil absorption capacity, swelling power (SP) and bulk density (BD) ranged from 238.9 to 360.5%, 3.9 to 12%, 107.4 to 200.6%, 13.3 to 45.9%, and 0.5 to 0.7 g/mL, respectively. The color of edible bird’s nest is associated with its nitrite concentration, but this relationship remains inconclusive. This investigation aimed to evaluate the nitrite content in edible bird’s nest of four different colors: white, yellow, orange, and red blood. Fifty-eight edible bird’s nest samples were obtained from five swiftlet farmhouses in Borneo Island, Indonesia and analyzed for nitrite content using Genesys 30 visible spectrophotometer. Results showed that the dark-colored edible bird’s nests (yellow, orange, and red blood) had higher nitrite concentrations of 304, 317, and 309 ppm, respectively, compared with the white-colored one (15 ppm). Some new cassava accessions have been developed and released because of their high yield, resistance to disease, adaptability to wider ecological environment, and less cost of production. However, their flour and starch properties have not been characterized for potential food applications. In the present study, starch and flour were produced from two new cassava accessions (Sika Bankye and Bankye Hemaa) and evaluated for their physicochemical and pasting properties. The flour samples recorded higher values for the various functional parameters compared to their starch counterparts. This study introduces a 3D food printing approach to fabricate spherical starch beads with small sizes and high porosity for the first time. The results illustrated that 3D food printing could generate starch beads in different sizes depending on the nozzle diameter, printing pressure, and ink viscosity. The 3D-printed beads were characterized for their morphology, crystallinity, and textural properties, while the starch-based ink was analyzed for its rheological properties. A suitable printing was attained when viscosity was in the range of 1000–1200 Pa.s at a low shear rate (˂0.1 s−1). Integrated quantitative descriptions of the transmission of β-lactam-resistant Escherichia coli (BR-EC) from commercial beef products to consumers are not available. Here, a quantitative microbial exposure assessment model was established to simulate the fate of BR-EC in a farm-to-fork continuum and provide an estimate of BR-EC exposure among beef consumers in the U.S. The model compared the per-serving exposures from the consumption of intact beef cuts, non-intact beef cuts, and ground beef. Based on the regulations of the Ministry of Health and Welfare (MOHW) of Taiwan in 2017, an analysis of 373 pesticides in food was conducted using the MOHW official method. The analyses involved the use of either liquid chromatography mass spectrometry (LC-MS) with electrospray ionization (ESI) or gas chromatography mass spectrometry (GC-MS) with electron ionization (EI). In this study, the applicability of detecting pesticides using atmospheric pressure chemical ionization (APCI) was investigated and evaluated.
