[Objective] To investigate the effects of deep frying process (DFP), microwave process (MP), and air frying process (AFP) on the quality and aroma characteristics of pre-fried coated tofu. [Methods] The optimal re-frying conditions are selected using slurry exudation rate, moisture content, color difference, and sensory evaluation as indicators. Subsequently, the re-frying method most suitable for consumers is comprehensively determined based on texture properties, oil content, malondialdehyde content, electronic nose analysis, and volatile compound composition. [Objective] To study the preservation effect of ozone on fresh peanuts.[Methods] "Four Red" fresh peanuts were used as experimental materials. Peanuts were treated with ozone at different concentrations (10,30,and 50 mg/L ) and stored at (4 ± 1) ℃ for 15 days. Edible quality, nutritional quality, and safety quality were measured every 3 days.[Results] The effects of ozone treatment on the post-harvest storage quality of fresh peanuts varied with concentration. Compared with the control group, medium-to-low concentration ozone treatment (≤30 mg/L ) effectively reduced peanut mass loss, inhibited mold development and microbial growth, maintained stable kernel color and good texture, …

Climate change threatens the global supply of malting barley, creating a need for sustainable, climate-resilient alternative grains for the brewing industries. This dissertation investigated the chemical, sensorial, practical, and economic viability of using rice as a malting material. First, the malting and brewing qualities of 20 rice samples were evaluated. Results indicated malted rice (MR) had good malting and brewing qualities, including adequate levels of free amino nitrogen (FAN), high amyloglucosidase and limit dextrinase activities. Roses are known as a high-value commodity frequently used in various important events. However, they are susceptible to postharvest quality deterioration, which can affect their vase life and appearance. Abstract The poultry industry has implemented numerous methods, as marination and aging, to improve meat quality and satisfy consumer demands. Three experiments were developed to assess the effects of vacuum tumble marination and aging on the proteins of chicken breast. These experiments utilized 0.75 % sodium chloride, 0.45 % phosphate, and water in a marinade. In experiment one, 270 fillets were allocated into six treatment groups, each comprising 45 fillets. Unexpected pH changes often lead to a rubbery texture, off flavor and poor taste in commercially produced Cheddar, negatively affecting the quality of the cheese. Use of fast-acid producing (thermophilic) starter cultures in cheese manufacture is becoming common.
Our goal was to discover the cause(s) for this pH variation. Knowing what causes pH changes will save Utah cheese manufacturers’ money, allowing them to pass the savings on to consumers and reduce waste. We posit that excessive use of fast acid producing thermophilic bacteria (S. thermophilus) can be the cause for pH variation.

The highly perishable nature of Rubus berries, particularly their susceptibility to water loss and earlier senescence, significantly limits their shelf life. In this study, we investigated the mechanistic role of modified atmosphere packaging (MAP) on the physiochemical quality, phenolic metabolism, and antioxidant potential of blackberries and raspberries during cold storage (2 ± 1 °C) for 12 and 10 days, respectively. Modified atmosphere (MA)-packed Rubus berries exhibited higher total phenolics accompanied by higher activities of shikimate dehydrogenase, and phenylalanine ammonia-lyase. Furthermore, MA-packed Rubus berries demonstrated lower hydrogen peroxide by maintaining higher catalase activity and delayed lipid peroxidation during the entire period …

[Objective] This study aimed to investigate the effects of two pre-freezing methods (vacuum freezing and atmospheric pressure freezing) and two dipping methods (sucrose impregnation before pre-freezing and sucrose impregnation during freeze-drying) on the quality of freeze-dried apple slices. Because of high moisture content, blueberries are susceptible to disease and insect infestation leading to corruption and deterioration, which has serious influence on the shelf life of blueberry fruits. This article summarizes the cause mechanism of postharvest quality deterioration of blueberry fruits and the research progress of blueberry preservation technology at home and abroad, mainly including physical, chemical and biological preservation methods; and emphasizes the application of biological methods in the postharvest preservation of blueberries.

Objective: This study aimed to evaluate the effects of selenium-enriched yeast on the quality of coix seed jiulao. Methods: The coix seed was used as raw material, which was inoculated with selenium-rich saccharomyces cerevisiae to prepare coix seed jiulao. The changes of physicochemical properties, plant active components and in vitro antioxidant activity were measured during the fermentation of jiulao. Results: Compared with the S. cerevisiae group, the selenium-enriched S. cerevisiae group enhanced the improvement rate of alcohol content. Currently, vegetable oil is extracted by pressing method, solvent leaching method and aqueous enzymatic method. The aqueous enzymatic method has the advantages of high oil extraction rate, simple process and good oil quality compared with the pressing method and solvent leaching method. It also reduces the environmental pollution and improves the economic benefits. The review summarized the principle, process flow, characteristics, types of commonly used enzyme preparation, demulsification and vegetable oil quality of vegetable oil production by aqueous enzyme method, and the development trend of vegetable oil preparation by aqueous enzymatic method was prospected.

Objective: This study aimed to explore a new method to improve the blueberry quality during the preservation. Methods: Blueberries were stored at 4 ℃ for 7 days in 0, 3, 6 and 10 mT static magnetic fields respectively. Meanwhile, the apparent morphology, weight loss rate, decay rate, content of anthocyanidin and total phenol cell membrane permeability, superoxide dismutase activity and content of malondialdehyde of blueberries were analyzed. Objective: This study aimed to investigate the changes in quality and flavor of semi-dried gold pomfret during the thawing process of logistics transportation. Methods: The logistics transportation process of frozen semi-dried gold pomfret was simulated at different temperatures. The thawing-loss rate, changes in myofibrillar protein conformation, physical and chemical indexes of protein, lipid oxidation and changes in flavor substances were determined. Results: The protein and lipid oxidation degrees of pomfret were significantly increased with the extension of transport time (P<0.05). Methods: The coix bran was used as raw material; the effects of solid-liquid ratio, the amount of amylase and alcalase on the extraction rate were analyzed by usingorthogonal experiments. Objective: This study aimed to improve the drying efficiency and product quality of preserved apricot. Methods: The preserved apricots were dried using the rotary microwave oven (RMD) and the microwave coupled with convection dryer (MCD). The effect of microwave power, microwave emission mode, cutting and material movement on drying characteristics, the scorching rate, color and sensory quality were investigated and compared with traditional hot air drying (HD). Frozen dough is widely used in the food industry. But there are several problems arising such as: the deterioration of dough and the reduction of fermentation activity properties during frozen storage. Frozen dough improvers are important way to solve these problems. Currently, the commonly used improvers are polysaccharides, emulsifiers, proteins and others. This paper summarizes the main problems and influencing factors in the application of frozen dough, and the mechanism and application of different improvers on the quality of frozen dough were reviewed. The paper also prospects the research and development trend of improvers.

Objective: This study aimed to explore the feasibility of low-frequency electric field assisted controlled freezing-point storage (CFPS) technology improving the quality of shrimp. Methods: Low-frequency electric field was applied on the basis of controlled freezing-point storage (LFEF+CFPS) to preserve prawns, and the contents of malondialdehyde and salt soluble protein, as well as the changes of Ca2+-ATPase activity, pH value, shear force, color difference and protein molecular weight of prawns were monitored. Objective: This study aimed to investigate the quality changes during the fermentation of sauerkraut without salt and inoculated with lactic acid bacteria and during low-temperature storage. Methods: The basic physicochemical indexes and quality changes of sauerkraut during fermentation were analyzed. Results: The unsalted sauerkraut reached maturity at 5 d of fermentation and the pH, nitrite content, reducing sugar content and vitamin C content decreased significantly (P<0.05) during the fermentation process. This included a decrease in vitamin C of up to 88.62% and a significant increase in total and overall organic acid levels (P<0.05). At fermentation maturity, the nitrite content was extremely low at (0.23±0.10) mg/kg; The organic acids were mainly lactic, oxalic and acetic acids and succinic acid. Except for succinic acid, other organic acids and other organic acids, such as oxalic and citric acids, increased after fermentation, and the lactic acid content increased by 26.5 times. Conclusion: The fermentation process effectively improved the sour and umami taste of the sauerkraut without salt, and ensured the excellent sensory quality. The storage performance was good at 4 ℃, and the storage period was 60 days.
