This study aimed to investigate the effects of dry-aging and salt block utilization during dry aging on pork loin quality attributes. Pork loins were collected at 7 days postmortem, cut into three equal sections, and randomly assigned to wet aging (WA), traditional dry-aging (DA), and salt block dry-aging (SDA) groups to be aged for 28 days. During the dry-aging period, SDA cabinet exhibited lower humidity fluctuation (Avg. 71.52, St. Dev. 4.7) compared to DA cabinet (Avg 70.76, St. Dev. 7.9). Following the aging period, no differences were found in pH or Warner Bratzler shear force values between treatments (P>0.05). …

Protein is a priority nutrient in the American diet, being fueled by the demands of weight loss drugs, diet culture, and new dietary guidelines. However, meeting these elevated protein goals sustainably requires diversifying beyond standard sources like whey protein isolate. 3D printing offers an opportunity to present a variety of protein sources in a palatable, customized, and consumer-acceptable format. In this study, 3 protein sources (cricket, whey, and pea), were optimized within food inks for 3D printing. Human norovirus (HuNoV) is the leading cause of acute gastroenteritis worldwide; however, the lack of robust laboratory culture systems and reliable animal models has limited progress in understanding viral replication and developing effective intervention strategies. While alternative models such as the zebrafish system have been explored, gaps remain in evaluating their ability to support replication across diverse HuNoV strains and in identifying factors that influence infectivity. Climate change threatens the global supply of malting barley, creating a need for sustainable, climate-resilient alternative grains for the brewing industries. This dissertation investigated the chemical, sensorial, practical, and economic viability of using rice as a malting material. First, the malting and brewing qualities of 20 rice samples were evaluated. Results indicated malted rice (MR) had good malting and brewing qualities, including adequate levels of free amino nitrogen (FAN), high amyloglucosidase and limit dextrinase activities. Inconsistent quality grading in beef production leads to inefficiencies, economic disparity, and consumer mistrust. While USDA meat grading traditionally relies on skilled visual inspectors, these human evaluations suffer from cross-facility variability and subjectivity. This paper introduces the first known application of unsupervised domain adaptation regression for cross-facility beef marbling score prediction—an innovation that improves generalization across diverse environments in the beef supply chain. Utilizing numerical scores ranging from 100-900, the research employed convolutional neural networks (CNNs), including ResNet, VGG, and AlexNet architectures. This study explored the 3D printability and digestibility of pea and sorghum protein gels as novel plant-based bioinks. First, 25 % sorghum protein gel (SPG25) and 15–25 % pea protein gels were prepared, and the effect of extruders’ nozzle size on printability was evaluated. Samples produced at the optimized conditions were then used for analyzing particle size, microstructure, secondary structure, and in vitro digestibility. Pea protein gel at 20 % (w/w) (PPG20) and SPG25 showed ideal rheological properties, including shear-thinning behavior and rapid recovery. This study investigated the optimization and fabrication of soy protein isolate (SPI)-green microalga (MA) 3D-printed films. For optimizing 3D printing, the effects of MA concentration, nozzle size (0.52-0.81 mm), and speed (10-20 mm/s) were examined. The printed films were then dried, and color, mechanical properties, water vapor permeability, structure, and antioxidant activity were analyzed. All the formulations showed shear-thinning behavior and rapid recovery. The concentration of 3 % MA, nozzle size of 0.72 mm, and printing speed of 20 mm/s were selected as the optimized conditions for the best 3D printability. The influence of substituting barley malt with milled rice on the sensory and chemical characteristics of nonalcoholic beers (NAB) was investigated. Physicochemical and volatile analyses were conducted on the NABs. Original gravities ranged from 6.71% w/w (100% barley malt) to 7.15% w/w (100% rice), with alcohol contents between 0.33% v/v (70% barley/30 %rice) and 0.45 % v/v (100% rice). Color decreased from 10.8 EBC (100% barley malt) to 3.3 EBC (100% rice). Color and fluorescence spectrometry were evaluated as rapid, objective tools for verifying the cleanliness of poultry-processing food-contacting surfaces contaminated with a model chicken solution across six common materials. Both techniques detected chicken residues at dilutions several orders of magnitude below human visual and olfactory thresholds, with stainless steel and blue plastic yielding the largest color differences between clean and contaminated states and fluorescence measurements remaining highly sensitive on all tested surfaces. Representative limits of detection were on the order of 1:50-1:100 dilution of chicken residue for color measurements on most surfaces and approximately 1:50 for fluorescence measurements, compared with human …

Chickpea proteins offer significant nutritional and functional benefits in food products; however, their utilization is often restricted by off-flavors, primarily for lipoxygenase (LOX) and lipase activity. This study aims to develop a novel extraction method by combining acid (pH 2.0) extraction with the conventional alkali (pH 9.0) method to inactivate enzymes and enhance protein quality. Acid-extracted proteins exhibit the highest purity (83.4%), albumin content, and structural flexibility (46.65% random coil). Both acid and sequential acid-alkali-extracted proteins significantly reduced LOX (0.75 and 0.88 U/g) and lipase (0.10 and 0.08 U/g) activity. Microgreens are increasingly popular among consumers due to their high nutritional value. However, their limited shelf-life remains a significant challenge. To extend their usability, small-scale growers increasingly apply home preservation methods like warm air drying or freeze-drying. However, the effects of these methods on common foodborne pathogens are not well understood. Listeria monocytogenes remains a significant food safety concern in ready-to-eat (RTE) meat and poultry products due to its persistence under refrigerated and stressed conditions. Predictive models play a vital role in risk assessment and food safety management; broth models are highly conservation & results in overprocessing. While ultrasound-assisted protein extraction is well-studied, the application of ultrasound in both the extraction and precipitation stages has not been explored. This study explored the ultrasound (U)-assisted alkaline extraction (AE) at pH 9.5 and ultrasound-assisted isoelectric precipitation (UIP) at pH 3.5 on the rice bran protein yield, functionality, and nutritional quality. The UAE and conventional precipitation (UAE-IP) yielded the highest protein yield of 65.7 %, while conventional extraction yielded 38.9 %. FTIR showed that UAE-IP increased beta-sheets by 96.8 % while AE-UIP decreased the alpha-helices by 42.4 %. Red lentils are protein-rich sources that are highly regarded in the plant-based food industry for their color. Appropriate drying methods are essential for maintaining the physicochemical and nutritional properties of the proteins. This study investigates the impact of three drying methods, namely oven drying, freeze-drying, and supercritical carbon dioxide (SC-CO₂) drying, on the physicochemical and functional properties of red lentil proteins (RLP). SC-CO₂ drying was optimized at varying temperatures (35–55 °C), pressures (10–20 MPa), and CO₂ flow rates (2–3 L/min), with optimal drying observed at 55 °C, 20 MPa, and 3 L/min, resulting in significantly reduced moisture content (5.7 %). …

While plasma has been used for decades for the surface modification of packaging films, in this study, rice bran (RB) and rice bran protein (RBP) films were developed using plasma-activated water (PAW), and the chemical composition, surface structure modifications, surface properties, and thermal properties of these films were characterized. Fourier-transform infrared spectroscopy (FTIR) of the bran and protein films showed that the reactive species in PAW improved hydrogen bonding, as evidenced by the increase in the O-H stretching band at 3300 cm-1 and reduced peak intensity at 2940-2925 cm-1 (C-H stretching), suggesting oxidation of the aliphatic side chains. The meat industry faces significant economic losses and environmental impacts due to spoilage and waste, much of which results from inadequate, delayed, or inefficient quality assessment. The goal of this study was to introduce the simultaneous use of hydrophobic-hydrophilic proteins bioinks for 3D food printing. Sorghum protein gel (SPG) at 25 % w/w and soy protein isolate gel (SPIG) at 11 % w/w were loaded into separate extruders. The effects of the first printed layer (SPG or SPIG), printing speed (10, 20 mm/s), and nozzle size (0.52, 0.64, 0.72 mm) on printability were evaluated. As a widely used spice, turmeric is rich in curcuminoids, which are known for their anti-inflammatory and antioxidant properties. However, the drying process, especially at high temperatures, often leads to significant curcumin degradation, impacting its bioactivity and quality. This study investigates drying turmeric using an innovative approach based on supercritical carbon dioxide (SC-CO2), and conventional drying methods (oven drying and freeze-drying) in terms of curcuminoid retention, color, solubility, chemical interactions, crystallinity, and morphology. The results revealed that SC-CO2 drying preserved up to 82.3 mu g curcuminoids /mg dried turmeric, which was significantly higher than the levels retained by oven drying …

The recent demand for plant-based dairy alternatives has increased the focus on improving the organoleptic, and nutritional attributes of plant cheeses to match their dairy counterparts. This study aimed to develop a functional cheese using the synergistic interactions of rice glutelin and chickpea proteins to enhance both nutritional and textural properties. Functional characterization revealed that rice glutelin exhibited a higher water-holding capacity of 340 % and elevated solubility, while chickpea protein showed a superior oil-holding capacity of 550 % and higher surface hydrophobicity. Strawberries deteriorate rapidly under warm, humid conditions, and to make things worse, in many tropical settings refrigerated logistics are limited. Edible biopolymer coatings offer a low-cost method to slow quality loss, but multicomponent formulations behave nonlinearly. In this study, ten types of coatings were developed and evaluated for their effects on the physicochemical (weight loss, firmness, total soluble solids (TSS), pH, color change (Delta E)) and biochemical properties (total phenolic content (TPC), antioxidant property (DPPH) of strawberries over a 6-day storage period at 25 degrees C (298.15K). Effective environmental monitoring is critical for preventing microbial and allergenic cross-contamination. However, manual swabbing methods, commonly used to verify hygienic conditions, are prone to inconsistent results because of variability in pressure, coverage, and techniques. Two novel solutions will be explored to address these challenges: a robotic swabbing system with tactile sensing control, and a fluorescence/absorbance spectrometer for non-contact, protein-based residue detection. The robotic system was evaluated against trained and untrained humans, measuring water pickup, surface coverage, and pressure consistency. Surface sampling devices ranging in material composition and size can be used in environmental monitoring programs. This study aimed to compare the bacterial recovery efficiency of surface samplers on stainless steel (SS) and polypropylene (PP) surfaces. Separate cocktails of Listeria monocytogenes and Salmonella enterica strains were spot inoculated (1 mL; 40 spots x 25 mu L) on SS and PP surfaces at high (7 log) and low (4 log) concentrations. Upcycling, or utilizing materials that would otherwise go to waste, enables the creation of novel products that offer sustainability advantages and generate additional value. This study evaluates the feasibility of producing alcoholic beverages using yogurt acid whey (YAW) and grape pomace (GP), byproducts of the dairy and wine industries, respectively, and compares them to commercial grape pomace beverages (piquettes) in terms of sensory attributes and chemical composition. Two YAW-GP piquettes were produced, and five commercial piquettes were obtained. Biopolymers and water-soluble nontoxic synthetic polymer composites using silver nanoparticles are astute approaches for antibacterial film fabrication. Moreover, surface treatment of the biopolymeric composite film by cold plasma can enhance the biocidal activity. Silver nanoparticles were synthesized by using the reduction method. Films were fabricated with different ratios of rice starch and polyvinylpyrrolidones (PVP) (1:0, 1:1, and 3:1), with and without silver (Ag) nanoparticles. Abstract The poultry industry has implemented numerous methods, as marination and aging, to improve meat quality and satisfy consumer demands. Three experiments were developed to assess the effects of vacuum tumble marination and aging on the proteins of chicken breast. These experiments utilized 0.75 % sodium chloride, 0.45 % phosphate, and water in a marinade. In experiment one, 270 fillets were allocated into six treatment groups, each comprising 45 fillets.
