Applying Hermetic Storage And Multiple Abiotic-Stressed Germinations To Actuate Desirable Effects In Wheat Phytochemistry, Food, And Biological Functionalities, Bababode Kehinde
Theses and Dissertations--Biosystems and Agricultural Engineering
Wheat is one of the most widely consumed staple foods in the world, supplying both nutritional and caloric requirements for billions of people. The rising global population and increased food demand behooves all stakeholders across the wheat supply chain to significantly increase their output and efficiency. Beyond the target for increased farm yields, dietary, nutritional, and health requirements along with their continuous supply must be satisfied with improved storage and processing schemes. Post-harvest changes in wheat can result in a significant reduction in its quality. Such losses could be qualitative and/or quantitative, impacting its physical, physiological, organoleptic, and nutritional attributes. …

Validation Of A Diagnostic Marker For Primocane-Fruiting In Blackberry, Isabella Vaughn, Alexander Silva, Carmen Johns, Lacy Nelson, Margaret Worthington
Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences
Typical blackberries (Rubus subgenus Rubus) have perennial crowns and roots and biennial canes. The first-year canes (primocanes) are usually vegetative, while second-year canes (floricanes) produce fruit. Primocane-fruiting blackberries produce fruit on first-year canes and are desirable to growers because they potentially allow for a longer harvest season in temperate regions and enable production in tropical areas where no natural chill hours are accumulated. The development of molecular markers for desirable traits can potentially increase efficiency in blackberry breeding. However, to date, there are no diagnostic molecular markers for economically important traits in blackberries. Primocane-fruiting is recessively inherited, and tetraploid blackberries …

Accurate identification of fishes is essential for understanding their biology and to ensure food safety for consumers. DNA barcoding is an important tool because it can verify identifications of both whole and processed fishes that have had key morphological characters removed (e.g., filets, fish meal); however, DNA reference libraries are incomplete, and public repositories for sequence data contain incorrectly identified sequences. During a nine-year sampling program in the Philippines, a global biodiversity hotspot for marine fishes, we developed a verified reference library of cytochrome c oxidase subunit I (COI) sequences for 2,525 specimens representing 984 species. Specimens were primarily purchased …

Bilirubin levels in obese humans and rodents have been shown to be lower than in their lean counterparts. Some studies have proposed that the glucuronyl UGT1A1 enzyme that clears bilirubin from the blood increases in the liver with obesity. UGT1A1 clearance of bilirubin allows more conjugated bilirubin to enter the intestine, where it is catabolized into urobilin, which can be then absorbed via the hepatic portal vein. We hypothesized that when bilirubin levels are decreased, the urobilin increases in the plasma of obese humans, as compared to lean humans. To test this, we measured plasma levels of bilirubin and urobilin, …

Department of Food Science and Technology: Faculty Publications
Plant-based proteins, in particular pulse proteins, have grown in popularity worldwide. Germination, or sprouting, is an effective method to release peptides and other dietary compounds. However, the combination of germination and gastrointestinal digestion in enhancing the release of dietary compounds with potential health-beneficial biological activity has yet to be entirely elucidated. The present study illustrates the impact of germination and gastrointestinal digestion on the release of dietary compounds with antioxidant activity from chickpeas (Cicer arietinum L.). Germination up to 3 days (D0 to D3) increased the peptide content by denaturing chickpea storage proteins and increased the degree of hydrolysis …

Department of Food Science and Technology: Faculty Publications
Peanut allergen Ara h 6 is known to maintain IgE‐binding capacity upon exposure to digestive enzymes1 and its presence in circulation after consumption of peanut has been demonstrated.2,3 Therefore, it has been speculated that food‐derived allergens could be transferred via blood transfusion products, causing an allergic reaction in food-allergic recipients.4,5 However, in published case reports, presence of food allergen in donated material could not be confirmed due to lack of remaining transfusion material and/or lack of sensitive analytical methods. Using a newly developed sensitive immune‐assay for detecting Ara h 6 in human serum, we now report to what extent consumed …

Evaluation Of Micro-Dwarf Tomato Cultivars For Controlled Environment Research, Noah Langenfeld, Bruce Bugbee
Dwarf Crops
Controlled environment research on tomato (Solanum lycopersicum) is often hindered by large plant size. Desired cultivar traits for research include a compact plant size, fast flowering time, and good fruit set. We grew eight micro-dwarf tomato cultivars to examine their suitability as model plants for research. The cultivar ‘Rejina Red’ had the highest harvest index and most ripe fruits among the red-fruited cultivars; ‘Jochalos’ had the highest harvest index and most ripe fruits among the yellow-fruited cultivars. ‘Microtina’ had a higher harvest index than ‘Rosy Finch’, but fruits were smaller, and growth was less determinate. ‘Monetka’ had a …

Graduate Theses, Dissertations, and Problem Reports (ETD)
Background: Recent foodborne illness outbreaks have been linked to fresh fruits and vegetables. For public safety, awareness of the risks of contamination from foodborne pathogens that can occur during post-harvest farming practices is essential to prevent foodborne outbreaks. Controlling the spread of foodborne pathogens on produce requires proper washing procedures, antimicrobials and doses. Given the speed and diversity of the produce being distributed, local incidents may become international emergencies. Methods: Studies were included if they assessed the efficacy of antimicrobials and various washing procedures and had to conclude the mitigation of cross-contamination of foodborne pathogens on produce grown in the …
