Antarctic krill (Euphausiacea superba) is an abundant and sustainable but underutilized natural resource with well-studied protein isolation methodology using Isoelectric solubilization-precipitation (ISP). The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). Ethylene is a key trigger that governs the rate of fruit ripening, storability, and postharvest quality of fresh fruit. Efficient inhibition of ethylene action is essential to slow down the postharvest ripening processes, extend storage life and maintain optimum fruit quality during storage. Ethylene antagonist compounds with the likelihood of application as liquid formulation would facilitate managing ethylene broadly as both preharvest and/or postharvest treatments. The Obese strain (OS) of chickens spontaneously develops autoimmune thyroiditis (SAT) and is a well-established biomedical model for Hashimoto’s thyroiditis in humans. Both conditions are characterized by the infiltration of thyroid glands with mononuclear immune cells resulting in the destruction of thyroid tissue and impairment of the thyroid’s endocrinological functions. Blackberries and raspberries, commonly known as Rubus berries, are commercially grown worldwide across different climates. Rubus berries contain wide array of phytochemicals, vitamins, dietary fibers, minerals, and unsaturated fatty acids. Nevertheless, these berries have short storage life which is the major constraint in their supply chains leading to higher postharvest losses. Current tools scoring the healthiness of food retail outlets do not reflect outlets found in rural locations. This study aimed to adapt pre-existing Australian scoring tools to represent non-metropolitan areas. Rural nutrition experts were identified, and a modified Delphi technique was used to adapt two pre-existing, food-scoring tools in five iterative stages. Stages included identifying all relevant outlets, providing a description and score for each, ensuring consistency between outlet scores and pre-existing, metro-centric tools, and providing instructions for correct use. Lacprodan PL20, a dairy ingredient that is rich in protein and polar lipids, was added into set yoghurts produced from nonhomogenized raw milk. The set yoghurts were prepared using concentrations of 2%, 4%, and 6% Lacprodan PL20, while the control sample was only supplemented with skim milk powder. The effect of Lacprodan PL20 concentrations on the physical and chemical properties, rheology, and microstructure of set yoghurt was thoroughly investigated to determine some likely improvement or changes in quality. A massive amount of crustaceans and bivalves are consumed each year, leading to millions of tons of processing side streams from the seafood industry. Considering the current trend of (bio)circular and zero-waste food production, crustacean and bivalve processing side streams (CBPS) seem a promising and emerging resource for producing high-value-added products. This paper investigates a novel biorefinery process designed for the extraction of valuable compounds from brown seaweed Alaria esculenta using hydrodynamic cavitation (HDC). A two-stage process was developed to maximize the value of seaweed biomass by control of the processing time, solvent selection and HDC conditions to extract laminarin, alginate, mannitol and protein in a cascading manner, maximizing the value of seaweed biomass. After the first extraction stage using 0.1 M HCl, membrane ultrafiltration was employed to separate laminarin and mannitol. Wastewater-recovered phosphorus (P), in the form of the mineral struvite (MgNH4PO4∙6H2O), may provide a sustainable alternative to decreasing rock-phosphate reserves. Struvite can be generated via precipitation methods, potentially reducing the amount of P runoff to aquatic ecosystems. The paper presents a 3 tank thermal energy storage system. The system consists of cold oil reservoir, heat storage tank, and a residual drainage tank. Cold oil flows by gravity into a heating chamber and after being heated to the required temperature, a mechanical thermostat opens allowing the hot oil to flow into a heat storage tank. The storage tank was discharged through the cooking unit by boiling 0.5 litres of water. The used oil flowed by gravity to the drainage tank. Determination Of Sugars, Amino Acids, Ph And Alcohol In Bamboo Beverage From Southern Highlands, Tanzania, Lilian D Kaale

The amounts of sugars and amino acids play significant roles in defining the fermentation process and quantifying the alcohol levels in beverages, while pH affects the biological stability, colour, oxidation rate, and protein stability of alcoholic beverages. This study investigated the sugar content, amino acids, alcohol levels, and pH of bamboo beverage from Tanzania's southern highlands. During storage, the sugars significantly decreased (p < 0.05), especially when kept at room temperature from 52.96 to 0.00 (source 1), 53.35 to 0.00 (source 2) and 53.57 to 0.00 (source 3) g/L for fructose, from 47.93 to 14.78 (source 1), 47.23 to 14.91 (source 2) and 47.61 to 14.77 (source 3) g/L for glucose, and from 0.40 to 0.00 (source 1), 0.36 to 0.00 (source 2) and 0.37 to 0.00 (source 3) g/L for sucrose after six days of storage. A total of 15 amino acids were determined from the bamboo beverage with tyrosine being the most prevalent (597.68 mg/L for source 1, 599.44 mg/L for source 2 and 597.83 mg/L for source 3), followed by valine (261.13 mg/L for source 1, 261.24 mg/L for source 2 and 262.54 mg/L for source 3), threonine (76.69 mg/L for source 1, 76.91 mg/L for source 2 and 77.13 mg/L for source 3), and serine (66.37 mg/L for source 1, 67.23 mg/L for source 2 and 66.68 mg/L for source 3). After six days of storage at room temperature, there was a significant decrease in pH from 4.04 to 3.63. Alcohol content ranged from 3.11 to 9.05% v/v at the room temperature storage. These results might facilitate the optimal use of bamboo beverages, which have been neglected due to lack of scientific information such as amino acid and sugar levels. The goal of our present study is to assess the pharmacological potential of essential oil extracted from Spartium junceum cultivated in Lebanon. This oil was obtained by hydrodistillation using the Clevenger apparatus. Then, an organoleptic characterization and an evaluation of its antioxidant, repellent/insecticidal, and antibacterial activities have been evaluated. The obtained results showed that this oil had an antioxidant activity reaching 82 % dependent on the dilution used. In addition, it showed an insecticidal effect and an antibacterial effect.

Sunflower seeds contain a high concentration of chlorogenic acid (CGA), which reacts with amino acids to form green pigments under alkaline conditions during food processing. Here, we present two approaches to prevent green pigment formation in sunflower cookies by (A) Addition of free thiols from cysteine and glutathione to sunflower cookie dough and (B) hydrolyzing CGA into caffeic acid and quinic acid with a CGA esterase from Lactobacillus helveticus. Methods: Extracted samples were purified by QuEhERS pretreatment technology, and 57 kinds of illegal addition of drugs were separated by Waters BEH C18 column.
