Sources Of Volatile Aromatic Congeners In Whiskey, Thomas J. Kelly, Christine O'Connor, Kieran N. Kilcawley Jan 2023

Sources Of Volatile Aromatic Congeners In Whiskey, Thomas J. Kelly, Christine O'Connor, Kieran N. Kilcawley

Articles

Whiskey’s complex and diverse flavor stems from a range of reactions that create congeners that are primarily dependent upon the cereal source/mash bill and each stage of the process: malting, mashing, fermentation, distillation, and cask maturation. Therefore, in theory, the congener profile of a whiskey is a summation of its ingredients and the specific parameters of each stage of the manufacturing process. Congener profiles have been used as biomarkers for quality and authentication; however, to date, insufficient information has been published in relation to the extensive profiling of congeners associated with specific whiskey styles/types or the intra-and inter-variability within brands, …

Department of Nutrition and Food Studies Scholarship and Creative Works

For HIV-positive African Americans, the mistrust of medical providers due to anticipation of unequal treatment care, prejudice, and bias can become a major deterrent to medication and treatment adherence. Although programs and services incorporate strategies to improve patient–provider relationships, a deeper understanding of their healthcare experiences, especially among those with a dual diagnosis of HIV/AIDS and a nutrition-related chronic disease, is lacking. This qualitative study aimed to address this gap by conducting focus groups with participants who identified themselves as being African American, and having a dual diagnosis of HIV/AIDS, and a chronic disease. Content analysis generated several major themes, …

High Order Structures Formed By The Natural Aromatic Amino Acids, Gabriel Alexander Kupovics, Zeina Alraawi Jan 2023

High Order Structures Formed By The Natural Aromatic Amino Acids, Gabriel Alexander Kupovics, Zeina Alraawi

Inquiry: The University of Arkansas Undergraduate Research Journal

Excessive concentrations of the natural aromatic amino acids phenylalanine and tyrosine are characteristic of the severe genetic abnormalities known as phenylketonuria (PKU) and tyrosinemia, respectively. Within this context, this feature article authenticates claims that tryptophan can form amyloid-like supramolecular structures in vitro and is the first to propose potential mechanisms of tryptophan self-assembly, including hydrophobic and electrostatic interactions. Thioflavin T (ThT) fluorescence kinetics and transmission electron microscopy (TEM) data suggest the formation of amyloid-like fibrillar structures by natural aromatic amino acids in vitro. Additionally, the propensity of amino acid aggregation increases in the presence of sodium dodecyl sulfate (SDS). The …

The Use Of Membrane Filtration To Increase Native Whey Protein In Infant Formula, And Effects On Bioaccessibility And Bioactivity, Yihong Chen

Theses

Breastfeeding is recognised as the gold standard for feeding newborns and infants. However, infants who cannot be breast-fed or for whom breast milk is not available, can be fed with bovine infant milk formula (IMF) as a substitute. Researchers and producers of IMF strive to continually improve or “humanise” the composition and functionality of IMF. During production of IMF it must undergo several heat treatment steps, e.g. heat-sterilisation or spray-drying, in order to provide a safe product to the infant. These heat treatments denature the globular whey proteins in IMF. In contrast, breast milk is by its nature unheated, so …

Articles

This paper explores the consequences of food production failure (FPF) and its handling in foodservice operations from the perspective of chefs. A phenomenological epistemology and qualitative methodology were followed. Fifteen semi-structured interviews with chefs working in independent restaurants and hotels were carried out using purposive sampling, and employing an emic posture. Interviews were transcribed verbatim, read repetitively, and coded. Thematic analysis yielded themes on the consequences of FPF, on operation and staff, handling failures with kitchen staff, front of the house (FOH), and management. The findings revealed that the major ramification of FPF is financial through food loss. Representing both …

Comparing Biofilm Forming Potential Of Listeria Species On Non-Food And Food-Contact Surfaces Of Importance To The Dairy Industry, Hannah Cooper Jan 2023

Comparing Biofilm Forming Potential Of Listeria Species On Non-Food And Food-Contact Surfaces Of Importance To The Dairy Industry, Hannah Cooper

The Journal of Undergraduate Research

Listeria monocytogenes (Lm) is a foodborne pathogen of major safety concerns. This bacterium can resist/adapt to environmental stressors and persist through forming robust biofilms despite dairy plants following stringent surface cleaning protocols. Surface roughness is considered a major factor controlling bacterial attachment and biofilm formation. Food contact surfaces like stainless steel (SS) have low surface roughness for easy cleaning. On the other hand, non-contact surfaces like floors need a rougher surface to ensure employee safety. Hence, we hypothesized that Listeria biofilm formation would be lower on stainless steel compared to clay brick (CB; common flooring material in dairy plants). …

Extraction, Characterization, And Utilization Of Yellow Pea Starch, Abdulmalik Albu Tuwaybah

Electronic Theses and Dissertations

Dry peas, a leguminous crop, are one of the world's oldest crops, accounting for 35–40% of total pulse trade. Pea starch is an inexpensive source of starch since it can be obtained as a by-product of protein extraction. Recovering the starch from protein isolation streams (i.e., before or after) improves the environmental impact of the protein isolation process. The goal of the study was to transform low-value pea starch into highvalue starch through starch extraction and food application. Two methods of starch extraction were used (47.5% ethanol treatment and SC CO2 + EtOH extraction). Starch samples were analyzed for chemical, …

Plant Cell Wall Composition And In Vitro Fermentation Characteristics Of Cool-Season Forage Grasses From Two Growing Seasons In Central Kentucky, Sophia Danielle Newhuis

Theses and Dissertations--Animal and Food Sciences

Grass cell walls are rich in cellulose, hemicellulosic arabinoxylan (AX) polysaccharides, and lignin. AX structural differences such as degree and pattern of branching and the ester-linked phenolic acid content could affect plants’ digestibility when used as forage for livestock. However, there is little information about how these structural elements change over the growing season in the vegetative tissue of cool-season perennial grasses. Enhanced information about the cell wall composition and carbohydrate structure of forage material will provide a foundation for expanding our knowledge of how forage cell wall carbohydrate structures are utilized by ruminants. The objectives of this study were …

Profiling The Cell Wall Polysaccharides Of Hemp (Cannabis Sativa L.) Inflorescence And Hempseed And Exploring Their Application As Ruminant Feed Ingredients, Miranda Agbana Jan 2023

Profiling The Cell Wall Polysaccharides Of Hemp (Cannabis Sativa L.) Inflorescence And Hempseed And Exploring Their Application As Ruminant Feed Ingredients, Miranda Agbana

Theses and Dissertations--Animal and Food Sciences

Hemp (Cannabis sativa L.) is used in the United States as a source of CBD oil, fiber, and grain. While hempseeds are consumed whole or as dehulled hemp hearts, hempseed oil is also a desirable seed oil in human nutrition. The process of collecting hempseed oil leaves behind hempseed cakes that are abundant in protein and fiber. Feeding of hempseed cakes to animals, including ruminants, has only initially been explored. Extraction of CBD from hemp inflorescences generates organic waste that may find a second purpose as a fiber feed for cattle. Little is known about the exact fiber composition …

Ultrasound-Based Structural And Functional Modifications Of Oat Protein: Complementary Effects Of High Pressure, Cysteine, And Flavonoids, Runnan Li

Theses and Dissertations--Animal and Food Sciences

Oat (Avena sativa L.), a specialty cereal grain belonging to the Poaceae family, is relatively abundant in nutritious protein (12–20%) and dietary fiber (β-glucan). The balanced hydrophilic/hydrophobic amino acid profile in oat protein relative to other plant sources provides numerous possibilities for formulating oat protein isolate (OPI) into a wide range of food products. Yet, there has been limited research on OPI and the application of this valuable protein source is hampered by its low solubility at neutral and mildly acidic conditions. This dissertation research aimed to elucidate the efficacy of high-intensity ultrasound (HIU) for structural modification of OPI …

Maize, Fish, And Leafy Greens: Agricultural Diversity In Rural Zambia, Claire Gillespie Jan 2023

Maize, Fish, And Leafy Greens: Agricultural Diversity In Rural Zambia, Claire Gillespie

NUTR/GLST 498b: Global Research Experiences in Nutrition and Health

In Zambia, where 40% of children are stunted, there is limited interest in farming among primary school children as they consider their future. As grocery stores replace open-air markets, access to indigenous foods will become more difficult. Although 73 different types of foods were found in open-air markets, Zambian diets tend to be monotonous. Maize is the staple food and maize-based foods such as nshima are consumed daily, perpetuating low nutritional intake. Increasing crop diversity can increase balanced diets in Zambian school children and better support a growing population.

Protein Extraction And Purification By Differential Solubilization, Barry J. Ryan, Gemma K. Kinsella, Gary T. Henehan

Books/Book Chapters/ Proceedings

The preparation of purified soluble proteins for biochemical studies is essential and the solubility of a protein of interest in various media is central to this process. Selectively altering the solubility of a protein is a rapid and economical step in protein purification and is based on exploiting the inherent physicochemical properties of a polypeptide. Precipitation of proteins, released from cells upon lysis, is often used to concentrate a protein of interest before further purification steps (e.g., ion exchange chromatography, size exclusion chromatography etc).

Recombinant proteins may be expressed in host cells as insoluble inclusion bodies due to various influences …
