The first political barbecue took place in Virginia during the Colonial period. Since then, barbecue has remained an essential part of American civic life. Western Virginia, defined for the purposes of this thesis as the political borders of the sixth and ninth Congressional Districts in Virginia as drawn in 2021, is largely a rural area, considered by most political consultants to be heavily Republican and not winnable seats for Democratic candidates. Low-income Appalachian Kentuckians often utilize food assistance programs and community resources to obtain food and they have lack regular access to fresh food, especially fruits and vegetables. This study develops novel models of heterogeneous consumer preferences for different dining options and imperfect competition among food suppliers to analyze the market and welfare effects of portion size reduction (PSR) for food away from home. Different scenarios on the nature of differentiation of the dining options, the information available to consumers, and their response to links between portion size and obesity, food waste, and climate change are considered within this framework. I studied the age at first menstruation as a predictor of Western diet consumption among adults at The University of Akron and in Cleveland. I used stable carbon and nitrogen isotope compositions of human hair, as well as surveyed consumption of foods important to a Western diet (red meat, sugar, and dairy), to understand whether participants aligned with a Western dietary pattern. Age at survey and adult economic status were investigated as potential confounding variables. Aim The aim of this research was to understand the eating behaviour traits and food choice motivations of Irish teens, and to investigate the social, psychological, and attitudinal determinants of these eating behaviour traits and influences on food choice.

Methods Mixed methods were used in this research, using quantitative analysis of data from the National Teens’ Food Survey II (NTFSII), a cross-sectional study of teens aged 13-18 years old (N=428). Data predominantly came from the TFEQ-r18 and VARSEEK tools for eating behaviour traits, and the FCQ tool for food choice motivations, as well as socio-demographics, anthropometrics, behaviour/attitudes and dietary intakes. …

With an Insulated Solar Electric Cooker (ISEC), a 100 W solar panel directly cooks food while providing 5W off-grid electricity access; but it cooks slowly. Storing the day’s energy with phase change thermal storage allows ISEC to cook more rapidly as well as cook after sunset. The ISEC is made by sticking a 3ohm resistive to an aluminum pot (inner phase change assembly PCA) where another cooking pot fits. Over the last 150 years, the food system in the present-day United States has undergone a transformational restructuring, from a diversified, decentralized, network of farmers and seed growers, to one in which the majority of crop production is controlled by a few industrial corporations. The consolidation of power has been under-girded by the application of intellectual property rights (IPR)—especially utility patents—to plant varieties and genetic traits, which are leveraged to exclude small-scale seed growers from accessing quality germplasm. In Montana, climate change is projected to increase interannual variability and the severity of weather events like drought. To sustain agricultural production, farmers must adapt to climate change within a complex decision-making process responsive to a range of climate and non-climate stressors. This study explores how Montana farmers approach proactive and long-term adaptation, two types of adaptation which are not well studied, but are expected to be increasingly important for adapting to the impacts of climate change. Produce prescription programs, interventions operating at the intersection of food access and public health, are steadily increasing in number across the United States since 2010. I leverage key informant interviews, participant observations, and event ethnographies to form a four-year institutional ethnography of the implementation of produce prescriptions within West Virginia alongside a legal-policy archaeology methodology to understand how produce prescriptions have been institutionalized and funded within the US Farm Bill. The COVID-19 pandemic has further exacerbated physical inactivity, poor dietary intake and reduced mental wellbeing, contributing factors to non-communicable diseases in children. Cooking interventions are proposed as having a positive influence on children’s diet quality. Motor skills have been highlighted as essential for performance of cooking skills, and this movement may contribute to wellbeing. Additionally, perceived competence is a motivator for behaviour performance and thus important for understanding intervention effectiveness. Therefore, this research aimed to assess the effectiveness of an adapted virtual theory-based cooking intervention on perceived cooking competence, perceived movement competence and wellbeing.

There is little research examining the macronutrient intake of healthy collegiate female athletes across sports. The aim of the present study was to compare macronutrient intakes of female collegiate athletes within different sports and compare their intakes to recommendations.
