The incorporation of 3-¹⁴C-,B-hydroxy-, B-methylglutaric acid (HMG) vii into carotenoids of excised etiolated maize shoots, crude cell free extracts and soluble extracts (20, 000 x g) of maize was investigated. HMG was effectively incorporated into carotenoids of excised shoots, crude extracts and soluble extracts. The excised shoots, crude extracts and soluble extracts incorporated 2-¹⁴C-mevalonic acid (MVA) into carotenoids as well. The results indicated the presence of HMG-CoA reductase in the plant as well as an HMG activating enzyme. The soluble extract showed a pH optimum of 7. 0 for incorporation of HMG into …

Available evidence indicated that the deficiency of a specific nutrient in the diets adversely affect antibody production from a mild to severe degree. Studies of the effects of diet partially deficient in various essential nutrients on antibody response is meagre.

Twelve groups of weanling rats were fed with diets prepared by diluting the basal diet with 0 to 75 percent sucrose for 46 days and their antibody response was measured on the 28th, 40th and 46th day using Salmonella pullorum as the antigen. A manual was prepared and evaluated for use by non-professional personnel in community nutrition education. Instruction and suggestions were given for organizing these classes and techniques outlined for food demonstrations. Material was written for lectures and tests on eight nutrition topics, with visual aid suggestions, recipes and "chatter" to accompany the recipes.

The material was tested by presenting three of the eight topics before audiences. Volunteer non-professional teacher-demonstrators gave the presentations which were evaluated by test scores from the audiences, by score forms from each teacher-demonstrator, and by evaluation sheets from the advisory committee.

Male castrated rats treated with testosterone or estradiol were given a diet containing 9, 18, or 50 per cent protein. Total lipids, lipid classes and fatty acid composition of lipid classes were determined.

Estradiol treated rats grew slower, smaller and consumed less diet. Their liver weights were larger when compared to their body weights. Moisture content of liver remained unaffected by sex hormones, but increased with the high level of protein in the diet.

Both testosterone and estradiol affected lipid metabolism; in general, the estrogenic influence was more pronounced and more predictable. Estradiol administration increased total lipids, free and esterified …

A study was made of the adaptation to dietary protein of nitrogenous components in blood and urine of rats and humans. Forty-four mature male rats were adapted to a low protein diet (10 per cent casein diet) for three weeks before they were divided into two groups. Four rats were then killed for a control, and twenty of the remaining rats were switched to a high protein diet (40 per cent casein diet) and the other twenty continued to be fed the low protein diet. The cost of fresh and dehydrated vegetables was studied in terms of initial cost and labor cost. Three institution kitchens were used: Logan Church of Jesus Christ of Latter-day Saints Hospital, Logan Senior High School, and the High Rise Cafeteria at Utah State University. Beans, celery, onions, peas, green peppers, diced potatoes, shredded potatoes, sliced potatoes, and whipped potatoes were included in the research.

Fresh vegetables were found to have lower initial cost. Labor costs were lower for dehydrated vegetables. In the preparation of 25 pounds of vegetables the total cost of dehydrated vegetables was less than that of fresh …

Lamb pregastric (PGE) and gastric extracts (GE) have been evaluated for their role in Italian cheese flavor production. Both have been shown to produce increases in free fatty acids and in non-protein-nitrogen during incubation with milkfat and casein substrates as well as in cheese substrates. Gastric lipase and cathepsins are considered to be the additional active agents in GE. Parmesan cheese manufactured with PGE and GE added to the curd was superior in flavor when both were employed, and either extract alone was better than the uninoculated control. Studies were conducted utilizing albino rats to determine the relationship of voluntary alcohol consumption with various dietary additives and exposure to cigarette smoke in combination with poor quality diets. Male, Sprague-Dawley rats, from weanling age to 100 grams, were given the various experimental diets and a free fluid choice of ten per cent ethanol or tap water. Fluid intakes were recorded and analyzed statistically. Individual variation was common with a generally low level of alcohol consumption when rats were fed a poor quality diet of common United States foods. A questionnaire was developed to determine the ethical attitudes and education of a group of California dietitians. A group of 198 randomly selected individuals from the California Dietetic Association membership of 2,180 participated in the study.

Great diversity was exhibited in age, type of position held and total years of work experience in the sample group. Eighty-one per cent of the respondents were less than forty-nine years of age. The positions most frequently held by the participants were in hospital therapeutics and administration, teaching and schools, and consultant work. The first study was designed to evaluate by the nitrogen balance method the protein quality of a pure-vegetarian diet containing about 6 grams of nitrogen per day. The group as a whole maintained nitrogen equilibrium the average being - 0.11 grams of nitrogen per day. Two subjects were not in nitrogen balance, however, factors other than diet may have contributed to these results and are discussed in the thesis. Hemoglobin, serum cholesterol and total serum proteins did not change significantly during the study. The average true digestibility of 5 of the subjects was 85 percent. It was concluded that this …

Various individual and supplemented plant proteins were studied by the protein efficiency ratio (PER) method to determine their relative abilities to promote growth in young albino rats. Animals received a 10 percent level of protein in an otherwise adequate ration.

Comparison of five methods for calculating gas chromatographic peaks (disc integration, triangulation, peak height X width at half height, R_t X peak height, and peak height) shows no significant difference in the calculated results when aldrin, heptachlor epoxide, and dieldrin are injected into a gas chromatograph equipped with electron capture detector.

Problems are associated with the calculation of toxaphene, chlordane, DDT, and BHC. The author makes suggestions for calculating these four residues when present individually and in combinations with other pesticides. Use of the last four toxaphene peaks compares favorably with results obtained by using the entire toxaphene curve. …

Diphenylamine-ZnCI, has been evaluated as a chromogenic agent for detection of toxaphene, DDT, and chlordane on Al₂O₃ a thin layer plates. Characteristic colors were obtained for these pesticides; a lower level of about 5 μg was detectable. Color reactions of 34 pesticides at the 20 μg level are presented.

This study was involved in the selection of recipes for a cookbook. Over a thousand recipes were screened from a much larger number. These recipes were processed by grouping, combining and arranging into a uniform style and format. Many recipes were revised and tested. All recipes were of a lacto-ovo-vegetarian type, free from soda, baking powder and harmful condiments and spices.

Basic ingredient cards were prepared for the IBM computer from tables of food composition. Recipe ingredient cards for each item in the recipes were also prepared. These were programmed into the computer to give the total and per serving …

This exploratory study was conducted to discover to what extent patients follow their low-cholesterol diets. If they did not, the reasons were investigated. It was hoped that the findings would aid in defining areas of instruction which need greater emphasis when patients receive instruction concerning a low-cholesterol diet.

An interview guide was used as a data gathering tool. The dietitians at one private teaching hospital recorded all dietary prescriptions sent to them during the specified period and ten physicians were contacted for permission to include their patients in the study. In addition to direct toxic effects, it is suspected that insecticidal application has deleterious physical effects on persons with respiratory diseases. To evaluate some of these problems, the authors have attempted to quantitate actual absorption, symptoms, and laboratory evidence of intoxication in persons with varying degrees of exposure to parathion. The need for the study was established when the writer was asked to direct a training course for food service supervisors in Brazil. Correspondence with dietitians in Brazil reveled that there was a definite need for a manual which presents current scientific, and technological information.

Current literature was reviewed and studied to determine present concepts in each of the areas of food service supervision and management. A manual of instruction was then prepared which included these concepts.
