This report summarizes the initial findings of a survey of 500 households in the states of Nebraska, Iowa, Missouri and Wisconsin. The primary grocery shopper in the household was surveyed for their attitudes and opinions on locally grown and produced food, organic and all-natural food and meat purchasing behaviors.

To access a respondent’s purchasing behavior, each respondent was asked to rank the importance of twelve attributes in determining the product or brand they purchase. The attributes most important to consumers in the region* include taste, quality, nutrition/healthfulness, and price. Seven in ten respondents said that it was very or extremely …

There appears to be considerable opportunity for the development of organic vegetable production in Western Australia for either fresh or processed product. While a number of growers are successfully producing relatively small quantities of organic vegetables for both domestic and export markets, few large scale commercial growers have sought to capitalise on this opportunity.

Consumer interest in organically grown vegetables has increased rapidly in recent years due largely to concerns relating to food safety, health and the environment. The paper examines the extent of involvement of women in food crop production, processing and marketing in a typical African locality. Appropriate statistical techniques were employed in the data analyses. The findings show that women are greatly involved in the production, processing and marketing of food crops, especially cassava, which is one of the staple foods in sub-Saharan Africa.

The formation of composite films of double-stranded DNA and cationic lipid molecules (octadecylamine, ODA) and the hybridization of complementary single-stranded DNA molecules in such composite films are demonstrated. The immobilization of DNA is accomplished by simple immersion of a thermally evaporated ODA film in the DNA solution at close to physiological pH. The entrapment of the DNA molecules in the cationic lipid film is dominated by attractive electrostatic interaction between the negatively charged phosphate backbone of the DNA molecules and the protonated amine molecules in the thermally evaporated film and has been quantified using quartz crystal microgravimetry (QCM). This paper discusses the maternal and neonatal risk factors associated with multiple birth pregnancies. Nutrition implications associated with nutritional care of the high-risk infant and obstetric population are emphasized. Statistical information was gathered concerning the population growth of multiple births over the past twenty years. Literature to identify both maternal and neonatal risk factors associated with multiple gestation pregnancies was also reviewed. Review touted health effects of phytochemicals in cancer, cardiovascular disease (CVD), immune function, and other benefits. This study sought to investigate the role of the C55 undecaprenol lipid carrier in the production of exopolysaccharide (EPS), the effect of exopolysaccharide producing (EPS+) starter cultures on the viscosity of Mozzarella cheese whey, and the possible protective characteristics of capsular EPS against freezing and freeze drying. Efforts to investigate the role of the lipid carrier in EPS production employed pAMbacA, a plasmid that encodes an enterococcallipid kinase that confers bacitracin resistance by increasing intracellular levels of undecaprenol phosphate lipid carrier. A foam that is the extrudate of a mixture of a biodegradable polymer, starch, talc, and a blowing agent is provided. This foam is made by extruding a mixture of the above-listed components. This foam is water-resistant and in some variations waterproof making it an effective packing material. Still further, this foam is biodegradable, and thus, it can be disposed without creating environmental waste. In addition, the foam may be extruded into sheets and then therm-formed to form various articles.

When a rice kernel fissures, it can break in subsequent food processing operations and lose its commercial value. Head rice yield (HRY) is a measure of the percent of kernels that remain whole (at least three-fourths of original length) after rice has been milled. Our experiment was designed to test the effect of a rapid state transition during drying and tempering processes using cultivars Bengal and Cypress. ‘Bengal’ is a medium-size kernel and ‘Cypress’ is a long-size, thinner grained cultivar. Starch determines a large proportion of the textural properties of cooked rice. The amylose: amylopectin ratio plays a significant role in the functionality of native starch. In this study a medium-grain rice cultivar, ‘Bengal’, was used for starch structure characterization using high performance size-exclusion chromatography (HPSEC). This cultivar is characterized by having lower amylose content (15% to 20%) than long grain cultivars and being sticky when cooked, similar to short-grain cultivars. Eating disorders are a debilitating mental illness that affects young people including those in the field of dietetics. Literature suggests that dietetic students have a higher prevalence of eating disorders than other students. Seventy-seven college student in Southern West Virginia enrolled in either dietetics or another major were included in a sample to determine if dietetic students have higher prevalence of disordered eating attitudes and behaviors. The participants completed a survey that included a general information section, a 26-item questionnaire concerning eating attitudes, and a behavioral information section. Qualitative relationships between agitation levels and medium viscosity, Aspergillus niger morphology and phytase production were investigated in submerged and solid-state fermentations. Overall phytase production increased with increasing shaker speeds from 150 to 300 rpm, although specific growth rates and phytase production rates were higher at 150 rpm for 72 h from inoculation. Fungal morphology was greatly influenced by agitation with the morphological forms of small pellets and entangled mycelia predominating at 150 rpm, while the free filamentous form was obtained at 300 rpm. Upon inoculation of SSF, increased productivities were obtained from inocula grown at 150 rpm. A shift towards …

The O157:H7 lineage of enterohemorrhagic Escherichia coli is a geographically disseminated complex of highly related genotypes that share common ancestry. The common clone that is found worldwide carries several markers of events in its evolution, including markers for acquisition of virulence genes and loss of physiological characteristics, such as sorbitol fermentation ability and β-glucuronidase production. Populations of variants that are distinct with respect to motility and the sorbitol and β-glucuronidase markers appear to have diverged at several points along the inferred evolutionary pathway. In addition to these variants, distinct subpopulations of the contemporary non-sorbitol-fermenting, β-glucuronidase-negative O157:H7 clone were recently detected …

The objective of this study was to provide data on attitudes towards eating a healthy diet and the perceived need to alter eating habits from a random sample of adults in the Republic of Ireland and in Northern Ireland, using a self-administered questionnaire. A study was carried out to determine the physico-chemical treatment of the wastewater collected from a soap and detergent factory in Selangor, Malaysia. The study was initiated by determining the characteristics of the wastewater. Treatability studies involving coagulation and flocculation were determined by the jar test method. The parameters of interest were coagulant dosage, pH, mixing intensity, mixing time and settling time. The coagulants were restricted to alum and ferric sulfate and coagulant aids utilized were polyvinyl alcohol, sodium alginate and polycthylcninimine. Solid substrate fermentation (SSF) of sago pith residue known as 'hampas' with Pycnoporus sanguineus for enzyme production was carried out. Good growth of Pycnoporus sanguineus in SSF was noted on 'hampas' supplemented with 0.38% urea, 0.2% KH₂PO₄ and 0.05% MgSO₄·7H₂O over a period of 30 days. Xylanase, lignin peroxidase and laccase activities were detected in Pycnoporus sanguineus cultures. Maximum xylanase and laccase activities of 5.26U/g of substrate on day 10 of SSF and 14.35U/g on day 15 of SSF of substrate were obtained respectively. Vanilla is a very important flavouring agent, it is used as a major ingredient in a number of food products. The taste and aroma results from a specific blend of components present in the extract. A major concern during commercial masa or instant masa flour production is the proper disposal of the excess waste water generated from the nixtamalization process. Nixtamalization causes partitioning of corn solids between nixtamal and waste water. It has been estimated that corn solids loss during nixtamalization varies between 5-14% depending on corn type & quality. Nejayote waste is highly alkaline, with high chemical and biological oxygen demands (BOD & COD) and is considered an environmental pollutant. The activity of σB in Listeria monocytogenes is stimulated by high osmolarity and is necessary for efficient uptake of osmoprotectants. Here we demonstrate that, during cold shock, σB contributes to adaptation in a growth phase-dependent manner and is necessary for efficient accumulation of betaine and carnitine as cryoprotectants.

A heat transfer model is developed to predict cooking time of meat patties given the initial temperature of meat, oven temperature, and meat properties to monitor and control a cooking process on-line. Experiments were performed to find the cause of variability in cooked weight and raw temperature effects in forming and final cooked temperature. Advanced charting techniques concluded that only common causes of variability were present in the process. Thermal conductivity experiments were performed to determine the thermal conductivity of meat (k), which was compared with the properties of meat published in literature to validate the experiment.
