Turkish Journal of Veterinary & Animal Sciences
Different salting techniques were used on Maraş cheese samples produced from cow's, ewe's and a mixture (1:1) of cow and ewe's milk. In the first group, samples were immersed 22% the brine solution for 3 hours then transferred into 10 % brine solution. In the second group, samples were salted with 1 % dry salt and after 24 hours were immersed in 13 % brine solution. The cheese samples were analysed for chemical, microbiological and sensory properties on the first day of production and after 15, 30, 60 and 90 days of ripening. There were no statistical differences in the …

This investigation was carried out to determine the possibility of the use of sorbic acid in cemen and its effect on the microbial quality of pastrami. The pastrami samples were experimentally produced by the tradional metod. The garlic ratio of cemen paste which consist of 50 % water, 15 % cemen flour, 20 % garlic and 15 % red pepper was decreased 25 %, 50 % and 75 %. The cemen samples were respectively suplemented with 0, 0.15 % and 0.30 % potassium sorbat. Microbial quality (general viable microorganisms, mould, yeast, Lactobacillus, Staphylococcus-Micrococcus and Enterobacteriaceae) of the samples were determined …

In this study, the genetic and phenotypic correlations between milk production traits (milk yield, lactation duration, dry period) and reproductive traits (the number of inseminations per conception, service period, calving interval and gestation period) in Holstein Cows were investigated. The data relating to milk and reproductive traits in the period of 1985-1992 of a Holstein herd at the Bala State Farm was used. The genetic correlations were generally higher than phenotypic correlations between traits investigated in this study. In milk production traits, the phenotypic correlations between the milk yield and the lactation duration (0.41) and the dry period (-0.14) were …

The structural changes of gill, liver and spleen tissue of the carp were examined. The gills of fishes which live in aquatic habitat exhibit tissue lesions caused by water pollutants, because they are in direct contact with their environment. In the results of this study, it was found at secondary lamellae fused together, and the gills are the most affected organs. Other histopathological …

Exact Test For Investigation Of Hardy-Weinberg Equilibrium, Bahar Çitak, Tahsi̇n Kesi̇ci̇
Turkish Journal of Veterinary & Animal Sciences
The use of exact and \chi^2 goodness-of-fit tests to control the hypothesis that a sample represents the population in Hardy-Weinberg equilibrium are explained and compared with each other. These tests were applied for the loci with two, three and four alleles. The reliability of these tests depends on the sample size. The results showed that the exact and \chi^2 goodness-of-fit tests provided almost the same results if the sample size is considerably large. The exact test is, however, more reliable than the \chi^2 goodness-of-fit test when the sample size is small.

It was found that pre-incubation temperature (60 °C) of arginase and Km (4mM) to its substrate, L-arginine, did not change before and after purification. While pre-incubation period was 10 min and optimal pH 9.7 before purification, pre-incubation period was found to be 5 min and optimal pH 10 after purification. Purified enzyme achieved its highest activity at 2 mM MnCl_2 concentration, …
