The pinto bean has been linked to the prevention of multiple diseases due in large part to the presence of phenolic antioxidants, which are higher in beans than in many fruits and vegetables. These components deliver health properties beyond basic nutritional characteristics by scavenging free oxygen radicals. However, these benefits are most likely due to the ability of these chemically diverse phenols to impart greater protective properties as additives or synergists acting in combination. However, optimal parameters to isolate these compounds (in terms of ratios and types) from a given natural source are not known. Without this knowledge, understanding the …

The purpose of this study was to determine the effectiveness of a calorie-restricted diet versus one with restricted food groups. To accomplish this, a survey with 19 participants, age ranging from 25 to 74 years, was taken for people who attempted Weight Watchers, a calorie-restricted diet, and Atkins, a low-carbohydrate diet. The success rates of each of these diets will be compared and analyzed in this study. Participants reported short-term and long-term weight loss results. It is well documented that obesity is a growing problem in the U.S. and worldwide. By 2010, 35.9% of U.S. adults age 20 and older were obese (Overweight and Obesity, CDC). Obesity has been associated with many health problems, including hypertension, type 2 diabetes, osteoarthritis, stroke, and cardiac disease (Lucey, 2008, p.202). What has just been described is the traditional, medicalized narrative of obesity. In this narrative, obesity is viewed as an epidemic that demands an immediate and widespread response (Lucey, 2008, p.202). The incidence of Clostridium difficile infection (CDI) and associated mortality have increased rapidly worldwide in recent years. Therefore, it is critical to develop new therapies for CDI. In this study, we generated a novel, potently neutralizing, tetravalent, and bispecific antibody composed of 2 heavy-chain-only VH (VHH) binding domains against both TcdA and TcdB (designated “ABA”) that reverses fulminant CDI in mice infected with an epidemic 027 strain after a single injection of the antibody. We demonstrated that ABA bound to both toxins simultaneously and displayed a significantly enhanced neutralizing activity both in vitro and in vivo. Additionally, …

Trans fatty acids (TFA) are produced either by hydrogenation of unsaturated oils or by biohydrogenation in the stomach of ruminant animals. Vanaspati ghee and margarine have high contents of TFA. A number of studies have shown an association of TFA consumption and increased risk of cardiovascular disease (CVD). This increased risk is because TFA increase the ratio of LDL cholesterol to HDL cholesterol. Food and Agriculture Organization of the United Nations and World Health Organization have come up with the recommendation that the contents of TFA in human dietary fat should be reduced to less than 4%. Background
While farmers’ markets are a potential strategy to increase access to fruits and vegetables in rural areas, more information is needed regarding use of farmers’ markets among rural residents. Thus, this study’s purpose was to examine (1) socio-demographic characteristics of participants; (2) barriers and facilitators to farmers’ market shopping in southern rural communities; and (3) associations between farmers’ market use with fruit and vegetable consumption and body mass index (BMI).

A study was composed to analyze the three components of the female athlete triad: disordered eating, amenorrhea, and osteoporosis. The cyclic behavior of these three components and determination of which of the pillars of the triad is the most dangerous was also focused on. In order to test the prevalence of disordered eating among women’s collegiate teams, a brief survey was distributed and analyzed among athletes at Bowling Green State University. This study was designed to determine if dark chocolate helps lower blood pressure and if the concentration of the dark chocolate varies the result. Currently, one in four Americans has high blood pressure. The recommended treatment may include medicine or a diet referred to as DASH or Dietary Approaches to Stop Hypertension. This study followed a within-subjects design having all participants receive each type of dark chocolate. Twenty-seven participants started the study to measure their blood pressure while consuming dark chocolate for a week at a time. This study analyzed the perceptions of University of Kentucky Dietetic and Human Nutrition students as they relate to the benefits and barriers of study abroad educational opportunities. The final sample consisted of 164 participants, with 18.9% (n=31) in the Coordinated Program in Dietetics (CP), 32.3% (n=53) in the Didactic Program in Dietetics (DPD), 42.7% (n=70) in the Human Nutrition (HN) program and 5.5% (n=9) who identified their program as ‘other’. Breast cancer risk, and risk of associated co-morbidities such as cardiovascular disease, is highest among overweight or obese women with a previous history of breast cancer. The objective of this study is to test the effectiveness of a tailored nutrition, physical activity, and behavioral weight management intervention for breast cancer survivors against a widely available commercial weight management program. We hypothesize that an intervention tailored to the unique psychological, nutritional, and physical needs of breast cancer survivors will provide superior physiological and psychological benefits compared to an existing commercial program for the general population. Background: Undergraduates are making their first autonomous health decisions. This is an opportune stage for examining the precursors to the chronic diseases of adulthood. The purpose of this study was to examine correlations between health status, quality of life, and academic success in college students.
Methods: A quality of life survey (Goodman, 1997) was utilized to determine the behavioral difficulties of 86 first and second year college students. The effects of a single bout of resistance exercise (RE) in conjunction with peri-exercise branched chain amino acid (BCAA) and carbohydrate (CHO) ingestion on skeletal muscle signaling markers indicative of muscle protein synthesis (MPS) were determined. It was hypothesized that CHO + BCAA would elicit a more profound effect on these signaling markers compared to CHO.
