The effect of ultrafiltration, diafiltration, and preacidification of milk on the partition of specific milk components between retentate and permeate was studied. Percent retention (for any component Y) was determined as:
[1 - (%Y in soln. permeate/%Y in soln. retentate)] X 100 where %Y in soln. = [%Y / (%Y + %H2O)]
Simultaneous samples of retentate and permeate were taken at several points during each process. Percent retention of total solids, fat, total protein, rennet clottable nitrogen, lactose, total calcium, ionic calcium, sodium, phosphorous, and riboflavin was determined at each sampling point. This research project consisted of seven case studies of obese women who sought treatment for their weight problems at a hospital weight loss clinic and fitness center. The purpose of these studies was to consider the extent to which heredity and /or environmental factors contributed to these subjects being overweight. The case studies suggested that six of the subjects' overweight. problems were mainly caused by environmental factors. It was determined that one subject was overweight largely due to genetic predisposition, but that environmental factors also played a role. The purpose of this study was to investigate the relationship between nutrition and alcoholism in general, specifically how nutritional therapy and education can benefit the recovering alcoholic, and to explore the degree to which nutritional aspects have been developed and practiced in residential and inpatient programs in region 2, excluding the city of Chicago, and in region 3B as defined by the Division of Alcoholism, Illinois Department of Mental Health and Developmental Disabilities, January 15, 1980.

A high percentage of fat in the diet has been implicated through epidemiological studies in several human cancers. Studies in experimental animals have produced evidence that increasing the fat in the diet decreases the animal’s ability to restrict tumor development and growth. In previous work done in this laboratory with BALB/c mice injected with herpes simplex Type 2-transformed mouse cells (H238), the effects of a diet which greatly enhanced tumor growth was compared with one which restricted tumor growth. The Relationship Between Meat Consumption And The Biological Determinants Of Cardiovascular Disease Risk, Fred E. Kollwitz

Fasting blood samples were collected from 26 omnivore and 27 vegetarian men (35-60 years of age), who were not taking any medications and by self-assessment were in good health. The following analyses were done: glucose (Glu), glycohemoglobin (HBA1), total serum cholesterol (chole), high density lipoprotein-cholesterol (HDD, low density lipoprotein (LDL), very low density lipoprotein (VLDL), platelet factor four (PF4), and beta-thromboglobulin (BTG). In addition, the blood pressure (BP) was determined.
The systolic (p<0.001) and diastolic BP (p=0.016) were lower in the vegetarian subjects than in the omnivores. The serum total cholesterol levels were also lower in the vegetarian subjects compared to the omnivores (p<0.05). There was no significant difference in Glu, HBA1, LDL, VLDL, HDL, PF4, and BTG levels between the two groups.

Manufacture of white soft cheese from ultrafiltered whole cows• milk involved acidification of pasteurized homogenized whole milk to pH 6.0 with phosphoric or citric acid. The preacidified milk was ultrafiltered at 54 °C until 60% of original milk weight was removed as permeate, diafiltered with deionized water equal to 38.5% of the original milk and concentrated by UF (4.8 fold) to pre-cheese (38% total solid). The pre-cheese was heated to 76.7°C/16 sec, 71 .l°C/l6 sec (HTST) and 7l.l°C/l5 min (controlled water bath), inoculated with 2% starter culture (Streptococcus cremoris), renneted (10 ml/100 lb retentate) and placed in one …

None of these reports have dealt with the application of forecast models in a hospital cafeteria setting. Nutritional support for bone marrow transplant recipients is recognized as vital, yet little research has occured to determine the best method.
This study was designed to survey existing food and nutrition services in bone marrow transplant centers in the U.S. in order to determine similarities in the services provided among centers from which a model protocol could be established for such centers.

The changing role of the clinical dietitian has resulted in evaluation and identification of the appropriate role for the clinical dietetic technician. In 1981 the American Dietetic Association published the Role Delineation for Entry Level Clinical Dietetics including the responsibilities for the clinical dietetic technician practice level. Research comparing actual role performance of clinical dietetic technicians to the role defined in the delineation study was not found in a review of the literature.

A modification of a linear diffusion test for measuring milk clotting enzymes at concentrations of 1 x 10-4 to 1 x 10-1 chymosin units/ ml was developed to permit quantitative assay of porcine pepsin in Cheddar cheese with a standard deviation of 6%. The amount of porcine pepsin retained in Cheddar cheese curd was dependent on pH of milk at setting. Milk at pH 6.6, 6.4, 6.2, and 6.0 was set with porcine pepsin, acidified with lactic acid and glucono-~-lactone and made into Cheddar cheese. Protein recovery and coagulation properties of five commercial and fractionated milk clotting enzymes were studied. The fractionated enzymes were Sephadex G-100 fractions of the commercial enzymes. Milk clotting activity of each fraction was tested using Berridge substrate. All fractions from each preparation which had milk clotting activity as measured with the Formagraph were collected and pooled. These samples and the original enzyme preparations were used to coagulate milk. Percent of protein lost in whey was determined by Kjeldahl. Coagulation was followed using a spectrophotometer monitoring changes in apparent absorbance at 600 nm. Curd protein yields using the five original enzyme …

A rugged and sensitive instrument "Vatimer" was developed to evaluate the coagulation properties of milk in cheese vats. Microvolt signals from the instrument varied with standing-wave motion of milk, forces arising from coagulation, curd firming, curd syneresis and also clean-in-place spray forces. Curd firmness at cutting varied three to four fold in commercial Cheddar cheesemaking operations.
The Formagraph instrument was used to select individual cow milk samples with good and poor chymosin-coagulation characteristics from the Utah State University Holstein herd. Blending 50% good-, and 50% poor-coagulating samples did not improve average coagulation properties of poor samples. Higher chymosin concentration caused …

This study was designed to investigate the effectiveness of dextrose on cardiovascular endurance. The subjects were nineteen male students enrolled at Loma Linda University in Riverside, California. The subjects were exercised to their maximum while being tested on the treadmill.· Subjects were each tested twice. Thirty minutes before exercising, they ingested one hundred grams of dextrose for one test and ten ounces of sugar-free Kool-aid for the second test. The difference in exhaustion times was then recorded.
The data indicated that dextrose ingestion decreased exhaustion time on the treadmill. Subjects were able to exercise for a longer period of time …

The purpose of this study was to determine the effect of selected physical socio-environmental variables on total percent body fat. The sample population consisted of single, LDS, white women attending Brigham Young University (BYU) and California State University at Fullerton (CSUF). Significant data as well as trends that appeared were included in this paper.
From the data collected, it was concluded that the sample populations at BYU and CSUF were the same. The incidence of obesity was determined only among individuals attending both universities. The entire sample population mean was 22.19 percent. This percentage did not meet the obesity criteria. …

Studies have estimated total daily salt consumption in the U.S. at 10 - 14.5 grams, despite increasing public awareness and decreased usage by the food industry. To avoid excess governmental regulation to modify current salt intake, determination of the amount of salt currently being used in a discretionary manner is needed.
This study investigated the feasibility/limitations of a data collection technique to assess discretionary salt intake in in-flight meal service, Discretionary salt use by airline passengers was determined by weighing salt packets remaining on used meal trays. In this study, the copper status of 18 vegetarian and 17 non-vegetarian men were compared. Copper status was assessed by determining red blood cell superoxide dismutase (RBC-SOD) activity and plasma copper. Plasma copper levels were measured by atomic absorption spectroscopy. Plasma cholesterol, triacyclglycerols, HDL cholesterol, LDL cholesterol VLDL cholesterol were also determined. Twenty-four hour recalls and three-day food records were obtained to determine copper, zinc, energy, protein, fat, fiber, saturated fat, oleic acid, linoleic acid and cholesterol intake. Process cheese models were prepared by blending acid or rennet casein, milk fat, sodium chloride, 2.5% emulsifying salt and water and heating to 80 C. Acid casein cheese models were subjected to sodium hydroxide conditioning at 65 C in the cooker. Model process cheeses were acidified with lactic acid and treated by addition of undenatured and heat-denatured whey protein, four different emulsifying salts and sodium oxalate.
Meltability and toughness of the model cheese increased to a maximum with increased sodium hydroxide conditioning of acid casein to pH 7.20. These same properties decreased with addition of undenatured and heat-denatured whey protein …

Data on actual labor time can be utilized as an effective management tool. With labor cost representing about 50 percent of direct cost in food service, it is essential to examine how labor time is being utilized.
A continuous time study was conducted to determine the total labor time for the production of eight vegetarian entrees. The two work areas observed were the ingredient assembly area and the cooks' production area. This labor time was recorded by Work Functions to find the dis- tribution of labor time. Millions of dollars are spent annually on special educational programs for children whose severe behavior disorders prevent them from participating in the regular school setting despite average or above average intellectual capacity. A growing body of research indicates that some of these behavior disorders are related to nutritional problems. A total of 18 obese men and women volunteered and participated in a seven-day protein sparing modified fast providing 400 calories per day. The subjects were concurrently participating in an eight-week weight control program combining the facets of nutrition education, group therapy, and values clarification. The modified fast, which was optional, was conducted during two different time periods with a conventional low calorie diet prescribed during the four-week interval.

An apparent proliferation of articles on weight reducation in the mass media and women's magazines have been critized as faddist by some professionals. Regardless of this concern, a standardized method of evaluating any diet remains noexistent.

Three spices, nutmeg, mace and black pepper, and selected oil constituents, safrole, eugenol and myristicin, were tested for mutagenicity using the Aines test.
Safrole, an oil constituent, is a weak hepatic carcinogen in the rat and mouse. Safrole metabolites are more mutagenic than the parent compound. Myristicin and eugenol are structurally related to safrole and break down into similar metabolites as safrole. All three are present in nutmeg, mace and black pepper. These three spices were tested for mutagenicity in the Salmonella/microsomal mutagenicity test using strains TA1535, TA1537, TA1538, TA98 and TAlOO with and without metabolic activation. Weanling rats were fed diets containing raw lyophylized hand-deboned shank beef (HDS) supplemented with CaCO3, retorted lyophylized mechanically deboned shank beef (MDS), or raw lyophylized MDS. Ca in the latter two diets originated from bone during the mechanical deboning process. Ca absorption, Ca retention, bone weight, and bone breaking strength were similar for comparative dietary levels of Ca regardless of the source. Bone ash and Ca content was significantly higher (P < .05) in the MDS 393 (3.93 g Ca/kg diet) diet and in the retorted MDS 460 diet compared with the HDS 488 diet. Relative biological values for the MDS diets calculated relative to the HDS diets ranged from 102 to 132 when the linear regression of Ca consumed, Ca retained, or dietary Ca level vs bone ash or bone Ca content was obtained. The retorted MDS 460 diet contained the highest Fe level and exhibited a lower percent absorption, terminal hemoglobin level, and liver Fe storage. Humerus F content increased as dietary F (also present from bone) level increased. Dietary F level did not determine humerus breaking strength.

The purpose of this study was to determine how well a group of ten men and eight women who attended one of four dinners could estimate measured and weighed portions of ten test foods by a 24-hour dietary recall over the telephone, with and without a food model book.
A paired t-test indicated that there was no statistically significant difference between the 24-hour dietary recalls estimated by the total group with and without the food model book. The purpose of this study was to examine the effects of socio-demographic characteristics, knowledge of coronary heart disease and behavior variables on blood cholesterol concentration among 218 selected subjects in northern Utah communities.
The data were obtained from physicians' medical charts and a survey specifically designed for this study. Seven strains of Streptococcus cremoris and Streptococcus lactis were tested for temperature sensitivity on a temperature gradient bar. A temperature of 37 C was the optimum for differentiating between temperature-sensitive and insensitive strains. Temperature-insensitive strains produced cell masses with absorbance values of 0.1 or higher and activity levels of 1.0 (expressed as a decrease in pH) or above at 37 C. Temperature-sensitive strains failed to produce these cell masses and activity levels.
Strain selection and resistant-mutant isolation made it possible to identify ten strains of Streptococci sufficiently free of phage sensitivity for use in a cheese plant rotation program. These …
