Colored Cheddar cheeses are prepared by adding an aqueous annatto extract (norbixin) to cheese milk; however, a considerable proportion (∼20%) of such colorant is transferred to whey, which can limit the end use applications of whey products. Different geographical regions have adopted various strategies for handling whey derived from colored cheeses production. For example, in the United States, whey products are treated with oxidizing agents such as hydrogen peroxide and benzoyl peroxide to obtain white and colorless spray‐dried products; however, chemical bleaching of whey is prohibited in Europe and China. Fundamental studies have focused on understanding the interactions between colorants …

Unraveling Complexity About Childhood Obesity And Nutritional Interventions: Modeling Interactions Among Psychological Factors., Keith Feldman, Gisela M B Solymos, Maria Paula De Albuquerque, Nitesh V. Chawla

Manuscripts, Articles, Book Chapters and Other Papers

As the global prevalence of childhood obesity continues to rise, researchers and clinicians have sought to develop more effective and personalized intervention techniques. In doing so, obesity interventions have expanded beyond the traditional context of nutrition to address several facets of a child's life, including their psychological state. While the consideration of psychological features has significantly advanced the view of obesity as a holistic condition, attempts to associate such features with outcomes of treatment have been inconclusive. We posit that such uncertainty may arise from the univariate manner in which features are evaluated, focusing on a particular aspect such as …

Food Insecurity On Wmu’S Campus: Student Satisfaction Of The Invisible Need Project, Ava Daly

Honors Theses

Previous research suggests that food insecurity is higher among college students and individuals from minority populations than the general population. Many college campuses have recognized this issue and developed on-campus food pantries to mitigate food insecurity among students. Nevertheless, barriers exist that prevent students from utilizing on-campus pantries. The purpose of this study was to investigate college students’ relationship to food and food access at Western Michigan University (WMU). Student satisfaction of WMU’s on-campus food pantry, The Invisible Need Project, was also explored. Data were gathered through a 28-question online survey and one in-person focus group. Participants were undergraduate and …

Pharmacy and Wellness Review

Human breast milk is known to provide the most complete nutrition to growing infants. There may be more gained from breastfeeding than simply nutritional fulfillment-recent research has uncovered benefits related to the development and health of infants. Breastfeeding has been shown to stimulate immune system development by exposing the infant to bacteria and antibodies from the mother. Breastfeeding may also benefit nursing mothers by improving insulin sensitivity and glucose tolerance as well as decreasing postpartum weight gain. In place of breastfeeding, formulas are able to provide an infant with necessary nutrition. Many infant formulas have been enriched with probiotics and …

Pharmacy and Wellness Review

Human Chorionic Gonadotropin (hCG) has recently experienced a resurgence in popular media. Late night television commercials and Internet advertisements have suggested that it is an essential, unequivocal means to losing weight fast. ls hCG really a miracle cure to help patients shed unwanted pounds? In 1954, A.T.W. Simeons claimed that hCG impacts weight loss by decreasing hunger, increasing fat redistribution, and increasing overall mood. Knowing that weight loss cannot be directly attributed to hCG use, Simeons developed a very low calorie diet (VLCD) to which the success of the therapy can be attributed. He saw hCG as a means to …
