This study qualitatively examined college students' perceptions of a pilot cooking and nutrition workshop, College Cooking Connection (CCC), through the Social Cognitive Theory (SCT) framework. Undergraduate students who attended at least one CCC workshop (N = 29) were invited to a 30 min virtual focus group. A trained moderator guided the discussion to gather perceptions of the program. Themes were identified using thematic analysis with a directive and deductive approach based on SCT. Focus groups revealed eight major themes across the SCT. Cognitive themes included: (1) improved nutrition literacy, (2) understanding the nutrition-mental health connection, and (3) increased awareness of …

Background: Communication skill development is a key component of dietetic education. Traditional teaching methods such as role play and simulated consultations are effective but resource intensive. Generative artificial intelligence (GenAI) may provide an accessible supplementary tool for communication skills practice. This initiative aimed to explore dietetic students’ experiences of using a GenAI simulated patient consultation as a revision aid to support communication skill development.
Methods: This evaluation involved second-year BSc Human Nutrition and Dietetics students undertaking the Professional Practice and Communications module. Introduction/Background
Malnutrition affects approximately 43% of cancer patients nationally and is associated with missed chemotherapy appointments, treatment interruption, and poor clinical outcomes. At a 30-chair outpatient cancer center in South Texas, a retrospective chart review revealed that 45% of patients experienced malnutrition-related symptoms contributing to appointment disruptions. Despite evidence-based recommendations for routine nutritional screening and support, no standardized protocol existed at this site.

Objective: Evaluate feasibility (primary), clinical, and cost outcomes (secondary) associated with the use of a screening decision tool for allocating rural and urban adults with hypertension into in a food is medicine (FIM) program.
Design: Participants were allocated to receive either medically tailored meals or grocery prescription (Rx), based on a user-centered designed screening decision tool. Medically tailored meals (MTM) provided 5 meals per week for 12 weeks. The grocery Rx program provided $100 each month for 3 months to purchase food consistent with guidelines for hypertension. This study examined the relationship between early-life dietary habits, perceived parental support, and collegiate competition level among female soccer athletes. Current and former NCAA Division I, II, III, and junior college athletes completed an anonymous retrospective survey assessing dietary behaviors, meal patterns, parental nutrition support, and sport-related factors. Of the 112 surveys received, 81 complete responses were included in the analysis. Participants had a mean age of 23.0 ± 3.8 years. Higher levels of collegiate competition were associated with more supportive home nutrition environments during childhood and adolescence. While recognizing the link between prenatal nutrition and maternal-fetal health, this investigator-initiated study seeks to identify pregnant women's understanding of prenatal nutrition guidelines and the influences on their dietary choices. Thirty-eight eligible women completed an online, anonymous surveying assessing the scope of knowledge and decision-making patterns of healthy eating during pregnancy. The average knowledge score among the participants was 6.05/14. There was no significant difference in the knowledge scores among pregnancy periods or among total number of pregnancies. Perceptions of nutrition guidance in prenatal care, factors influencing eating behaviors, and primary sources of nutrition information were explored. The findings may …

High-protein diets have gained significant popularity in both social media and public discussion and more recently, a significant rise in protein consumption has been observed. Existing research has reported differences in actual protein intake across dietary patterns, with animal-based diets generally associated with higher total protein intake compared to plant-based diets. Rising rates of obesity in the United States necessitates an understanding of the multitude of factors that contribute to it. Recently, “food noise” has emerged as a topic of interest in this space. The current survey-based observational study aimed to understand the relationship between Body Mass Index (BMI) and levels of food noise. The results indicate a significant association between BMI and food noise levels and a connection between a history of disordered eating and food noise levels. Nutrition epidemiological models involve many analytic decisions, such as defining exposures, selecting which covariates to include, or configuring variables in different ways. We explored the impact of analytical decisions on conclusions in nutrition epidemiology using self-reported beef intake and incident coronary heart disease as a case study. We used REasons for Geographic and Racial Differences in Stroke (REGARDS) data, and selected covariates and their configurations from published literature to recapitulate common models used to assess associations between meat intake and health outcomes. Background: A deficiency of immunosuppressive regulatory T cells, as seen in scurfy (SF) mice or in IPEX syndrome in humans, can lead to multiorgan inflammation. Oral administration of the probiotic Limosilactobacillus reuteri Deutsche Sammlung von Mikroorganismen und Zellkulturen GmbH (DSM) 17938 prolongs survival and reduces Th1- and Th2-associated inflammation in SF mice. Background: Inflammatory and insulinemic dietary patterns have been associated with colorectal cancer (CRC) risk, but generalizability across diverse populations with heterogeneous food supplies and dietary behaviors has not been established.
Objectives: We harmonized disparate dietary and covariate data on a large scale to compute the reverse Empirical Dietary Index for Hyperinsulinemia (rEDIH), reverse Empirical Dietary Inflammatory Pattern (rEDIP), and Healthy Eating Index (HEI)-2015 scores, and tested their associations with CRC risk.

Objectives: Bariatric surgery is an effective treatment for severe obesity and associated metabolic comorbidities. Exposure to polyfluoroalkyl substance (PFAS) before bariatric surgery may attenuate improvements in glucose metabolism and explain some of the heterogeneity in post-surgery outcomes.
Design: This is an observational cohort study.
Methods: Adolescents (n = 186) enrolled in the Teen-Longitudinal Assessment of Bariatric Surgery study were included. Eight-PFAS congeners were measured in plasma before surgery. Linear and logistic regressions were used to examine cross-sectional associations between log2-transformed PFAS (ng/mL) and fasting glucose, insulin, hemoglobin A1c (HbA1c), and homeostatic model assessment for insulin resistance (HOMA-IR). Iodine-induced thyrotoxicosis (IIT), also known as the Jod-Basedow phenomenon, is a rare yet recognized cause of hyperthyroidism. While iodinated contrast is the most frequent trigger, iodine-rich supplements such as seaweed products or supplements can also precipitate thyrotoxicosis, particularly in individuals with prior chronic iodine deficiency or preexisting thyroid nodular disease. We present a case of thyroid storm following short-term ingestion of Irish sea moss as part of a “crash diet.” A 37-year-old woman with type 1 diabetes mellitus, well controlled on subcutaneous insulin therapy, presented with nausea and vomiting after 6 days of following a restrictive diet consisting solely of …

Cardiovascular-kidney-metabolic (CKM) syndrome integrates excess adiposity, metabolic dysfunction, kidney impairment, subclinical cardiovascular diseases, and clinical events along a staged continuum that invites unified prevention and treatment. Ultra-processed foods (UPFs) are a complex, high-prevalence exposure that may influence risk across CKM stages through nutrient profiles, additives, processing-induced compounds, and packaging-related contaminants. This review synthesizes epidemiologic, mechanistic, and translational evidence with attention to exposure definition and analytic rigor. We summarize NOVA-based UPF operationalization across dietary assessment tools, highlighting misclassification of mixed dishes, brand heterogeneity, and energy under-reporting, and we propose further examination of energy-adjusted models, calibration, and harmonized metrics. Public food procurement stands as one of the most powerful, yet chronically underutilised, policy levers available to Australian governments. Every day, publicly funded institutions – hospitals, residential aged care facilities, long day care, prisons, schools, defence facilities and community food programs – purchase and serve food to millions of Australians. We investigated the cross-sectional association between total, animal and plant protein intake with the presence of a multidimensional measure of frailty in older women. Participants included 1380 community-dwelling Australian women, mean (SD) age 75.1 (2.7) years. A validated food frequency questionnaire was used to determine total, plant, and animal protein intake. Frailty was assessed using a frailty index across numerous health domains (scored 0–1, ≥0.25 indicating frailty). This study aimed to explore whether health effects of dietary nitrate depend on its source, by investigating associations between plant and animal-sourced dietary nitrate groups with markers of inflammation and CVD risk factors. Among 100 non-smoking adults (mean age 49 ± 13 years, 31% male), dietary nitrate intake was assessed using food frequency questionnaire (n=100) and 3-day food diary (n=89), combined with nitrate food composition databases. Objective: To identify Food Action Groups’ activities that positively impact local food systems, and anticipated barriers to establishing Food Action Groups in rural, regional, and remote Western Australia. However, the doses used have limited translatability for humans.
