Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk. All studies performed in this project used the data collected in the Utah Child and Family Health Study (UCFHS) and the Johns Hopkins International Cleft Consortium.

Worldwide, Campylobacter is one of the leading causes of foodborne bacterial gastroenteritis causing an estimated 1.3 million infections in the United States alone. Consumption and/or cross-contamination of raw or undercooked poultry products have been linked as the most common source of Campylobacter infection, making the poultry industry a target for Campylobacter reduction strategies. Campylobacter is prevalent in most poultry flocks in the United States, with as many as 90% of flocks Campylobacter-positive at the time of slaughter. Effect Of Bromelain On Duck Breast Meat Tenderization, Ahmet Buyukyavuz

ABSTRACT This study was conducted to determine the effect of bromelain on duck breast meat tenderization. Duck breasts were marinated with different concentrations (0, 1.5, 3 and 4.5%; C2, B1.5, B3 and B4.5, respectively) of bromelain and a solution composed of 92% refrigerated water, 6% salt and 2% sodium tripolyphosphate by using a vacuum food tumbler machine. A second non-marinated control (C1) was also included. Marination tumbling was operated at 8 RPM for 8 minutes. Physico-chemical and quality parameters were determined on raw and cooked samples. A significant reduction (p<0.05) in pH was observed in all bromelain treated samples when compared to C2. Although there was a significant reduction in pH of B1.5 when compared to C1, there was no significant difference among B3, B4.5 and C1. A significant increase was observed in water holding capacity of B3 and B4.5 when compared to C1. While a significant reduction was observed in lightness (L*), no differences were observed in redness (a*) and yellowness (b*) values of marinated samples (C2, B1.5, B3 and B4.5) when compared to C1. However, a significant increase in lightness (L*), and a significant decrease in redness (a*) and yellowness (b*) were observed in cooked bromelain treated samples. No differences were observed in razor shear forces, moisture content and water activity between treatments. There was no significant difference in cook yield of all marinated samples (C2, B1.5, B3, and B4) when compared to the C1. A significant reduction (p<0.05) in Warner-Bratzler shear force values was observed in all marinated samples when compared to untreated control (C1). Based on results, use of bromelain in marination solutions under the conditions tested here would not be cost effective.

Vitis rotundifolia also called 'Muscadine' grows abundantly throughout the southeastern United States. Muscadine grapes have desirable flavors, making them suitable to be either consumed as fresh fruit or made into wine and jam. Moreover, muscadine grapes have been reported containing rich complex phytochemicals, including anthocyanins and polyphenols that possess antioxidant, anti-cancer, anti-inflammatory and antimicrobial activities. High school coaches play a huge role in establishing a healthy environment for their athletes and often students. The coach‐athlete relationship has proven to be a strong and useful bond in prevention of adverse behaviors of athletes or in prevention of health problems such as concussions. The female athlete triad (triad) is a common health problem among female athletes. Many high school coaches are unaware of the triad or the serious health and performance consequences for their athletes. Differences have been observed in the milling and functional properties of different rice cultivars, particularly between hybrid and pureline cultivars. Co-mingling of rice cultivars commonly occurs during harvest, storage and drying operations. Thus, there is a need to study the effect of co-mingling on the milling and functional properties of rice cultivars. Food allergy appears to be on the rise with the current mainstay of treatment centred on allergen avoidance. Mandatory allergen labelling has improved the safety of food for allergic consumers. However an additional form of voluntary labelling (termed precautionary allergen labelling) has evolved on a wide range of packaged goods, in a bid by manufacturers to minimise risk to customers, and the negative impact on business that might result from exposure to trace amounts of food allergen present during cross-contamination during production. The main objective of this thesis is to test three different microwaving packaging materials that are the most common material in the market, viz. polystyrene (PS), polypropylene (PP), and polyethylene terephthalate (PET), migrated into four food simulant solutions. Four different simulant solutions were used based on the food type and FDA recommendations and regulations. Sporeforming bacteria (such as Bacillus and Paenibacillus spp.) can survive pasteurization conditions (Collins, 1981) and grow in pasteurized fluid milk during refrigerated storage (Huck et al., 2008; Ivy et al., 2012), causing fluid milk spoilage and limiting the further extension of fluid milk’s shelf life (Fromm and Boor, 2004; Durak et al., 2006). The pinto bean has been linked to the prevention of multiple diseases due in large part to the presence of phenolic antioxidants, which are higher in beans than in many fruits and vegetables. These components deliver health properties beyond basic nutritional characteristics by scavenging free oxygen radicals. However, these benefits are most likely due to the ability of these chemically diverse phenols to impart greater protective properties as additives or synergists acting in combination. This paper shares challenges faced and overcome by four African American women on their 2013 journey to secure USDA’s Produce Good Agricultural Practices (GAPs) Harmonized Food Safety Standards with the Global Addendum (Global Markets Primary Production Assessments: GMPPA). Collaboration, consistent training, and technical support from the Tuskegee University Extension and Research staff, and the Small Farmers Agricultural Cooperative undergirded the preparation of the farms for GAPs Certification. The timely sharing of staff expertise and experience from commercial partners (Walmart, Purivida, C.H. Robinson, W.P. Rawls), and support from the USDA (Strike Force Initiative) were important contributors to the positive outcomes described. …

This case study examined methods used in a food safety/Good Agricultural Practices (GAPs) educational program with small and limited resource produce farmers in Alabama to assist them with obtaining certification. Two methods were used, namely, the identification of challenges to food safety certification and development of strategies to address the challenges, and the enlistment of educational methods to facilitate food safety certification. As a result, there were four challenges to food safety certification identified; needs for motivation, information, clarification, and resources. There are many research avenues being investigated at institutions nationwide with the intent to reduce the public health risk of listeriosis. Approaches include studies on L. monocytogenes transmission dynamics in retail delis, observations of deli worker practices, a structured expert elicitation on transmission dynamics and statistical modeling of listeriosis risk impact factors. Many individuals have difficulty adhering to a weight loss diet. One possible explanation could be that dietary restriction paradoxically contributes to overconsumption. The objective of this study was to examine ingestive behavior under a forced chocolate restriction, with a focus on the anticipatory restriction period and the post-restriction period in frequent chocolate consumers. Fifty-six male (N=18) and female (N=38) high chocolate consumers with high or low cognitive disinhibition aged 27.70 ± 11.09 years with a mean BMI of 25.68± 5.92 kg/m2 participated. As the planet’s population increases, so does the demand for mass-produced food products. The result of the increase in demand has been the rapid development of the factory farming industry. A prominent component of the factory farmed by-product industry is the battery cage egg-farming scheme, which has cultivated immense amounts of ecological damage to the hens and environment involved. The damage studied includes: air and water pollution, deforestation, biodiversity loss, and fossil fuel use. The environmental damage is prevalent throughout the Australian state of New South Wales, and the public must be informed.

Fabrication And Analysis Of Soy Flour Filled Polyethylene Fibers, Ozgun Ozdemir, Sam Lukubira, Amod Ogale, Paul Dawson

Fibers composed of soy flour (soy) and linear low density polyethylene (PE) were produced by melt spinning method. The mixing time of soy flour and PE was adjusted to get better dispersion of soy flour inside the matrix. The inclusion of soy decreased tensile modulus by 35% and tensile strength by 30% of the fibers compared with 950 MPa and 43 MPa, respectively, for PE fibers. This project examines the avenues by which nutrition science impacts individuals in society. It examines the factors that influence consumer behavior and food choice and the importance of health literacy in guiding nutrition and health. It elucidates the role of the Food and Drug Administration (FDA) in regulating food labeling and the implications that such regulation has on consumer perception and possible health outcomes. Further, this project outlines recently proposed changes to the “Nutrition Facts” panel. In investigating nutrition education and outreach programs, this project includes a case study of Farm Fresh Rhode Island and the organization’s nutrition initiatives.

Finfish are consumed across the United States and constitute an important part of the American diet. However, seafood consumption can be a tenuous topic, with supporters highlighting the health benefits of eicosapentaenoic acid (EPA, C20:5n3) and docosahexaenoic acid (DHA, C22:6n3) and opponents emphasizing the neurotoxicity of methylmercury. Because all fish contain varying amounts of EPA, DHA, and methylmercury, the need for clear and unbiased information is essential to alleviate the confusion experienced by many consumers and empower them to make informed decisions regarding seafood consumption. Shrinkage models from different fields of study were reviewed. Pasta was used as a model to further develop the hypothesis of predicting shrinkage in terms of the rate of relaxation and the rate of moisture loss. An extended literature review of pasta properties, such as isotherms, diffusivity, glass transition, rheological properties, and shrinkage was conducted. Isotherm and glass transition models were developed from the literature data acquired. Creep was tested with a 25 mm-diameter flat plate at 20 to 40°C at varying moisture content. Triple layer bags consisting of two inner layers of 80 micron thick high-density polyethylene (HDPE) surrounded by an outer woven polypropylene bag have proven to be an effective technology for hermetic storage of cowpea and to prevent loss caused by the cowpea bruchid, Callosobruchus maculatus Fabricius (Coleoptera: Chrysomelidae). This bagging technology is called the Purdue Improved Crop Storage (PICS) system. The foodborne pathogen, Listeria monocytogenes, can contaminate ready-to-eat (RTE) deli meats at retail delis, since retail delis provide an ideal environment for L. monocytogenes growth. Current risk assessment indicates that 83% of listeriosis cases from RTE deli meats are all from RTE deli that are sliced at retail delis. Strategies for controlling L. monocytogenes in retail establishments are essential to prevent post-processing contamination of RTE foods.
