Generation of wastewater is one of the main environmental sustainability issues across food sector industries. The constituents of food process effluents are often complex and require high energy and processing for regulatory compliance. Wastewater streams are the subject of microbiological and chemical criteria, and can have a significant eco-toxicological impact on the aquatic life. Thus, innovative treatment approaches are required to mitigate environmental impact in an energy efficient manner. Dietary nitrate is increasingly linked to a variety of beneficial health outcomes. Our purpose was to estimate dietary nitrate consumption and identify key dietary changes which have occurred over time within a representative sample of Australian women. Women from the 1946–1951 cohort of the Australian Longitudinal Study on Women’s Health with complete food frequency questionnaire data for both 2001 and 2013 were included for analysis. Dietary nitrate intakes were calculated using key published nitrate databases. Diet quality scores including the Australian Recommended Food Score, the Mediterranean Diet Score and the Nutrient Rich Foods Index were calculated along with food group …

Extraintestinal pathogenic E. coli (ExPEC) possess the ability to cause extraintestinal infections such as urinary tract infections, neonatal meningitis and sepsis. While information is readily available describing pathogenic E. coli populations in food-producing animals, studies in companion/sports animals such as horses are limited. This study investigated the influence of different concentration of konjac glucomannan (KGM) (0, 0.1, 0.2, 0.3 % (w/v)) on the stability of curcumin emulsion in milk system containing 10%, 20%, and 30% (v/v) oil volume fraction. The data of creaming index, curcumin concentration, apparent viscosity, and color were obtained to investigate the stability of the system. Emulsions that reached the physical stability until 14 days of storage at 4ᵒC were subjected to further analysis including antioxidant, particle size, zeta potential, and bioaccessibility by the simulated gastrointestinal tract (GIT). ภาวะเหมาะที่สุดสำหรับการผลิตไฮโดรไลเสตจากถั่วดำ Vigna Mungo ที่มีฤทธิ์ต้านออกซิเดชัน, นฤมล บำรุงศาสตร์

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาภาวะที่เหมาะสมสำหรับการย่อยโปรตีน และกระบวนการทำแห้งที่เหมาะสมในการผลิตไฮโดรไลเสตจากถั่วดำที่มีฤทธิ์ต้านออกซิเดชันสูง ผลการศึกษาการย่อยโปรตีนด้วยเอนไซม์ Flavourzyme® ที่ระดับความเข้มข้น 1-7 % (w/w) และระยะเวลาย่อย 60 - 1200 นาที ด้วยการใช้วิธีพื้นผิวตอบสนองและการออกแบบการทดลองแบบส่วนผสมกลาง พบว่าภาวะที่มีความเข้มข้นของเอนไซม์และระยะเวลาย่อยเพิ่มขึ้นทำให้ไฮโดรไลเสตมีค่าระดับการย่อยเพิ่มขึ้น (p<0.05) ระดับการย่อยเป็นผลตอบสนองที่มีผลต่อการเพิ่มฤทธิ์ต้านออกซิเดชันของไฮโดรไลเสตจากถั่วดำ โดยระดับการย่อยที่เพิ่มสูงขึ้นมีผลให้ไฮโดรไลเสตมีปริมาณหมู่อะมิโนอิสระและสารประกอบฟีนอลิกเพิ่มมากขึ้น (p<0.05) การผลิตไฮโดรไลเสตทำให้เกิดสารประกอบ Maillard Reaction Products สมการของผลตอบสนองต่าง ๆ มีค่า p-value ของ Lack of fit อยู่ในช่วง 0.102 - 0.359 และมีค่า r2 อยู่ในช่วง 0.8717 - 0.9557 การทำนายภาวะย่อยโปรตีนจากการกำหนดเกณฑ์ของผลตอบสนอง (ระดับการย่อย 75% และค่าผลตอบสนองตัวอื่น ๆ สูงสุด) พบว่าภาวะที่มีความเข้มข้นของเอนไซม์ 6.09 %(w/w) และระยะเวลาย่อย 360 นาที เป็นภาวะที่เหมาะสมสำหรับการย่อยโปรตีนในการผลิตไฮโดรไลเสตที่มีฤทธิ์ต้านออกซิเดชันสูง จากการตรวจสอบการใช้ได้ของสมการพบว่าเปอร์เซ็นต์ความคลาดเคลื่อน (% error) ของค่าผลตอบสนองที่ได้จากการทำนายแตกต่างจากค่าที่ได้จากการทดลองอยู่ในช่วง 0.54 - 27.46% เมื่อนำไฮโดรไลเสตที่ผ่านการย่อยในภาวะที่คัดเลือกมาทำแห้งด้วยวิธีการทำแห้งด้วยลมร้อนแบบถาดและแบบโฟม-แมตที่อุณหภูมิ 60๐C พบว่าการทำแห้งแบบโฟม-แมตมีอัตราส่วนความชื้นลดลงและมีอัตราการอบแห้งสูงกว่าการทำแห้งแบบถาด เมื่อสร้างแบบจำลองทางคณิตศาสตร์เพื่อทำนายลักษณะการทำแห้งพบว่าแบบจำลองของ Weibull ให้ค่า r สูง และค่า MRS และ RMSE ต่ำ เมื่อเทียบกับแบบจำลองทางคณิตศาสตร์อื่น ๆ ที่ใช้ การนำแบบจำลองมาตรวจสอบการใช้ได้ของสมการพบว่า % error ของปริมาณความชื้นของไฮโดรไลเสตที่ได้จากการทำนายแตกต่างจากค่าที่ได้จากการทดลองอยู่ในช่วง 0.44 - 6.05% เมื่อนำไฮโดรไลเสตมาทำแห้งด้วยสุญญากาศที่อุณหภูมิ 60๐C พบว่าการทำแห้งที่มีระยะเวลา 380 - 450 นาที ทำให้ไฮโดรไลเสตมีปริมาณความชื้นสุดท้าย 18 - 21% โดยน้ำหนักแห้ง การนำไฮโดรไลเสตจากถั่วดำที่ผ่านการทำแห้ง 3 วิธี ข้างต้นในระยะเวลาที่ทำให้ผลิตภัณฑ์มีความชื้นสุดท้าย 18 และ 21% โดยน้ำหนักแห้ง มาวิเคราะห์สมบัติด้านต่าง ๆ พบว่าการทำแห้งด้วยลมร้อนแบบถาดทำให้ไฮโดรไลเสตมีปริมาณสารประกอบฟีนอลิก ฟลาโวนอยด์ TCA-soluble peptides ความสามารถในการละลาย และความสามารถในการต้านออกซิเดชันที่วิเคราะห์ FRAP สูงกว่าไฮโดรไลเสตที่ทำแห้งด้วยวิธีอื่น (p<0.05) ในขณะที่การทำแห้งด้วยสุญญากาศทำให้ไฮโดรไลเสตมีความสามารถด้าน DPPH radical scavenging activity สูงกว่าไฮโดรไลเสตที่ทำแห้งด้วยวิธีอื่น แต่มีความสามารถด้าน Metal-chelating และ Oxygen Radical Absorbance Capacity ไม่แตกต่างเมื่อเทียบกับการทำแห้งวิธีอื่น (p>0.05)

การพัฒนาผลิตภัณฑ์แผ่นฟิล์มปรุงรสน้ำจิ้มแบบอีสาน (แจ่ว), นุชนาฏ กิจวรเมธา

งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาผลิตภัณฑ์แผ่นปรุงรสน้ำจิ้มแจ่ว โดยใช้มอลโทเดกซ์ทรินเป็นสารก่อฟิล์มเพื่อให้มีสมบัติในการละลายน้ำดี และใช้แซนแทนกัมเพื่อปรับปรุงสมบัติเชิงกลของฟิล์ม ขั้นตอนแรกคัดเลือกสูตรสารละลายขึ้นรูปฟิล์มสูตรควบคุม (ไม่ใส่ส่วนผสมที่ไม่ละลายน้ำ ได้แก่พริกป่นและข้าวคั่ว) จากสูตรน้ำจิ้มแจ่ว 3 สูตร ที่แปรอัตราส่วนของน้ำมะขามเปียกต่อน้ำมะนาว คือ สูตรน้ำมะขาม (1:0) สูตรผสม (1:1) และสูตรน้ำมะนาว (0:1) และแปรปริมาณแซนแทนกัมในสารละลายมอลโทเดกซ์ทริน 3 ระดับ (ร้อยละ 0, 1 และ 2 โดยน้ำหนัก) สามารถเลือกสารละลายขึ้นรูปฟิล์ม 2 สูตร ได้แก่ สูตรน้ำมะขามและสูตรผสม ที่ใส่แซนแทนกัมปริมาณร้อยละ 1 ฟิล์มที่ได้มีสมบัติเชิงกลที่เหมาะต่อการขึ้นรูปและละลายน้ำได้ดี ขั้นต่อมาพัฒนาการขึ้นรูปเป็นผลิตภัณฑ์แผ่นปรุงรสน้ำจิ้มแจ่ว โดยเติมส่วนพริกป่นและข้าวคั่วบนแผ่นฟิล์มขณะอบแห้ง และแปรความหนาของแผ่นปรุงรส 2 ระดับ (0.4 และ 0.8 มิลลิเมตร) พบว่าการเติมพริกป่นและข้าวคั่วเสริมให้ฟิล์มมีความต้านทานแรงดึงสูงขึ้น (p<0.05) และสามารถละลายน้ำกลับเป็นน้ำจิ้มแจ่วได้ โดยแผ่นหนา 0.8 มิลลิเมตร ให้สมบัติเชิงกลที่ดีกว่าแผ่นบาง (p<0.05) และสูตรผสมมีค่าการละลายน้ำสูงกว่าสูตรมะขามเล็กน้อย เมื่อทดสอบการยอมรับทางประสาทสัมผัสของแผ่นปรุงรส (แผ่นหนา) และน้ำจิ้มแจ่วที่ละลายจากแผ่นปรุงรส พบว่าคะแนนความชอบด้านลักษณะปรากฏของแผ่น เนื้อสัมผัสและการละลายน้ำของแผ่นปรุงรสทั้ง 2 สูตร (สูตรน้ำมะขามและสูตรผสม) ไม่แตกต่างกัน (p≥0.05) เมื่อละลายเป็นน้ำจิ้มแจ่วแล้ว คะแนนความชอบด้านต่าง ๆ ไม่ต่างกัน โดยมีคะแนนในช่วงชอบมาก (5-6 จาก 7 คะแนน) จากการศึกษาการเปลี่ยนแปลงคุณภาพระหว่างการเก็บรักษาแผ่นปรุงรสแจ่วทั้ง 2 สูตร ที่อุณหภูมิ 35 และ 45 องศาเซลเซียส เป็นเวลา 60 วัน พบว่า ปริมาณความชื้นและค่า aw มีแนวโน้มสูงขึ้นและมีสีเข้มขึ้น ซึ่งที่อุณหภูมิ 45 องศาเซลเซียส ให้ค่าความต้านทานแรงดึงสูงกว่า ขณะที่ค่าร้อยละการยืดตัว ปริมาณความชื้น aw และค่าการละลายน้ำต่ำกว่า ที่อุณหภูมิ 35 องศาเซลเซียส (p<0.05) โดยผลิตภัณฑ์แผ่นปรุงรสน้ำจิ้มแจ่วทั้งสองสูตรมีปริมาณจุลินทรีย์ทั้งหมดไม่เกินเกณฑ์มาตรฐานที่กำหนดระหว่างการเก็บรักษา (60 วัน) จากการทดสอบการยอมรับทางประสาทสัมผัส พบว่า แจ่วแผ่นทั้งสองสูตรมีคะแนนความชอบด้านสีไม่แตกต่างกัน แต่ลดลงตามระยะเวลาในการเก็บรักษา เมื่อละลายเป็นน้ำจิ้มแจ่ว พบว่าสูตรน้ำมะขามมีแนวโน้มของคะแนนความชอบทางด้านกลิ่น กลิ่นรสและความชอบโดยรวมน้อยกว่าและมีค่าลดลงเร็วกว่าสูตรผสม แผ่นปรุงรสน้ำจิ้มแจ่วที่พัฒนาขึ้นสามารถผลิตจากน้ำมะขามเปียกหรือผสมน้ำมะนาวที่ใส่แซนแทนกัมปริมาณร้อยละ 1 เมื่อโรยด้วยพริกป่นและข้าวคั่ว สามารถขึ้นรูปได้ดี มีสมบัติเหมาะสมในการนำมาใช้งาน

มิรินเป็นหนึ่งในเครื่องปรุงรสที่สำคัญสำหรับอาหารญี่ปุ่น ผลิตจากข้าว และแอลกอฮอล์ โดยแบ่งออกเป็น 3 ประเภท ได้แก่ Hon mirin, Blended mirin และ Cooking sweet rice wine (ไวน์ข้าวหวานปรุงอาหาร) โดยไวน์ข้าวหวานปรุงอาหารเป็นมิรินที่มีราคาถูก นิยมใช้ทั่วไป ซึ่งได้จากการหมักแป้ง และโปรตีนในข้าวให้เป็นน้ำตาล และกรดอะมิโน แล้วเติมแอลกอฮอล์ให้มีปริมาณร้อยละ 14 ในงานวิจัยนี้จะผลิตมิรินด้วยวิธีดังกล่าวด้วยข้าวเหนียวไทย สายพันธุ์ กข 6 นำมาผ่านกระบวนการหมักโดยเชื้อราที่เหมาะสมที่สุดจาก 2 สายพันธุ์ ได้แก่ Aspergillus oryzae และ Amylomyces rouxii ไวน์ข้าวหวานปรุงอาหารที่ได้จะต้องมีสีเหลืองอ่อนใสและสามารถเก็บรักษาได้ในอุณหภูมิห้องโดยไม่เกิดการตกตะกอนหรือเน่าเสีย ดังนั้นจึงใช้กระบวนการกรองแบบอัลตราฟิลเทรชัน (Ultrafiltration, UF) เพื่อลดจำนวนจุลินทรีย์ที่ทำให้เกิดการเน่าเสียและกำจัดโปรตีนบางส่วนที่ทำให้เกิดความขุ่น (Haze) โดยเลือกใช้เยื่อแผ่นที่มีค่าการกักโมเลกุล (Molecular weight cut off, MWCO) ที่ 10 kDa และ 100 kDa จากผลการทดลองพบว่า Aspergillus oryzae เป็นสายพันธุ์เชื้อราที่มีความเหมาะสมในการผลิตไวน์ข้าวหวานปรุงอาหาร เนื่องจากน้ำต้อยที่ได้จากการหมักมีปริมาณโปรตีนสูงกว่า มีค่าระดับการย่อยสลายของโปรตีนสูงกว่า มีร้อยละผลผลิตสูงกว่าและใช้เวลาในการหมักน้อยกว่าการหมักโดยใช้ Amylomyces rouxii ดังนั้นจึงเลือกใช้ Aspergillus oryzae เป็นเชื้อราในการทำกล้าเชื้อ ในกระบวนการกรองแบบอัลตราฟิลเทรชันพบว่ามีความจำเป็นที่ต้องนำน้ำต้อยที่ได้มาผ่านกระบวนการจัดการเบื้องต้นด้วยการกรองหยาบด้วยผ้าขาวบางแล้วทิ้งให้ตกตะกอนตามธรรมชาติเป็นเวลา 24 ชั่วโมงก่อนนำไปกรองด้วยเยื่อแผ่นเพื่อลดความต้านทานที่มีต่อการกรองแบบอัลตราฟิลเทรชัน การกรองของไวน์ข้าวหวานปรุงอาหารผ่านเยื่อแผ่นที่มีค่ากักโมเลกุลที่ 10 kDa และ 100 kDa พบว่าช่วงแรกของการกรอง อัตราเร็วการกรองของเยื่อแผ่นมีค่ากักโมเลกุลที่ 100 kDa สูงกว่าอัตราเร็วการกรองของเยื่อแผ่นมีค่ากักโมเลกุลที่ 10 kDa แต่อัตราการลดลงของอัตราเร็วการกรองมีความแตกต่างกันอย่างชัดเจน โดยที่อัตราเร็วการกรองของเยื่อแผ่นที่มีค่ากักโมเลกุลที่ 100 kDa จะลดลงรวดเร็วกว่าอัตราเร็วการกรองของเยื่อแผ่นมีค่ากักโมเลกุลที่ 10 kDa และจะลดลงจนมีอัตราเร็วการกรองที่ใกล้เคียงกับอัตราเร็วการกรองของเยื่อแผ่นมีค่ากักโมเลกุลที่ 10 kDa ในช่วงเวลาต่อไป เมื่อพิจารณารูปแบบความสัมพันธ์เชิงเส้นระหว่างพารามิเตอร์ 2 ตัวใน อัตราเร็วการกรอง (q) …

คีเฟอร์เป็นผลิตภัณฑ์นมเปรี้ยวที่ได้จากกระบวนการหมักโดยกิจกรรมทางเมตาบอลิซึมของจุลินทรีย์กล้าเชื้อผสมของแบคทีเรียกรดแลคติก ยีสต์ และแบคทีเรียกรดอะซีติก อาศัยอยู่ร่วมกันแบบพึ่งพาในโครงสร้างพอลิแซ็กคาไรด์และโปรตีนที่เรียกว่า เม็ดคีเฟอร์ ในประเทศไทยพบการผลิตคีเฟอร์ภายในครัวเรือนหรืออุตสาหกรรมขนาดเล็กโดยได้รับความนิยมในกลุ่มผู้บริโภคที่ใส่ใจสุขภาพ อย่างไรก็ตามผลิตภัณฑ์ดังกล่าวยังขาดข้อมูลสนับสนุนในเชิงวิชาการ พบเพียงแต่คำกล่าวอ้างถึงประโยชน์ในเชิงสุขภาพด้านต่างๆ ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อคัดเลือกเม็ดคีเฟอร์ทางการค้าจากแหล่งต่างๆ ในประเทศไทย ที่มีประสิทธิภาพในกระบวนการหมัก โดยพิจารณาจากอัตราการเจริญของจุลินทรีย์กล้าเชื้อ ความสามารถในการสร้างกรด ค่าความหนืดของผลิตภัณฑ์ ร่วมกับการวิเคราะห์ข้อมูลโปรไฟล์สารเมตาบอไลต์ชนิดระเหยง่ายและชนิดระเหยยากในผลิตภัณฑ์โดยเทคนิค SPME-GC/MS และ 1H-NMR ตามลำดับ แล้วคัดเลือกเม็ดคีเฟอร์ที่มีประชากรจุลินทรีย์กล้าเชื้อที่มีสมบัติในการเป็นโพรไบโอติกเบื้องต้นโดยพิจารณาจากความสามารถในการทนต่อสภาวะความเป็นกรด (pH=3.00) และเกลือน้ำดี (0.30%) เพื่อนำมาวิเคราะห์ระบุชนิดประชากรจุลินทรีย์ที่เป็นองค์ประกอบโดยเทคนิคการวิเคราะห์สารพันธุกรรมด้วย 16s rDNA/RNA gene sequence analysis ผลการศึกษาสามารถพบกล้าเชื้อคีเฟอร์ในประเทศไทยที่มีประสิทฺธิภาพในการหมักสูง เจริญได้ดีภายใต้สภาวะที่ใช้ในการทดสอบ ให้ผลิตภัณฑ์ที่มีค่าความเป็นกรดและความหนืดเหมาะสม และมีสมบัติเบื้องต้นในการเป็นจุลินทรีย์โพรไบโอติก ผลจากการวิเคราะห์ทางเมตาโบโลมิกส์สามารถระบุชนิดของสารเมตาบอไลต์ชนิดระเหยง่ายได้รวม 39 สาร และสารเมตาบอไลต์ชนิดระเหยยากได้รวม 52 สารในคีเฟอร์ ซึ่งประกอบไปด้วยสารอินทรีย์หลายกลุ่มที่มีความสำคัญต่อคุณภาพด้านกลิ่นรสของผลิตภัณฑ์ ผลการวิเคราะห์ระบุชนิดจุลินทรีย์ด้วยลำดับนิวคลีโอไทด์บริเวณ 16S rDNA/RNA พบว่าประชากรแบคทีเรียกลุ่มหลัก ได้แก่ Lactobacillus otakiensis, Lactobacillus buchneri, Lactobacillus kefiri และ Bacillus subtilis และประชากรยีสต์กลุ่มหลัก ได้แก่ Kluyveromyces marxianus, Kazachstania servazzii, Kazachstania unispora และ Kazachstania spp. ซึ่งมีรายงานเบื้องต้นถึงสมบัติการเป็นจุลินทรีย์โพรไบโอติก ผลที่ได้จากงานวิจัยนี้แสดงให้เห็นถึงข้อมูลอัตลักษณ์ทางชีวโมเลกุลและจุลินทรีย์ที่เป็นประโยชน์ในเชิงสุขภาพของกล้าเชื้อคีเฟอร์และผลิตภัณฑ์คีเฟอร์ในประเทศไทย ซึ่งมีศักยภาพในการพัฒนาต่อยอดเป็นผลิตภัณฑ์อาหารเชิงหน้าที่ (functional food) ในระดับอุตสาหกรรมได้

This research aimed to evaluate feasibility of pigments from halophilic Bacillus as coloring agent having multi-bioactivity in foods. Those Bacillus were isolated from Thai traditional salty fermented fish (plara) and identified by 16S rDNA sequencing analysis. Five strains including Bacillus sp. 81-2; 13-3; 77-3, Bacillus amyloliquefaciens 34-12, and Bacillus vietnamensis 39-23, with pink-orange, yellow, and yellow-orange pigmentation were selected as representative of each pigment color shade. Cinnamon oil is an effective natural antimicrobial agent, but the utilization is limited by its low water-solubility. In this study, cinnamon oil nanoemulsions were prepared using a phase inversion temperature (PIT) method, which simply involves heating a mixture of surfactant, oil, and water about the PIT and then quench cooling with stirring. The aim of this study was to explore autochthonous strains having properties in reduction of brown color in moromi and evaluate their potential as biological mean for de-colorization of soy sauce. The autochthonous microbes associated to moromi fermentation under different manufacturing conditions were evaluated using both the culture plating and Reverse transcriptase-nested PCR-DGGE (RevT-nested PCR-DGGE) methods. By culture plating, Bacillus (43.17%) and Staphylococcus (33.09%) were isolated from every fermentation stages of all samples. Yeast Candida spp. was frequently detected (46.67%) in most samples. มะแขว่น (Zanthoxylum limonella Alston) เป็นพืชพื้นเมืองที่พบในแถบภาคเหนือตอนบนของประเทศไทย นิยมใช้เป็นเครื่องเทศชูกลิ่นรสในอาหาร ช่วยให้อาหารมีกลิ่นหอมน่ารับประทาน สารระเหยหลักที่พบในน้ำมันหอมระเหยจากมะแขว่นประกอบด้วย D-limonene, alpha-phellandrene และ alpha-pinene ซึ่งทำให้มีกลิ่นคล้ายส้ม และมีฤทธิ์ในการต้านออกซิเดชันสูง อย่างไรก็ตามสารออกฤทธิ์ในน้ำมันหอมระเหยเหล่านี้ถูกทำลายได้โดย ความร้อน ความชื้น แสง และออกซิเจน ดังนั้นจึงควรปกป้องสารระเหยด้วยวิธีเอ็นแคปซูเลชัน ซึ่งคอมเพล็กซ์โคแอเซอร์เวชัน เป็นหนึ่งในวิธีการกักเก็บสารที่นิยมใช้ โดยเกิดขึ้นจากอันตรกิริยาระหว่างประจุที่แตกต่างกันของสารละลายพอลิเมอร์ โดยนิยมใช้โปรตีนเป็นสารให้ประจุบวก (polycation) และพอลิแซ็กคาไรด์เป็นสารให้ประจุลบ (polyanion) งานวิจัยนี้จึงมีวัตถุประสงค์เพื่อศึกษาภาวะที่เหมาะสมในการกักเก็บน้ำมันหอมระเหยจากมะแขว่นในไมโครแคปซูล และวิเคราะห์สมบัติทางเคมี และกายภาพของไมโครแคปซูลที่ได้ โดยสารเคลือบที่ใช้ศึกษาเป็นพอลิแซ็กคาไรด์ 3 ชนิด ได้แก่ แอลจิเนต (ALG) กัมอะราบิก (GAB) และแซนแทนกัม (XTG) ร่วมกับโปรตีนเจลาติน (GEL) วิเคราะห์ร้อยละการผลิต (EY) ประสิทธิภาพในการกักเก็บ (EE) สมบัติการต้านออกซิเดชัน หมู่ฟังก์ชัน (ด้วยเทคนิคฟูเรียร์ทรานสฟอร์มอินฟราเรดสเปกโตรสโกปี, FTIR) และโครงสร้างจุลภาค (ด้วยกล้องจุลทรรศน์อิเล็กตรอนแบบส่องกราด, SEM) ของไมโครแคปซูล พบว่าไมโครแคปซูลที่เตรียมโดยใช้สารเคลือบ GEL ร่วมกับ GAB ให้ผลที่ดีที่สุด นอกจากนี้ผลการวิเคราะห์ FTIR ยืนยันว่าเกิดอันตรกิริยาระหว่างพอลิแซ็กคาไรด์ทั้ง 3 ชนิดกับ GEL และสารเคลือบทั้งหมดไม่ทำปฏิกิริยากับน้ำมันหอมระเหยที่กักเก็บภายใน จากนั้นศึกษาปัจจัยของ pH (3.20-4.20) อัตราส่วนของโปรตีนต่อพอลิแซ็กคาไรด์ (GEL:GAB; 1.00-2.00) และอัตราส่วนระหว่างสารเคลือบต่อน้ำมันหอมระเหย (wall:core; 1.00-5.00) ที่ส่งผลต่อค่า EY และ EE ด้วยวิธีพื้นผิวตอบสนอง (RSM) พบว่าภาวะที่เหมาะสมในการกักเก็บน้ำมันหอมระเหยจากมะแขว่นมีดังนี้ pH เท่ากับ 4.00 GEL:GAB เท่ากับ 1.55 และ wall:core เท่ากับ 2.50 อีกทั้งไมโครแคปซูลที่เตรียมขึ้นโดยใช้ภาวะดังกล่าวมีประสิทธิภาพในการเก็บรักษาสารระเหยดีมาก

Vitamin D deficiency is highly prevalent in newly settled refugees in Western Australia (WA). If adherence to daily vitamin D therapy is problematic, depot therapy is a therapeutic alternative. The aim of this studywas to compare daily versus depot treatment and factors influencing the therapeutic outcome. Newly settled refugees (n = 151) with 25(OH)D levels less than 78 nmol/L were randomised to receive daily or depot vitamin D therapy with eight weekly interval follow up to 40 weeks. Blackberries are grown worldwide for commercial fresh markets. Three Arkansas-grown fresh-market blackberry genotypes (‘Natchez’, ‘Ouachita’, and A-2418) were evaluated for consumer sensory and compositional attributes at the University of Arkansas Food Science Department, Fayetteville. The compositional attributes of the blackberries were within an acceptable range for commercial markets (soluble solids=8.20-11.90%, pH=2.79-3.18, titratable acidity=1.09-1.32%). The effect of two novel technologies, also in combination, on germination and growth of soybeans has been investigated. On one side, ultrasound treatment of the seeds increased water uptake without altering the morphology and the wettability of the seed coat, but also induced slight chemical modifications of the outer part of the seed. This study investigated the effects of CO-pretreatments on three bovine muscles: Psoas major (PM), Gluteus medius (GM) and Semitendinosus (ST) on colour stability and quality attributes under anaerobic conditions. Steaks were exposed to one of four pretreatments: 1% CO for 5 h, 5% CO for 5 h, 1% CO for 24 h, with 60% CO2, (balance N2) or untreated (control) and then vacuum packaged and displayed (28 days at 2 °C). Bacterial lipoproteins have been researched for decades due to their roles in a large number of biological functions. There were no structures of their main three membrane processing enzymes, until 2016 for Lgt and LspA, and then 2017 for Lnt with not one but three simultaneous, independent publications. We have analyzed the recent findings for this apolipoprotein N-acyltransferase Lnt, with comparisons between the novel structures, and with soluble nitrilases, to determine the significance of unique features in terms of substrate's recognition and binding mechanism influenced by exclusive residues, two transmembrane helices, and a flexible loop.

High intensity ultrasonication (US) alone or in combination with chemical immersion treatments of lactic acid (3% LA), sodium decanoate (3% SD) and trisodium phosphate (10% TSP) were investigated to reduce populations of Campylobacter jejuni and spoilage organisms in raw chicken. Different experimental conditions were used including a range of temperatures (4°C, 25°C and 54°C) and exposure times (1, 2 and 3min). All combination treatments significantly reduced C. jejuni compared to their individual treatments while only the combination US+SD significantly reduced Total Viable Count (TVC). The increase in antibiotic resistance has become a global challenge to public health. In this study, an atmospheric cold plasma (ACP) system was applied for combating methicillin-resistant Staphylococcus aureus (MRSA) and its methicillin resistance gene (mecA) during food wastewater treatment. Gluten free (GF) diets are prone to mineral deficiency, thus effective monitoring of the elemental composition of GF products is important to ensure a balanced micronutrient diet. The objective of this study was to test the potential of laser-induced breakdown spectroscopy (LIBS) analysis combined with chemometrics for at-line monitoring of ash, potassium and magnesium content of GF flours: tapioca, potato, maize, buckwheat, brown rice and a GF flour mixture. In the present study, organosolv pretreatment strategy was modified for the comprehensive utilisation of spent coffee waste (SCW) for polyphenol extraction and reducing sugar production. A response surface design involving four factors viz. ethanol concentration, temperature, time and H2SO4 concentration was created for optimisation of polyphenol extraction from SCW. 11.2 mg GAE of polyphenol content/g of SCW was obtained using ethanol (68% v/v) at 51 °C for 45 min in the presence of 1.5% H2SO4 as catalyst. Cricket (Acheta domesticus), silkworm pupae (Bombyx mori), and locust (Locusta migratoria) dry flours were obtained to examine the biochemical properties and composition of the flours. This study aimed to characterize the protein and lipid components of three insect species utilizing proximate composition analyses, amino acid composition analysis, protein solubility, SDS-PAGE, fatty acid composition analysis, and thin layer chromatography to determine lipid classes, and lipid extraction efficiency. Kjeldahl determined the cricket, locust, and silkworm flours contained 72.0%, 53.1%, and 71.2% protein, respectively. All proximate composition analyses were significantly (p< 0.05) different between species. Amino acid composition analysis revealed that the flours contained 3.6-3.9% and 0.90-1.5% of lysine and methionine, respectively. Many countries have cereal grains and legumes as a staple in their diet that contain these limiting amino acids. Essential amino acids were 22% of total amino acids. Protein solubility revealed that the three species studied were most soluble in alkaline environments with highest protein solubility occurring at pH 13 at 66% solubility in silkworm. Lowest solubility occurred in more acidic conditions between pH 4-5. SDS-PAGE revealed five major protein fractions with estimated molecular weights of 27 (cuticle proteins), 41 (arginine kinase), which has been identified as an allergen in shrimp, 42 (actin), 71 (hemocyanin), and 220 myosin) kDa. Soxhlet extraction determined cricket, silkworm, and locust flours contained 15.4%, 33.3%, and 11.4% lipid, respectively. The only omega-3 fatty acid found in the flours was α-linolenic acid. Silkworm flour contained the most α-linolenic acid at 33.3% of total fatty acids, followed by locust (13.7%), and cricket (0.6%). TLC resolved lipids for typical lipid classes. The four major lipid classes noted were triacylglycerol, free fatty acid, cholesterol, and phospholipid. Lipid extraction efficiency found that the organic solvents chloroform and methanol had the highest lipid extraction yield in both cricket (69.3%) and locust (93.0%). Methyl-tertiary-butyl ether (MTBE) extracted lipids most efficiently in the silkworm. Proteins and lipids found in insects need to be isolated to further or commercial use.
