ฟีนอลออกซิเดส เป็นเอนไซม์ที่มีหน้าที่สำคัญในกระบวนการเมลาไนเซชัน ซึ่งเป็นส่วนหนึ่งของระบบ ภูมิคุ้มกันแต่กำเนิดในสิ่งมีชีวิตกลุ่มครัสเตเชียน ฟีนอลออกซิเดสจัดอยู่ในกลุ่มโปรตีนที่จับจำเพาะกับทองแดง สามารถเร่งปฏิกิริยาการเปลี่ยนสารประกอบฟีนอลให้เป็นควิโนน ซึ่งสามารถเกิดพอลิเมอไรเซชันต่อไปและกลายเป็นเมลานินซึ่งจุดดำเหล่านี้ก่อให้เกิดความเสียหายทางเศรษฐกิจต่ออุตสาหกรรมอาหารทะเลได้ ส่วนฮีโมไซ ยานินเป็นโปรตีนในกลุ่มที่จับจำเพาะกับทองแดงเช่นเดียวกับฟีนอลออกซิเดส มีหน้าที่ลำเลียงออกซิเจนในเลือด ของครัสเตเชียน และมีรายงานว่าหน่วยย่อยของฮีโมไซยานินมีกิจกรรมของเอนไซม์ฟีนอลออกซิเดสด้วยเช่นกัน แต่ยังไม่มีการระบุแน่ชัดว่าหน่วยย่อยใดของฮีโมไซยานินที่มีความสามารถดังกล่าว งานวิจัยนี้จึงสนใจศึกษา ลักษณะสมบัติและหน้าที่ของหน่วยย่อยฮีโมไซยานินชนิดใหม่ในกุ้ง Litopenaeus vannamei คือ LvHcB จาก การศึกษาด้านชีวสารสนเทศ พบว่า open reading frame ของยีน LvHcB ประกอบด้วยนิวคลีโอไทด์ 2004 คู่เบสถอดรหัสเป็นเพปไทด์ที่มีกรดอมิโน 650 ตัว โดยกรดอะมิโน 17 ตัว เป็นเพปไทด์ส่งสัญญาณ ลำดับกรดอะมิ โน ขอ ง LvHcB มีความ คล้าย กับ LvHcL แล ะ LvHcS เท่ากับ 69% แล ะ คล้าย LvproPO1 เท่ากับ 44% LvproPO2 เท่ากับ 45% และ LvproPO3 เท่ากับ 41% นอกจากนี้ LvHcB ยังมีลักษณะของโปรตีนใน กลุ่มโปรตีนที่จับจำเพาะกับทองแดงเช่นกัน จากการศึกษาหน้าที่ของยีน LvHcB ในกุ้งขาวด้วยเทคนิคอาร์เอ็นเอ อินเตอร์เฟียเรนซ์ พบว่าการลดการแสดงออกของยีน LvHcB ในกุ้งขาวด้วยการฉีด อาร์เอ็นเอสายคู่ที่จำเพาะต่อ ยีน LvHcB เข้าสู่กุ้ง ทำให้ปริมาณทรานสคริปต์ของยีน LvHcB ลดลงโดยไม่ลดปริมาณทรานสคริปต์ของยีนอื่นที่ เกี่ยวข้องกับเมลาโนซิส และยังพบว่ากุ้งที่มีการแสดงออกของยีน LvHcB ลดลงมีกิจกรรมของเอนไซม์ฟีนอลออกซิเดสน้อยกว่ากุ้งกลุ่มควบคุมที่ฉีดด้วยอาร์เอ็นเอสายคู่ของยีน GFP เมื่อตรวจสอบการเกิดเมลาโนซิสโดยการวัดสี ด้วยระบบ CIE L* a* b* พบว่า ΔE value ของกุ้งที่ถูกลดการแสดงออกของยีนด้วย LvHcB dsRNA มีค่าสูงกว่า กุ้งในกลุ่ม …

ความนิยมของกลุ่มผู้บริโภคที่ใส่ใจต่อสุขภาพในปัจจุบันส่งผลให้แนวโน้มการตลาดของผลิตภัณฑ์เกษตรอินทรีย์เพิ่มสูงขึ้น น้ำนมดิบและผลิตภัณฑ์นมที่ได้จากฟาร์มโคนมอินทรีย์ซึ่งเน้นรูปแบบการเลี้ยงที่เป็นธรรมชาติ เลี้ยงโคด้วยพืชอาหารสัตว์ที่เป็นอาหารหยาบมากขึ้น ปลอดจากการใช้สารเคมีและยาปฏิชีวนะ จัดเป็นหนึ่งกลุ่มสินค้าที่มีมูลค่าสูง ส่งผลให้มีความต้องการพัฒนาวิธีการตรวจสอบคุณภาพ โดยเฉพาะการเปลี่ยนแปลงขององค์ประกอบทางเคมีในน้ำนมที่เป็นผลมาจากกระบวนการจัดการฟาร์มแบบอินทรีย์ เพื่อใช้ระบุอัตลักษณ์ของผลิตภัณฑ์กลุ่มดังกล่าว ปัจจุบันมีการนำเทคโนโลยีเมตาโบโลมิกส์ (metabolomics) มาประยุกต์ใช้เพื่อวิเคราะห์ข้อมูลสารชีวโมเลกุลขนาดเล็กที่เป็นองค์ประกอบในระบบอาหารอย่างกว้างขวาง อย่างไรก็ตามงานวิจัยที่ประยุกต์ใช้เทคโนโลยีดังกล่าวเพื่อศึกษาข้อมูลแบบแผนทางชีวโมเลกุลของน้ำนมและผลิตภัณฑ์นมในประเทศไทยยังมีอยู่อย่างจำกัด ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อ (i) วิเคราะห์ข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและกรดไขมันในน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์และฟาร์มโคนมทั่วไปโดยใช้เทคนิค 1H-NMR และ GC-FID (ii) เปรียบเทียบความแตกต่างระหว่างข้อมูลดังกล่าวในน้ำนมดิบทั้งสองกลุ่มด้วยวิธีการวิเคราะห์ทางสถิติหลายตัวแปร และ (iii) วิเคราะห์หาสารเมตาบอไลต์และกรดไขมันที่สามารถใช้เป็นตัวบ่งชี้ทางชีวภาพเพื่อระบุอัตลักษณ์ทางชีวโมเลกุลของน้ำนมอินทรีย์ ผลการวิจัยพบว่าสามารถระบุชนิดของสารเมตาบอไลต์ชนิดระเหยยากและกรดไขมันในน้ำนมได้ทั้งหมด 47 และ 22 สาร ตามลำดับ ผลจากการวิเคราะห์แบบจัดกลุ่ม (HCA) และการวิเคราะห์จำแนกกลุ่มด้วยการถดถอยกำลังสองน้อยที่สุด (PLS-DA) แสดงให้เห็นว่าสามารถแยกข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและข้อมูลกรดไขมันของกลุ่มตัวอย่างน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์ออกจากฟาร์มโคนมทั่วไปได้ โดยสามารถใช้ค่าปริมาณสัมพัทธ์ของสารเมตาบอไลต์ชนิด 1,6-anhydro-β-D-glucose, betaine, N-acetylaminoacid, histidine, acetoacetate, formate, 4-pyridoxate, acetylcarnitine, N-acetylglutamate, hippurate และกรดไขมันชนิด undecanoic acid, myristoleic acid, caprylic acid, lauric acid, capric acid, tridecanoic acid, cis-8,11,14-eicosatrienoic acid, linolenic acid, caproic acid และ myristic acid เป็นตัวบ่งชี้ทางชีวภาพเพื่อแยกความแตกต่างระหว่างน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์และฟาร์มโคนมทั่วไปได้ ผลการวิจัยดังกล่าวแสดงให้เห็นถึงการประยุกต์ใช้เทคโนโลยีเมตาโบโลมิกส์ในการระบุอัตลักษณ์ทางชีวโมเลกุลของน้ำนมอินทรีย์ได้อย่างมีประสิทธิภาพ

กลิ่นรสในอาหาร (flavor) ถือเป็นปัจจัยสำคัญที่ทำให้ผู้บริโภคยอมรับผลิตภัณฑ์อาหาร สารให้กลิ่นรสที่เติมลงไปในผลิตภัณฑ์อาหารสามารถเกิดอันตรกิริยากับโปรตีนที่เป็นส่วนประกอบในอาหารได้ ซึ่งอาจทำให้เกิดปัญหากลิ่นรสในอาหารจางลง (flavor fade) งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของการดัดแปรโปรตีนด้วยวิธีดีแอมิเดชันโดยเอนไซม์โปรตีนกลูทามิเนส (PG) ต่อสมบัติด้านการจับกลิ่นรสของโปรตีนจากมะพร้าวด้วยเทคนิค equilibrium dialysis โดยใช้วานิลลินเป็นตัวแทนสารให้กลิ่นรส โดยนำโปรตีนมะพร้าวที่ไม่ผ่านการดัดแปร (untreated coconut protein; CP) และโปรตีนมะพร้าวที่ผ่านการดัดแปร (deamidated coconut protein; DCP) ความเข้มข้น 3% (w/v) ในสารละลายฟอสเฟตบัฟเฟอร์ความเข้มข้น 0.05 โมลาร์ (pH = 7.0) ทำอันตรกิริยากับวานิลลินที่ ความเข้มข้นต่าง ๆ (10 - 100 ppm) ที่อุณหภูมิ 5, 15, และ 25 °C ตัวแปรการจับได้แก่ จำนวนพื้นที่ที่โปรตีนจับกับสารให้กลิ่นรส (n) และค่าคงที่ของการจับกัน (K) หาได้จากกราฟ Klotz plots จากผลการศึกษาแสดงให้เห็นว่าการดัดแปรด้วยวิธีดีแอมิเดชันโดยเอนไซม์ PG (36.12 % degree of deamidation) ลดความสามารถในการจับกลิ่นรสโดยรวมของโปรตีนมะพร้าวต่อวานิลลินลง นอกจากนี้การจับกลิ่นรสโดยรวมของโปรตีนมะพร้าวกับวานิลลินลดลงเมื่ออุณหภูมิเพิ่มขึ้น ตัวแปรทางอุณหพลศาสตร์ของการจับกันบ่งชี้ว่าการเกิดอันตรกิริยาระหว่างวานิลลินกับโปรตีนมะพร้าวเป็นปฏิกิริยาที่สามารถเกิดขึ้นได้เอง (- ∆G°) และอันตรกิริยาขับเคลื่อนโดยเอนทาลปี กลไกของการจับกันของ CP และ DCP กับวานิลลินเป็นการเกิดผ่านแรง van der Waals หรือพันธะไฮโดรเจน นอกจากนี้ยังพบว่าความเข้มข้นต่ำสุดที่รับรู้ได้ของวานิลลินในตัวอย่าง DCP ต่ำกว่าในตัวอย่าง CP จากผลการศึกษาบ่งชี้ว่าการดัดแปรโปรตีนมะพร้าวด้วยวิธีดีแอมิเดชันโดยเอนไซม์โปรตีนกลูทามิเนส สามารถลดการจับของโปรตีนมะพร้าวกับวานิลลินลงได้ และยังพบว่าโปรตีนมีโมเลกุลขนาดเล็กเพิ่มขึ้นหลังจากดัดแปรด้วยดีแอมิเดชัน

น้ำมันหอมระเหยกะเพรา (Ocimum sanctum Linn.) มีองค์ประกอบที่เป็นสารระเหยให้กลิ่น จัดอยู่ในกลุ่มโมโนเทอร์พีน โมโนเทอร์พีนอยด์ ฟีนิลโพรพานอยด์ เซสควิเทอร์พีน และ เซสควิเทอร์พีนออกไซด์ นิยมใส่ในผลิตภัณฑ์อาหารและเครื่องดื่มเพื่อให้ผลิตภัณฑ์มีกลิ่นเฉพาะที่เป็นเอกลักษณ์ แต่อย่างไรก็ตามสารระเหยให้กลิ่นส่วนใหญ่ไม่คงตัวและระเหยได้ง่ายเมื่อผ่านกระบวนการแปรรูปหรือเก็บรักษาไว้เป็นเวลานาน ประกอบกับน้ำมันหอมระเหยมีสมบัติในการละลายน้ำที่ไม่ดี จึงมีการใช้เทคนิคการห่อหุ้ม (encapsulation) ด้วยบีตา-ไซโคลเดกซ์ทริน (β-CD) เกิดเป็นสารประกอบอินคลูชัน ช่วยให้สารระเหยให้กลิ่นในน้ำมันหอมระเหยมีความคงตัวมากขึ้น งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของการเกิดสารประกอบอินคลูชัน β-CD กับน้ำมันหอมระเหยกะเพราต่อความคงตัวของสารระเหยให้กลิ่นสำคัญเมื่อผ่านการให้ความร้อนและการเปลี่ยนแปลงระหว่างการเก็บรักษาเป็นเวลา 3 เดือน ในขั้นต้น ศึกษาองค์ประกอบและปริมาณของสารระเหยให้กลิ่นในน้ำมันหอมระเหยกะเพราด้วยเทคนิค gas chromatography–mass spectrometry (GC-MS) พบสารระเหยให้กลิ่นหลัก คือ β-caryophyllene (19,443 ppm), eugenol (16,280 ppm) และ methyl eugenol (8,140 ppm) และสารระเหยให้กลิ่นสำคัญจากการคำนวณค่า odor activity value (OAV) คือ eugenol (1,662,224), linalool (1,462,500), eucalyptol (527,333), β-caryophyllene (303,797), copaene (139,166), methyl eugenol (119,705) และ estragole (115,250) หลังจากนั้นศึกษาสมบัติทางเคมีกายภาพของสารประกอบอินคลูชัน β-CD เพื่อเลือกอัตราส่วน (สัดส่วนโดยโมลของน้ำมันหอมระเหยกะเพรา: β-CD) ที่เหมาะสม พบว่าที่อัตราส่วน 1:5 มีปริมาณผลผลิตในการห่อหุ้ม (EY) และประสิทธิภาพในการห่อหุ้มน้ำมันหอมระเหย (EE) สูงที่สุดคือ 59.72% และ 57.01% ตามลำดับ ในขณะที่มีค่าความสามารถในการบรรจุน้ำมันหอมระเหย (LC) คือ 8.25% และความสามารถในการละลายน้ำ 20.50% ซึ่งแตกต่างกับค่าการละลายของ β-CD ปกติอย่างมีนัยสำคัญ (p≤0.05) เมื่อตรวจสอบสมบัติทางเคมีกายภาพของสารประกอบอินคลูชันด้วยเทคนิค thermo gravimetry analysis (TGA) และวิเคราะห์หมู่ฟังก์ชันด้วยเทคนิค fourier …

งานวิจัยนี้มีจุดประสงค์เพื่อศึกษาผลของความเข้มข้นของเอทานอล (60 80 และ 100% v/v) และระยะเวลา (10 20 และ 30 นาที) ในการสกัดใบหม่อนโดยใช้คลื่นอัลตราซาวนด์ช่วย (ultrasound-assisted extraction) ต่อฤทธิ์การต้านอนุมูลอิสระของสารสกัดใบหม่อน โดยออกแบบการทดลองแบบ 32 factorial in completely randomized design (CRD) ศึกษาผลของการเอนแคปซูเลชันด้วยวิธีการทําแห้งแบบพ่นฝอยต่อเสถียรภาพของสารสกัดใบหม่อน และศึกษาผลของบรรจุภัณฑ์ 2 ชนิด (ถุงอะลูมิเนียมฟอยล์ลามิเนต และถุง high density polyethylene, HDPE) ร่วมกับภาวะการบรรจุ 2 ภาวะ (ภายใต้ภาวะบรรยากาศ และภายใต้ภาวะสุญญากาศ) ต่อเสถียรภาพของไมโครแคปซูลสารสกัดใบหม่อนระหว่างการเก็บรักษา ที่อุณหภูมิห้อง เป็นเวลา 60 วัน จากผลการทดลองพบว่าภาวะในการสกัดด้วยความเข้มข้นเอทานอล 60% v/v เวลา 30 นาที สารสกัดใบหม่อนมีปริมาณสารฟลาโวนอยด์ทั้งหมด (5.54±0.17 mg quercetin equivalent/100 g dry basis (db)) สารประกอบฟีนอลิกทั้งหมด (1505.63±4.79 mg gallic acid equivalent/100 g db) ฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH (619.56±2.12 µM trolox/g db) และ FRAP (961.17±59.72 µM trolox/g db) สูงที่สุด และเลือกภาวะการสกัดนี้ในการศึกษาผลของการเอนแคปซูเลชันด้วยวิธีทำแห้งแบบพ่นฝอยโดยใช้มอลโตเดกซ์ทริน มอลโตเดกซ์ทรินต้านทานการย่อย และกัมอารบิก เป็นสารห่อหุ้มที่อัตราส่วนสารสกัดและสารห่อหุ้มที่แตกต่างกัน ผลการศึกษาสมบัติทางกายภาพพบว่า ไมโครแคปซูลที่ใช้มอลโตเดกซ์ทรินต้านทานการย่อยเป็นสารห่อหุ้มที่อัตราส่วน 1:1 มีร้อยละของผลผลิตและประสิทธิภาพในการกักเก็บสูงที่สุด อีกทั้งผลของชนิดและอัตราส่วนของสารห่อหุ้มไม่มีผลต่อความสามารถในการละลายของไมโครแคปซูลสารสกัดใบหม่อน โดยทุกตัวอย่างมีความสามารถในการละลายมากกว่า 90% ไมโครแคปซูลสารสกัดใบหม่อนทุกตัวอย่างมีอุณหภูมิการเปลี่ยนสถานะคล้ายแก้วสูงกว่าอุณหภูมิห้อง (Tการเก็บรักษา < Tg) ในขณะที่ปริมาณความชื้นและค่ากิจกรรมของน้ำของทุกตัวอย่างต่ำกว่า 8% และ 0.6 ตามลำดับ ซึ่งเป็นไปตามมาตรฐานผลิตภัณฑ์อาหารแห้ง จากผลการวิเคราะห์ค่าสีของไมโครแคปซูลสารสกัดใบหม่อนพบว่าทุกอย่างมีสีเขียวอมเหลือง และจากการศึกษาลักษณะโครงสร้างพื้นผิวของไมโครแคปซูลสารสกัดใบหม่อนด้วยกล้องจุลทรรศน์อิเล็กตรอนแบบส่องกราด พบว่าไมโครแคปซูลสารสกัดใบหม่อนที่ใช้มอลโตเดกซ์ทรินต้านทานการย่อยเป็นสารห่อหุ้มมีรูปรูปร่างทรงกลม พื้นผิวเรียบมากกว่าการใช้สารห่อหุ้มชนิดอื่น ในขณะที่ไมโครแคปซูลสารสกัดใบหม่อนที่ใช้มอลโตเดกซ์ทรินและกัมอารบิกเป็นสารห่อหุ้มพื้นผิวมีรอยบุบโดยรอบ และเมื่อพิจารณาฤทธิ์การต้านอนุมูอิสระพบว่าไมโครแคปซูลสารสกัดใบหม่อนที่ใช้กัมอารบิกเป็นสารห่อหุ้มที่อัตราส่วน 1:2 มีฤทธิ์การต้านอนุมูอิสระด้วยวิธี DPPH (184.43±2.70 µM trolox equivalent/g db) และ FRAP (239.39±1.91 µM trolox equivalent/g db) สูงสุด และเลือกภาวะการเอนแคปซูเลชันด้วยการทำแห้งแบบพ่นฝอยนี้ไปใช้ในการศึกษาอายุการเก็บรักษา โดยวิเคราะห์ปริมาณความชื้น ค่ากิจกรรมของน้ำ ค่าสี (L* a* b* และ ∆E*) ฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และ FRAP ปริมาณสารฟลาโวนอยด์ทั้งหมด และปริมาณสารประกอบฟีนอลิกทั้งหมด จากการศึกษาการเปลี่ยนแปลงคุณภาพของไมโครแคปซูลสารสกัดใบหม่อนระหว่างการเก็บรักษาพบว่าเมื่ออายุการเก็บรักษาเพิ่มขึ้น ค่าความแตกต่างของสี (∆E*) ปริมาณความชื้น และค่ากิจกรรมของน้ำมีแนวโน้มเพิ่มขึ้น ในขณะที่ฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และ FRAP ปริมาณสารฟลาโวนอยด์ทั้งหมด และปริมาณสารประกอบฟีนอลิกทั้งหมดมีค่าลดลง และพบว่าไมโครแคปซูลสารสกัดใบหม่อนที่บรรจุในถุงอะลูมิเนียมฟอยล์ลามิเนตบรรจุภายใต้ภาวะสุญญากาศ มีแนวโน้มการเปลี่ยนแปลงของสมบัติทางกายภาพ และฤทธิ์การต้านอนุมูลอิสระน้อยที่สุด เมื่อเปรียบเทียบกับไมโครแคปซูลสารสกัดใบหม่อนที่บรรจุในบรรจุภัณฑ์ชนิดอื่น ๆ ระหว่างการเก็บรักษาที่อุณหภูมิห้อง เป็นเวลา 60 วัน งานวิจัยนี้สามารถใช้เป็นแนวทางในการพัฒนาการผลิตและเก็บรักษาไมโครแคปซูลสารสกัดจากธรรมชาติที่มีฤทธิ์การต้านอนุมูลอิสระเพื่อประโยชน์ในการประยุกต์ใช้ในผลิตภัณฑ์อาหารเพื่อสุขภาพต่อไป

The aims of this research were to study the effect of different cooking conditions on bioactive compounds and biological activities of cooked adzuki beans and cooking water. The different encapsulation methods to entrap adzuki beans hydrolysate were investigated. The release characteristics of different freeze-dried alginate particles were investigated after in vitro simulated gastrointestinal digestion. The results showed that all cooking conditions (60-min boiling, 10-min autoclaving and 60-min autoclaving) caused a significant reduction in crude protein, TCA-soluble peptides, free amino groups, total phenolic content (TPC) and total flavonoid content (TFC) in cooked adzuki beans (p ≤ 0.05). Direct cold plasma treatment has been investigated as an alternative non-thermal technology as a means of maintaining and improving quality of fresh cloudy apple juice. Process variables studied included type of plasma discharge, input voltage and treatment time on polyphenol oxidase (PPO) inactivation. Spark discharge plasma at 10.5 kV for 5 min was the best treatment, with near total inactivation of PPO achieved, although good PPO inactivation was also recorded using shorter treatment times. Coeliac disease (CD) is an autoimmune disorder triggered by the ingestion of gluten that is associated with gastrointestinal issues, including diarrhea, abdominal pain, and malabsorption. Gluten is a general name for a class of cereal storage proteins of wheat, barley, and rye that are notably resistant to gastrointestinal digestion. After ingestion, immunogenic peptides are subsequently recognized by T cells in the gastrointestinal tract. The only treatment for CD is a life-long gluten-free diet. The safety of oats for people with celiac disease remains unresolved. While oats have attractive nutritional properties that can improve the quality and palatability of the restrictive, low fiber gluten-free diet, rigorous feeding studies to address their safety in celiac disease are needed. Assessing the oat prolamin proteins (avenins) in isolation and controlling for gluten contamination and other oat components such as fiber that can cause non-specific effects and symptoms is crucial. The objective of this study was to determine the effects of processing variables (germination time, roasting temperature and time) on the phytonutrients and antioxidants activity of millet. The germination time employed in this study ranged from 24 - 72 h, roasting temperature ranged from 112.5 -120.0°C and the roasting time ranged from 15-21 min based on an earlier preliminary study. All samples exhibited antioxidant properties and these properties were dose dependent. This study provided understanding of the oil yields from Allanblackia parviflora fruits in Ghana. The study sought patterns of variations in oil yield between 157 trees, 16 communities and 3 ecological zones. Ecological zone and soil properties were considered as surrogates for growing conditions associated with tree and fruit morphology. Kernel and seed oil yields were determined using the manual screw press ranged from 31.3 to 61.8% and 0.2 to 36.8%, respectively. Large variations were observed between individual trees, and significant oil yield differences were observed between the 16 communities. This study experimentally evaluated the thermal performance of selected oils in Uganda for indirect solar domestic cooking applications. The oil samples used were refined sunflower oil, refined palm oil and thermia B. These oils are locally available in Uganda. Thermal stratification, energy and exergy analysis were performed for each oil to determine their suitability for Thermal Energy Storage (TES) using a thermosiphon principle. A novel HPLC-MS method was established, using a synthesized rhodamine B hydrazide (RBH) as the new pre-colunm derivatization reagent. After extracted with methanol and derivatized with RBH, the samples were determined by high-performance liquid chromatography(HPLC) coupled with mass spectrometry(MS). The results showed that the reagent RBH has a good sensitivity for mass spectrometry detection, and the derivatization reaction of benzaldehyde was efficient and specific. The benzaldehyde showed a good linear relationship in the range of 0.05~6.00 ng/mL, and the correlation coefficient was 0.996 2. In order to study the effects of aging time, cooking degree and their interaction on beef flavor components, the longissimus dorsi of Simmental cattle in the process of aging time (3, 5, 7 d) were selected to make steaks of medium, medium well and well done. In order to provide scientific basis for the utilization of citrus resource and improvement of comprehensive utilization value of fruits, the ultra-performance liquid chromatography (UPLC) was used to determine the main phenolic substances (flavonoied and phenolic acids) in nine Chinese late-maturing citrus. The different phenolic compounds and their contents were analyzed in pulp, juice and peel. In order to investigate the content of thiocyanate in raw milk, tracked the content of thiocyanate in 930 milk samples from 21 cattle-raising areas in Hebei Province in the past two years from 2014 to 2015. The results showed that the content of thiocyanate in those 930 milk samples ranged from 1.86 to 11.92 mg/L, and the detection rate was 100%. The results suggested that the thiocyanate in raw milk was all originated from the background, and there was no artificial addition. It was also found that the seasonal distribution of thiocyanate content in raw milk had no significant difference. …

The changes of amino acid and other related indexes in chicken soups which were concentrated under atmospheric pressure and vacuum were studied. The results were as follows: with the increase of concentration ratio, the contents of crude protein, oligopeptide and reducing sugar in chicken soups were gradually reduced.
