Jiao Sanxian (JSX) consists of three traditional Chinese medicine including charred hawthorn, malt and Liu Shen Qu, they are also from Chinese medicine homologous food. It is commonly used to relieve functional dyspepsia (FD). The present study aims to explore the mechanism of JSX (granule), with the addition of prebiotics for the treatment of FD using mice model. The network pharmacology and molecular docking were used to forecast therapeutic targets for JSX. Based on the protein-protein interaction (PPI) results, thirteen targets exhibited strong interactions with each other. [Objective] To develop low -burden,high -nutrient functional baked foods.[Methods] A single -factor experimental design is employed,with rapid visco analyzer,rheometer,and differential scanning calorimeter to analyze the physicochemical properties of heat -moisture modified wheat flour.The cookie formula is optimized based on sensory evaluation.[Results] Heat -moisture treatment significantly enhances the pasting stability and resistant starch content of wheat flour.The optimal auxiliary ingredient formula is 50 g of heat-moisture modified wheat flour,20 g of oat flour,10 g of mung bean flour,and 6 g of resistant dextrin powder.Compared with the control group,the cookies made from the experimental formula show a significantly lower digestibility,with a glycemic …

This study investigated the use of 3D printing to co-encapsulate, protect, and enhance the bioaccessibility of lutein and anthocyanins. Coaxial extrusion 3D printing in a spiral-cube geometry was utilized with lutein-loaded zein as the core material and anthocyanins-loaded corn starch paste as the shell material. The research examined various printing conditions, including starch concentrations of 10% and 11%, and printing temperatures ranging from 45 °C to 85 °C. A comprehensive analysis of the inks’ properties, such as printability, viscosity, microstructural characteristics, storage stability, and bioaccessibility of the encapsulated compounds, was conducted. Foodborne pathogens pose significant risks to public health and food safety, necessitating innovative control strategies. High-pressure processing (HPP) was evaluated as an intervention against Listeria monocytogenes in cold-smoked rainbow trout, with treatments at 500 MPa and 4.4 °C and 60.0 °C achieving up to a 5.03 log CFU/g reduction. The efficacy of nisin in suppressing Listeria monocytogenes and Listeria innocua during refrigerated storage was also examined, demonstrating significant microbial inhibition, particularly in the early storage phase, supporting its application as a hurdle technology. Fresh-market blackberries face challenges with inconsistent flavor, limiting consumer demand. This study examines how harvest date and environmental conditions impact the physicochemical and volatile profiles of three cultivars (Sweet-Ark (R) Ponca, Sweet-Ark (R) Caddo, and Ouachita) grown in Fayetteville, AR, during the 2022-2023 seasons. Using targeted and untargeted GC-MS/MS approach, 262 volatile compounds across 12 classes were identified. Increased rainfall and cooler temperatures in 2023 positively affected Ouachita and Sweet-Ark (R) Caddo's physical attributes but reduced Sweet-Ark (R) Ponca's firmness and weight. While diet is known to affect gut microbes, less attention has been given to how food processing methods, such as heating, fermentation, and cold processing, change food in ways that influence the gut microbiome and health. Hepatitis A viral outbreaks continue to occur. It can be transmitted through aerosolized droplets and thus can contaminate surfaces and the environment. Ultraviolet light emitting diode (UV-C LED) systems are used for inactivation of microbes, though research is needed to determine optimal doses for aerosolized HAV inactivation. This study evaluates the UV-C LED doses for the inactivation of aerosolized hepatitis A virus (HAV) deposited on stainless-steel and glass discs. Two studies investigated various aspects of channel and hybrid catfish production and processing. The first study examined the effects of ammonia stress (15 mg/L vs. 1 mg/L control) on growth performance and fillet quality. While channel catfish demonstrated superior growth, ammonia stress minimally impacted the sensory profiles of both species. Gut microbiota analysis revealed species-specific differences, with Lactococcus lactis dominating hybrid catfish communities. The second study evaluated buffered vinegar treatment (1.5%) on fillet shelf life during refrigerated storage. Vinegar-treated fillets maintained better microbiological quality, with aerobic plate counts remaining below 7 log cfu/g through day 6, while untreated fillets exceeded …

The objective of this research was to investigate the biopreservative effects of chitosan and lemon essential oil in slush ice treatments on the microbial shelf life of refrigerated catfish fillets. Catfish fillets were stored in slush ice treatments containing chitosan (CH), lemon essential oil (LO), a combination (CH+LO), water (CTRL), and no slush (NS) for three d at 4 C, then stored at 4C for twelve d post-slush. The growth of background microflora in catfish fillets treated with CH and CH+LO was reduced (P<0.05), maintaining total aerobic counts below 4.5 log CFU/g, while the control reached spoilage levels (>7 log CFU/g) by Day 6. Salmonella contamination in cookie dough poses a threat to consumers. This study investigated the effect of X-ray irradiation on Salmonella-inoculated ready-to-bake chocolate chip cookie dough and its impact on dough quality. A Salmonella cocktail (~10 log CFU/g) was prepared and inoculated into cookie dough samples (~6.5 log CFU/g) and then treated with X?ray irradiation (0.25, 0.5, and 1 kGy). Salmonella decreased by 1.15, 1.79, and 2.49 log CFU/g, at an exposure of 0.25, 0.5, and 1 kGy, respectively. Quality parameters (pH, aw, and colorimetry) were evaluated for two brands. [Objective ] This study aims to investigate the immunoregulatory mechanisms of lactoferrin formula and its four nutritional components (α-lactalbumin,N-acetylneuraminic acid,yeast β-glucan,and lactoferrin ) in RAW 264.7 macrophages.[Method ] M1 and M 2 macrophage polarization were induced by lipopolysaccharides (LPS) and interleukin (IL)-4,respectively.Quantitative real-time PCR,flow cytometry,and Western blot were employed to analyze macrophage polarization and related signaling pathways.[Result ] Lactoferrin formula enhanced the phagocytic activity of macrophages and dose-dependently inhibited M 1 polarization while promoting M 2 polarization within the range of 10~50 µg/mL.A combination of four nutritional components exhibited similar effects,with greater effects than the three-component combination.Additionally,the lactoferrin formula upregulated …

[Objective ] The aim of this study is to explore the effects of dextran with a small molecular weight (SDex ) on the viability of intestinal microorganisms.[Method ] The probiotic effects of laboratory-designed SDex containing only α-1,6 glycosidic bonds was evaluated by in vitro fermentation with nine typical intestinal strains,including strains from the genera Bifidobacterium and Lactobacillus,as well as species such as Escherichia coli and Enterococcus faecalis.The microbial proliferation and organic acid production during fermentation were compared among SDex,commercial dextran 20 (Dex 20),and isomalto-oligosaccharides (IMOs ).[Result ] SDex and IMOs significantly promoted the proliferation of probiotics such as Bifidobacterium and …

The CRISPR/Cas system can recognize foreign DNA,cut the target,and block or silence the expression of the foreign gene.Due to its precise targeting function,the CRISPR/Cas system has been developed as a highly efficient gene editing tool.With high specificity and operability,the CRISPR/Cas system has been combined with biosensors to improve the detection specificity and efficiency of the sensors.This review introduces the characteristics and applications of CRISPR/Cas system,analyzes the latest progress in the application of CRISPR/Cas system-based biosensors in the detection of foodborne pathogens,and summarizes and prospects the application of such biosensors.

[Objective ] This study aims to evaluate the antibiotic resistance and transmission risk of Enterococcus faecalis (E.faecalis ) in the pork production chain.[Method ] A total of 300 samples were collected from the surface of live pigs,carcasses,and the environment in 2 pig farms,1 slaughterhouse,and 2 markets in Hangzhou,Zhejiang.The strain identification,antibiotic resistance phenotypes,resistance genotypes,and virulence genotypes were performed by 16S rDNA sequences,broth microdilution method (MIC ),and PCR.In addition,multilocus sequencing typing (MLST ) and conjugational transfer tests were conducted.[Result ] The 125 isolates of E.faecalis showed high resistance to antibiotics such as tiamulin,tetracycline,and doxycycline,and the isolates from pig farms showed higher antibiotic …

[Objective ] Functional constipation is a chronic gastrointestinal disorder caused by multiple factors,with a relatively high and increasing prevalence in China.Previous studies have found that Bacillus coagulans (B.coagulans )CCFM 1041 can alleviate symptoms of functional constipation in mice.[Method ] A double-blind,randomized controlled clinical trial was conducted to evaluate the clinical efficacy of CCFM 1041 in relieving functional constipation.A total of 73 participants were observed for changes in constipation-related indicators,serum levels of gastrointestinal regulatory neurotransmitters,and gut microbiota before and after the intervention.[Result ] After taking CCFM 1041,84.2% of participants experienced increased bowel movement frequency,and 94.7% of participants showed improved stool consistency.Compared …

[Objective ] This study aims to identify honey authenticity by terahertz (THz) spectroscopy.[Method ] Different honey samples were analyzed by stable isotope ratio mass spectrometry (IRMS ),and the results served as a reference for terahertz spectroscopy.The sample requirements and analytical conditions of terahertz spectroscopy were verified by comparing the results of these two methods.[Result ] Liquid honey samples exhibited no discernible absorption peaks.However,significant differences in refractive index were observed among samples.The presence of water in liquid honey,particularly at high levels,affected the refractive index,potentially leading to misjudgment.After removal of water from liquid honey via freeze-drying,terahertz attenuated total reflection was employed for …
