Low-moisture food (LMF) processing environments pose a persistent food safety risk due to Salmonella survival and harborage on surfaces. This work investigates persistent bacterial populations (PBPs) in LMF production environments, focusing on identifying a suitable surrogate and evaluating sanitation strategies. Three potential surrogates, Escherichia coli MP 26, Enterococcus faecium, and Pediococcus acidilactici, were compared to Salmonella PBPs formed in nonfat dry milk (NFDM) on stainless steel coupons stored at 25°C under 30% or 70% relative humidity (RH) using two different inoculation methods. E. faecium showed survival patterns most similar to Salmonella, with no significant differences in log reductions (p > 0.05), …

Food science provides an opportunity to engage high school students in Science, Technology, Engineering, and Mathematics (STEM) by connecting classroom concepts to real-world applications. Despite the field’s relevance to public health, food safety, sustainability, and innovation, food science remains largely absent from high school curricula, and few students recognize it as a viable STEM pathway. This research addressed this gap by evaluating immersive summer camp experiences and teacher-focused curriculum review as strategies to increase food science awareness and interest among students and educators. Cardiovascular diseases are one of the leading causes of mortality worldwide in which hypertension is a risk factor. Present pharmacological interventions require long-term adherence to the therapy and are often associated with undesirable side effects. Moreover, treatments have overlooked the role of the microbiome in the development of hypertension. This article presents the development of a 3D food printing (3DFOODP) system incorporating a core-shell structure to encapsulate a model compound, methylene blue (MB). A coaxial nozzle configuration was employed to fabricate 3D-printed samples, featuring a starch core and a pH-responsive alginate-pectin (Al-P) shell. The optimal 3D printing conditions were determined as 11 wt% starch as the core along with 2 wt% Al-P with 0.02 M CaCl2 as the shell at printing temperatures of 95 degrees C and ambient temperature (23 degrees C), respectively. The overall 3D printability at this condition was 98 %, closely matching the digital 3D design. …

Prion diseases are fatal neurodegenerative disorders caused by the misfolding of the normal prion protein (PrPC) into its infectious form (PrPSc). While the zoonotic potential of chronic wasting disease (CWD) remains uncertain, the presence of prions in food products raises public health concerns. Additionally, therapeutic strategies for prion diseases remain limited. This thesis presents a methodological exploration of the Protein Misfolding Cyclic Amplification (PMCA) technique to address these challenges in two key areas: (1) detecting CWD prions in processed meats subjected to common cooking procedures, and (2) identifying potential anti-prion compounds through a high-throughput PMCA adaptation. …

This study aims to investigate detergent sodium deoxycholate (SDC) and sodium dodecyl sulphate (SDS) treatments, with a focus on each detergent's ability to enhance the extraction of immune-related proteins from camel milk fat globular membrane. Milk was separated into cream and skimmed milk. The cream was then treated using 0.4 % SDS, 2 % SDC, 6 % SDC or 10 % SDC. Extracted proteins were trypsin digested and analysed using liquid chromatography-tandem mass spectrometry. Higher SDC concentrations (6 % and 10 %) resulted in marginal improvements in protein identification (44 unique protein groups). Protein abundance distributions showed minimal differences across …

[Objective ] This study aims to explore the ameliorating effects of flavonoids on atopic dermatitis (AD) and their structure-activity relationships.[Method ] Flavonoids were selected through network pharmacology with interleukin- 4 (IL-4) and interleukin- 13 (IL-13) as key targets.The immunoglobulin E (IgE)-induced RBL- 2H3 cell model was employed to evaluate the effects of flavonoids on inflammatory factors,degranulation activities,and calcium ion influx,and the structure-activity relationships were analyzed.Finally,molecular docking was utilized to assist in exploring the action mechanism.[Result ] All of the six flavonoids (luteolin,apigenin,chrysin,quercetin,kaempferol,and fisetin ) screened by network pharmacology had significant inhibitory effects on the expression of IL- 4,IL- 13,tumor necrosis …

[Objective ] This study aims to improve the properties of chestnut starch.[Method ] Tea polysaccharides were added to chestnut starch in different proportions,and the effects of tea polysaccharides on the water-holding capacity,digestive properties,textural properties,and other properties of chestnut starch were investigated.[Result ] The water-holding and oil-holding properties of chestnut starch were the largest when tea polysaccharides were added at 1% and then gradually decreased with the increase in the proportion of tea polysaccharides added.The transparency of chestnut starch gradually increased when tea polysaccharides were added from 1% to 8% and decreased significantly when tea polysaccharides were added at 16%.Adding tea …

The antioxidant properties of lactic acid bacteria are related to various probiotic activities,which can prevent and alleviate a variety of chronic diseases caused by oxidation in the host.The antioxidant mechanisms of lactic acid bacteria,including the action mechanisms of antioxidant enzymes and non-enzymatic antioxidants and regulation of host signaling pathways,were expounded.Furthermore,the application status of antioxidant properties of lactic acid bacteria in diseases of the nervous system,digestive system,and skin system were summarized.The aim is to explore how to enhance the antioxidant activity of lactic acid bacteria in oxidative stress-related diseases and give new insights into the development of related treatment strategies.

[Objective ] A genome-scale metabolic model (GSMM ) of the high L-malic acid-producing strain Aspergillus oryzae (A.oryzae ) FMME-S- 38 was constructed and analyzed.[Method ] The new GSMM iJW1333 was established for A.oryzae FMME-S- 38 through a two-step process of draft reconstruction and model refinement.[Result ] The model integrated 1 723 biochemical reactions,1 723 metabolites,and 1 333 functional genes,achieving the prediction accuracy of 94.6% for substrate metabolism and 92.0% for cell growth.Comparative genomic analysis revealed that mutations in the genes involved in the hexose monophosphate pathway (HMP ) and oxidative phosphorylation underpinned the enhanced L-malic acid production of A.oryzae FMME-S- …

[Objective ] This study aims to establish the biosynthesis process of N-acetyl- trans -4-hydroxyproline (N-ATHOP ).[Method ] Escherichia coli (E.coli ) BL21 (DE3) was selected as the host to heterologously express the acyltransferase (MsAcT ) derived from Mycobacterium smegmatis.A semi-rational design was employed to construct the mutant MsAcT (S11C) capable of catalyzing the synthesis of N-ATHOP.[Result ] The catalytic reaction conditions of the mutant MsAcT (S11C) were optimized as pH 6.9,reaction temperature 49 ℃,initial trans -4-hydroxyproline (THOP ) concentration of 315.5 mmol/L,and vinyl acetate volume fraction of 10%.Under the optimized conditions,the yield of N-ATHOP synthesized under the catalysis of MsAcT …

[Objective ] This study aims to identify the main spoilage bacteria and evaluate their spoilage capacity in the spoilage process of pickles.[Method ] High-throughput sequencing was employed to analyze the microbial community dynamics in the samples of pickles at the early,middle,and late stages of spoilage.The key spoilage bacteria were isolated,purified,and then identified through a combination of colony morphology observation,biochemical analysis,and 16S rDNA/ITS sequencing.Re-inoculation experiments were carried out for further validation of the primary spoilage bacteria in pickles.[Result ] Acinetobacter and Bacillus were the dominant spoilage bacterial genera across the three spoilage stages.Notably,Bacillus exhibited rapid growth over time,with the relative abundance …

[Objective ] This study aims to establish a magnetic bead enzyme-linked immunosorbent assay (MELISA ) method for olaquindox (OLA ) based on immunomagnetic beads.[Method ] First,olaquindox-hapten conjugated with horseradish peroxidase (OLA-HS-HRP ) and immunomagnetic beads were synthesized.Then,the conjugated immunomagnetic beads and OLA-HS-HRP were used to screen and optimize the reaction conditions of MELISA.[Result ] The optimal working dilution factors for the immunomagnetic beads and OLA-HS-HRP were 100 times and 8 000 times,respectively,with the antibody dilution buffer being PBS solution (0.010 mol/L,pH 7.0) containing methanol at a volume fraction of 5%.Under the optimized conditions,the established standard equation was y=13.593ln x+17.173 (R2=0.994 …

The COVID-19 pandemic caused immense physical disruptions, affecting young adults in the U.S. The Health Belief Model is a social psychological framework that predicts the likelihood of adopting health behavior. The purpose of this research is to investigate COVID-19-related health beliefs and dietary behaviors among undergraduate students during the pandemic. Using convenience sampling, a cross-sectional survey was completed by 304 individuals at a New Jersey state university. Survey data included the frequency of COVID-19 prevention behaviors (e.g., wearing an indoor mask, handwashing), and consumption of fruit and vegetables. Cheese ripening involves microbial changes, with starter lactic acid bacteria (SLAB) initiat- ing fermentation and nonstarter lactic acid bacteria (NSLAB) driving flavor and texture development. However, heat-resistant spores of Clostridium and Bacillus can survive pas- teurization and cause spoilage during ripening. This study evaluated NSLAB dynamics in the presence of spores during cheese ripening. In gut microbiome research, carbohydrate-active enzyme gene clusters (CGCs) have emerged as key functional units for understanding microbial glycan degradation. Unlike taxonomic or broad pathway annotations, CGCs offer gene-cluster-level resolution and capture substrate-specific microbial functions. However, their diversity and distribution in relation to host metabolic phenotypes, such as obesity, remain poorly characterized. This study tests the hypothesis that the composition and abundance of fiber-targeting CGCs vary between obese and healthy human gut microbiomes, reflecting distinct microbial carbohydrate utilization strategies. The aim of the study is to conduct a comparative analysis of the technological properties of samples of bakery flour obtained from local and imported varieties of wheat grain at enterprises in Uzbekistan. Existing national and international standard methods were used to study the technological properties of the selected flour samples. Statistical processing and correlation analysis of the obtained research results revealed a direct relationship between the quality and quantity of gluten from damaged starch.

The aim of the study was to conduct research to determine the possibility of predicting the approximate fatty acid composition of blends based on the iodine number. The fatty acid composition was determined by the chromatographic method and the results were subsequently used to identify the composition of blends by determining the iodine number. The iodine number was determined by calculation and titrimetric methods, comparing the differences between the obtained values.
