Nutrition, Dietetics, and Food Sciences Faculty Publications
Effect of WPC and NaCl in internal aqueous phase (W1) of W1/O/W2 type double emulsions was studied. Pre-emulsion and final emulsion were prepared using microfluidizer and Ultra-Turrax high shear mixer, respectively. The emulsions prepared using salt exhibited uniform droplet size distribution and structural integrity. WPC at 6% and NaCl at 2 or 4% levels demonstrated better sedimentation stability (> 99%) and encapsulation stability (> 95%) during preparation and storage of double emulsions. Samples without added NaCl showed poor emulsion stability and structural integrity. Higher level of WPC i.e. 8% resulted in poor stability and encapsulation efficiency of double emulsions at …

Simpler Method To Compare Starch Hydrolysis Rate And In Vitro Expected Glycemic Index Of Flours, Courtney Simons, Charles Ciampaglio
Lake Campus Research Symposium Abstracts and Posters
In vitro expected glycemic index (eGI) is a reliable tool to predict postprandial blood glucose concentrations. Making these predictions is important particularly for diabetespatients who must manage their health condition by consuming products with more slowly digestible carbohydrates. Current methods require lengthy preparation time and expensive equipment. In this study, a cheaper and faster in vitro method was developed. Legume samples were digested with continuous agitation for 3 hours with the help of alpha-amylase enzyme. Glucose production was monitored by measuring changes in refractive index using a refractometer. Relative hydrolysis rates of flours demonstrated effectiveness of the method to differentiate …

Predicting Anthocyanin Content In Canned Black Beans Based On Color, Courtney Simons, Juan Osorno, Lauren Fuelling
Predicting Anthocyanin Content In Canned Black Beans Based On Color, Courtney Simons, Juan Osorno, Lauren Fuelling
Lake Campus Research Symposium Abstracts and Posters
The dark color of black beans is associated with the presence of anthocyanins. These are phytochemicals known to contribute to improved health due to their antioxidant, anti-inflammatory, anti-viral and anti-cancer benefits. Therefore, the color of canned black beans could potentially predict the total concentration of anthocyanins present. To test this hypothesis, 12 black bean varieties obtained from North Dakota State University Bean Breeding Program were cooked and evaluated for anthocyanin content and color characteristics (L*, hue and chroma) of end-product. Pearson Correlation statistics was applied to determine if color values could be used as a reliable index to predict relative …

Cost-Effective Method To Determine Effect Of Ethylene Gas On Ripening Of Bananas, Ashley Siefring, Devin Siefring, Brooke Gaerke, Colby Homan
Lake Campus Research Symposium Abstracts and Posters
Ethylene, a gaseous plant hormone associated with fruit ripening processes, is produced by bananas as they ripen. Hence the presence of ripe bananas could trigger the ripening of green bananas if they are stored together. To test this hypothesis, green bananas, all at the same stage of maturation was collected and separated into two groups. One group was stored alone while the other group was stored with ripe bananas. The rate of ripening between the two groups was observed over 2 weeks and measured using a standard banana color chart. The study confirmed our hypothesis that green bananas ripen faster …
Comparisons Of Celiac Disease And Non-Celiac Gluten Sensitivity, Victoria Thomas
Comparisons Of Celiac Disease And Non-Celiac Gluten Sensitivity, Victoria Thomas
Senior Honors Theses
Celiac disease (CD) and non-celiac gluten sensitivity (NCGS) are often confused or grouped together due to their commonalities. However, this is careless behavior because there are clinically significant differences between the two diseases. Similarities between them include varying degrees of damage or permeability in the lining of the small intestine, involvement of the innate immune system, alleviation of symptoms upon implementation of a gluten-free diet (GFD), and the possibility for complications if the pathology is not adequately treated. Despite these similarities, minor details such as the following make CD and NCGS worth differentiating: the question of gluten as the true …
Experimental Archaeology And Brewing Beer: A Modern Reproduction Of The "Hymn To Ninkasi", Mahayla Roscoe 20
Experimental Archaeology And Brewing Beer: A Modern Reproduction Of The "Hymn To Ninkasi", Mahayla Roscoe 20
Honor Scholar Theses
Alcoholic beverages, and beer in particular, have had an extensive impact on human civilization. People have been brewing beer for thousands of years, and some scholars even argue that it was humanity’s thirst for beer rather than a hunger for bread that motivated the domestication of cereal grains ca. 9500-8000 B.C.E. If this argument is to be believed, beer would have acted as a precursor to the Neolithic Revolution and inspired people to develop agrarian economies and abandon their nomadic lifestyle. By the time that the Sumerian civilization in ancient Mesopotamia arose, beer production was a well-known and respected craft. …

Background and aims: Sulfur-metabolizing microbes, which convert dietary sources of sulfur into genotoxic hydrogen sulfide (H2S), have been associated with development of colorectal cancer (CRC). We identified a dietary pattern associated with sulfur-metabolizing bacteria in stool and then investigated its association with risk of incident CRC using data from a large prospective study of men.
Methods: We collected data from 51,529 men enrolled in the Health Professionals Follow-up Study since 1986 to determine the association between sulfur-metabolizing bacteria in stool and risk of CRC over 26 years of follow-up. First, in a subcohort of 307 healthy men, we …

Mounting evidence supports a connection between the composition of the infant gut microbiome and long-term health. In fact, aberrant microbiome compositions during key developmental windows in early life are associated with increased disease risk; therefore, making pertinent modifications to the microbiome during infancy offers significant promise to improve human health. There is growing support for integrating the concept of ecosystem services (the provision of benefits from ecosystems to humans) in linking specific microbiome functions to human well-being. This framework is widely applied in conservation efforts of macro-ecosystems and offers a systematic approach to guide restoration actions aimed to recover critical …

Effect Of Monosaccharide On The Retrogradation Of Lotus Seed Starch, Chen Yue-Yu, Ou Yu-Jia, Zeng Hong-Liang, Zhang Yi, Zheng Bao-Dong
Food and Machinery
Effects of monosaccharide (glucose and fructose) on the retrogradation of lotus seed starch were studied from the aspects of crystal structure, molecular structure and molecular weight. The results of X-ray diffraction, nuclear magnetic resonance and infrared spectrum showed that glucose and fructose could inhibit the recrystallization of lotus seed starch. The crystallinity, double helix structure and short-range ordered structure decreased, and the proportion of amorphous area increased in the composite system, indicating that glucose and fructose might inhibit the retrogradation of starch. The inhibition of glucose on starch retrogradation was more significant than fructose, which might be related to the …
