Foodborne pathogens continue to threaten the food supply chain. Salmonellosis is a persistent foodborne pathogen responsible for gastroenteritis, leading to severe illness in children below 5 years of age, adults 65 and older, and people with weakened immune systems. Maryland has rising cases of salmonellosis linked to outbreaks due to consumption of raw or fresh fruits and produce. Gluten related disorders, such as coeliac disease, wheat allergy and baker's asthma are triggered by proteins present in food products made from wheat and related cereal species. The only treatment of these medical illnesses is a strict gluten-free diet; however, gluten-free products that are currently available in the market can have lower nutritional quality and are more expensive than traditional gluten containing cereal products. These constraints have led to the development of gluten-free or gluten-reduced ingredients. Lysine is the most limiting essential amino acid in cereals, and efforts have been made over the decades to improve the nutritional quality of these grains by limiting storage protein accumulation and increasing lysine content, while maintaining desired agronomic traits. The single lys3 mutation in barley has been shown to significantly increase lysine content but also reduces grain size. Herein, the regulatory effect of the lys3 mutation that controls storage protein accumulation as well as a plethora of critically important processes in cereal seeds was investigated in double mutant barley lines. จากกระแสความนิยมของกลุ่มผู้บริโภคที่ใส่ใจต่อสุขภาพและคำนึงสิ่งแวดล้อมในปัจจุบัน ส่งผลให้แนวโน้มการตลาดของผลิตภัณฑ์เกษตรและอาหารอินทรีย์มีการเติบโตอย่างต่อเนื่อง น้ำนมที่ได้จากฟาร์มโคนมอินทรีย์ซึ่งเน้นรูปแบบการเลี้ยงที่เป็นธรรมชาติ ปลอดจากการใช้สารเคมีและยาปฏิชีวนะ จัดเป็นหนึ่งกลุ่มสินค้าเกษตรที่มีมูลค่าสูง ส่งผลให้มีความต้องการพัฒนาวิธีการตรวจสอบคุณภาพ โดยเฉพาะการเปลี่ยนแปลงขององค์ประกอบทางเคมีในน้ำนมที่เป็นผลมาจากกระบวนการจัดการฟาร์มแบบอินทรีย์ เพื่อใช้ระบุอัตลักษณ์ของผลิตภัณฑ์กลุ่มดังกล่าว เมตาโบโลมิกส์ (metabolomics) นับเป็นเทคนิคทางเคมีวิเคราะห์สมัยใหม่ที่สามารถนำมาใช้เพื่อตรวจสอบอัตลักษณ์ทางชีวโมเลกุลของผลิตภัณฑ์อาหาร อย่างไรก็ตาม การนำเทคโนโลยีดังกล่าวมาประยุกต์ใช้ในการศึกษาข้อมูลแบบแผนทางชีวโมเลกุลของน้ำนมและผลิตภัณฑ์นมในประเทศไทยยังมีอยู่อย่างจำกัด ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อ วิเคราะห์และเปรียบเทียบข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและข้อมูลกรดไขมันของน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์และฟาร์มโคนมทั่วไปโดยใช้เทคนิค 1H-NMR และ GC-MS ร่วมกับการวิเคราะห์ทางสถิติพหุตัวแปร พร้อมทั้งติดตามอิทธิพลของฤดูกาลต่อการเปลี่ยนแปลงข้อมูลดังกล่าวในน้ำนมดิบ ผลการวิจัยพบว่าสามารถระบุชนิดของสารเมตาบอไลต์ชนิดระเหยยากและกรดไขมันในน้ำนมดิบได้ทั้งหมด 35 และ 32 ชนิดตามลำดับ ผลการวิเคราะห์ทางสถิติพหุตัวแปรแสดงให้เห็นว่า สามารถแยกความแตกต่างของข้อมูลสารเมตาบอไลต์ชนิดระเหยยากและข้อมูลกรดไขมันของกลุ่มตัวอย่างน้ำนมดิบที่ได้จากฟาร์มโคนมอินทรีย์ออกจากฟาร์มโคนมทั่วไปได้ โดยสามารถใช้ปริมาณสัมพัทธ์ของสารเมตาบอไลต์ carnitine, N-acetylglucosamine, lactate, glycerophosphocholine, 1,3 dihydroxyacetone,1,6-anhydro-β-D-glucose และกรดไขมันชนิด stearic acid และ linolenic acid เป็นตัวบ่งชี้ทางชีวภาพเพื่อระบุอัตลักษณ์ทางชีวโมเลกุลของน้ำนมโคอินทรีย์ได้ นอกจากนี้อิทธิพลของความแตกต่างระหว่างฤดูแล้งและฤดูฝนยังส่งผลต่อความผันแปรของปริมาณสารเมตาบอไลต์ acetoacetate, glucose, histidine, choline และกรดไขมันชนิด lauric acid, myristic acid, palmitic acid, margaric acid, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), elaidic acid, linolelaidic acid, conjugated linoleic acid (CLA) และ behenic acid ผลการวิจัยดังกล่าวแสดงให้เห็นถึงการประยุกต์ใช้เทคโนโลยีเมตาโบโลมิกส์ในการวิเคราะห์อัตลักษณ์ทางชีวโมเลกุลของน้ำนมโคอินทรีย์ รวมทั้งอิทธิพลของฤดูกาลต่อความผันแปรของข้อมูลดังกล่าวได้อย่างมีประสิทธิภาพ

นาโนเจลคือพอลิเมอร์ที่เกิดการเชื่อมขวางภายใน และระหว่างโมเลกุลโดยสามารถเกิดได้จากวิธีการทางกายภาพ เคมี และวีธีการใหม่อย่างการฉายรังสี โดยนาโนเจลสามารถเกิดได้จากพอลิเมอร์หลายชนิด ทั้งพอลิเมอร์จากธรรมขาติและพอลิเมอร์จากการสังเคราะห์ มีการประยุกต์ใช้นาโนเจลในทางอาหาร โดยใช้สมบัติเฉพาะตัวของนาโนเจลทั้งด้านสัณฐานวิทยา สมบัติทางเคมีกายภาพ และสมบัติการกักเก็บของนาโนเจล ในการศึกษานี้เพื่อศึกษาการเกิดนาโนเจลจากแป้งมันสำปะหลังและเจลาตินด้วยการฉายรังสีด้วยลำอิเล็กตรอน โดยหาสภาวะที่เหมาะสมต่อการเกิดนาโนเจลด้วย response surface methodology (RSM) กำหนดตัวแปรเป็นค่าการเชื่อมขวาง (DC) และความคงตัวต่อความร้อน (TD) โดยแปรอัตราส่วนของแป้งมันสำปะหลัง-เจลาติน (1:9-9:1) ความเข้มข้นของสารผสม (10-40 mg/ml) และปริมาณรังสีดูดกลืน (10-40 kGy) พบว่าสภาวะที่เหมาะสมในการเกิดนาโนเจลจากแป้งมันสำปะหลังและเจลาตินคือที่อัตราส่วน 1:1 ที่ความเข้มเข้นของสารผสมที่ 25 mg/mL และฉายรังสีที่ 25 kGy ศึกษาสมบัติทางสัณฐานวิทยาของนาโนเจลที่ได้ด้วยภาพจากกล้องจุลทรรศน์แบบส่องกราด (SEM) กล้องจุลทรรศน์แบบส่องผ่าน (TEM) และกล้องจุลทรรศน์แรงอะตอม (AFM) และพบว่าโมเลกุลของแป้งมันสำปะหลังและเจลาตินมีการเชื่อมติดกันอันเนื่องจากการเกิดการเชื่อมขวาง และขนาดของโมเลกุลมีขนาดเล็กลงจนถึงระดับนาโนเมตรหลังจากการฉายรังสี วิเคราะห์สมบัติทางเคมีของนาโนเจลที่ได้ด้วยวิธี Fourier transform infrared spectrometry (FT-IR) และพบว่าไม่มีการเปลี่ยนแปลงหมู่ฟังก์ชันของแป้งมันสำปะหลังและเจลาติน แต่มีการเพิ่มขึ้นของหมู่ hydroxyl ที่เกิดจากปฏิกิริยา radiolysis และการเพิ่มขึ้นของพันธะเชื่อมขวาง ต่อมาจึงศึกษาสมบัติของการกักเก็บน้ำมันหอมระเหยของนาโนเจลที่ได้ โดยการวัดประสิทธิภาพของการกักเก็บ (LE) ผลได้ของการกักเก็บ ความสามารถในการละลาย และปริมาณสารระเหยสำคัญของน้ำมันหอมระเหยที่กักเก็บในนาโนเจล เมื่อเปรียบเทียบสมบัติของวิธีการกักเก็บโดยแปรสัดส่วนของ นาโนเจล:น้ำมันหอมระเหยตะไคร้ พบว่าที่สัดส่วน 2:1 มีสมบัติการกักเก็บดีที่สุด และสามารถควบคุมการปลดปล่อยของสารระเหยสำคัญของน้ำมันหอมระเหยตะไคร้ ได้แก่ geranial, neral, geraniol, linalool, geranyl acetate และ citronellol ไว้ได้ดีที่สุด นาโนเจลยังสามารถเพิ่มความคงทนต่อความร้อน และยืดอายุการเก็บรักษาของน้ำมันหอมระเหยโดยกักเก็บภายในนาโนเจล พบว่าสามารถรักษาปริมาณของสารระเหยสำคัญของน้ำมันหอมระเหยไว้ได้หลังจากผ่านการให้ความร้อน และระหว่างเก็บรักษาเมื่อเทียบกับน้ำมันหอมระเหยปกติ โดยการเปลี่ยนแปลงที่เกิดขึ้นระหว่างการเก็บรักษา มีเพียงลักษณะปรากฏของผงนาโนเจลที่กักเก็บน้ำมันหอมระเหยเท่านั้น จึงสามารถสรุปได้ว่า สามารถสังเคราะห์นาโนเจลจากแป้งมันสำปะหลังและเจลาตินด้วยการฉายรังสี และสามารถหาสภาวะที่เหมาะสมได้ด้วยวิธี RSM และนาโนเจลยังสามารถกักเก็บน้ำมันหอมระเหยไว้ได้ อีกทั้งยังสามารถปกป้องและยืดอายุสารสำคัญชองน้ำมันหอมระเหยจากสิ่งแวดล้อม จึงสามารถนำนาโนเจลนี้ไปประยุกต์ใช้ในอุตสาหกรรมอาหารได้อย่างหลากหลาย

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของชนิดและอัตราส่วนของสารห่อหุ้ม และสภาวะในการทำแห้งที่เหมาะสมในการกักเก็บสารประกอบฟีนอลิกจากสารสกัดต้นอ่อนทานตะวัน (Helianthus annuus L.) ด้วยกระบวนการทำแห้งแบบพ่นฝอย (Spray drying) และศึกษาเสถียรภาพในระหว่างการเก็บรักษาของไมโครแคปซูลสารสกัดต้นอ่อนทานตะวัน เป็นเวลา 60 วัน วางแผนการทดลองแบบ Mixture design กำหนดปัจจัยที่ทำการศึกษาแบบไม่กำหนดช่วง (Simplex centroid model) แปรอัตราส่วนของสารห่อหุ้ม 3 ชนิด ได้แก่ มอลโตเดกซ์ทริน (Maltodextrin, MD) กัมอารบิก (Gum Arabic, GA) และบุกกลูโคแมนแนนไฮโดรไลเสท (Konjac glucomannan. KGMH) ได้อัตราส่วนของสารผสม 7 สูตร กำหนดให้สารสกัดต้นอ่อนทานตะวันทุกสูตร มีความเข้มข้นเท่ากับ 1 % อัตราส่วนระหว่างสารสกัดต่อสารห่อหุ้ม คือ 1:3 กำหนดให้อุณหภูมิลมร้อนขาเข้าคงที่เป็น 160 °C และอุณหภูมิลมร้อนขาออกเป็น 90±5 °C โดยกำหนดอัตราการไหลให้อยู่ระหว่าง 14-16 mL/min พบว่าไมโครแคปซูลสารสกัดต้นอ่อนทานตะวันที่ผลิตโดยใช้ KGMH อัตราส่วน100% (สูตรที่ 3) มีประสิทธิภาพในการห่อหุ้มและกักเก็บสารประกอบฟีนอลิกจากสารสกัดต้นอ่อนทานตะวันได้ดีที่สุดเมื่อเปรียบเทียบกับสูตรอื่น (p≤0.05) เมื่อพิจารณาฤทธิ์การต้านอนุมูลอิสระ พบว่าสูตรดังกล่าวมีค่าที่ตรวจวัดได้ด้วยวิธี 2, 2-diphenyl-1-picrylhydrazyl (DPPH) และ Ferric ion reducing antioxidant power (FRAP) สูงที่สุดด้วย (p≤0.05) เมื่อศึกษาโครงสร้างพื้นผิวภายนอกของไมโครแคปซูลสารสกัดต้นอ่อนทานตะวันด้วยกล้องจุลทรรศน์อิเล็กตรอนแบบส่องกราด พบว่า ไมโครแคปซูลสารสกัดต้นอ่อนทานตะวันที่ใช้ KGMH เป็นสารห่อหุ้มมีรูปร่างเป็นทรงกลม ผิวเรียบ และไม่มีรอยบุบหรือแตกบริเวณพื้นผิวเมื่อเทียบกับสูตรอื่นๆ ซึ่งอาจบ่งชี้ถึงคุณลักษณะของไมโครแคปซูลที่เหมาะสมที่ผลิตได้จากกระบวนการทำแห้งแบบพ่นฝอยในการทดลองนี้ จึงคัดเลือกไมโครแคปซูลสูตรดังกล่าวไปศึกษาสภาวะในการทำแห้งแบบพ่นฝอยต่อในการทดลองถัดไป โดยแปรอุณหภูมิลมร้อนขาเข้า 3 ระดับ ได้แก่ 150 °C 170 °C และ 180 °C พบว่าการเพิ่มขึ้นของอุณหภูมิลมร้อนขาเข้าจาก 150 ถึง 170 °C ส่งผลให้ปริมาณสารประกอบฟีนอลิกทั้งหมด …

The objective of this study was to explore the effect of UV-C curing on the properties of ferulic acid-added soy protein film. The films were fabricated from soy protein isolate and added with 1.5% ferulic acid. UV-C radiation was applied at four different doses (0.32, 1.56, 4.00, 12.00 J/cm2) to either preformed film or film-forming solution. The mechanical, physicochemical, and morphological properties of the film samples were investigated. The objective of this research was to investigate the physical, chemical, and functional properties of tapioca starch subjected to solid-state modification by using nonthermal dielectric barrier discharge (DBD) plasma treatment using different gases (helium and argon), voltage levels (10 kV and 15 kV), and treatment times (5, 10, and 15 minutes). งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาผลิตภัณฑ์ยีสต์โพรไบโอติกแบบเม็ดฟู่ที่ใช้เซลล์ยีสต์ Saccharomyces cerevisiae via. Boulardii (S. Boulardii) จากคัลเจอร์น้ำผัก-ผลไม้ ประกอบด้วยขั้นตอน (i) ประเมินสภาวะน้ำหมักสำหรับเพาะเลี้ยงโดยใช้น้ำองุ่นที่มีค่าของแข็งที่ละลายได้ (TSS) 12 °brix เป็น based medium แปรค่าความเป็นกรด-ด่าง (pH) ในช่วง 3.0-5.0 เพาะเลี้ยงแบบเขย่า ที่ 150 rpm อุณหภูมิ 30 °C เป็นเวลา 48 ชั่วโมง (ii) ศึกษาสมบัติการเจริญของ S. งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาวิธีสกัดต่อปริมาณและคุณภาพของเพกทินจากเปลือกโกโก้ ศึกษาสมบัติการเป็นพรีไบโอติก (prebiotic activity) ของเพกทิน และการประยุกต์ใช้เป็นสารเคลือบบริโภคได้ เพื่อยืดอายุการเก็บของมะเขือเทศ โดยศึกษาวิธีสกัด 3 วิธี ดังนี้ วิธีทางเอนไซม์ (แปร 3 ปัจจัย ได้แก่ ปริมาณเอนไซม์เพกทิเนส 0.5 และ 1.0% อุณหภูมิในการบ่ม 40 และ 60 องศาเซลเซียส และเวลาในการบ่ม 120 และ 240 นาที) วิธีทางเคมี (แปร 2 ปัจจัย ได้แก่ ความเป็นกรดเบสของสารละลาย pH 4.0 และ pH 10.0 และอุณหภูมิในการสกัด 60 70 และ 80 องศาเซลเซียส) และวิธีคลื่นอัลตราซาวด์ช่วยสกัด (แปรระยะเวลาโซนิเคชัน 20 30 และ 40 นาที) จากการทดลองพบว่าภาวะที่สามารถสกัดปริมาณเพกทินได้มากที่สุดจากวิธีทางเคมี วิธีทางเอนไซม์ และวิธีคลื่นอัลตราซาวด์ช่วยสกัด คือ การสกัดด้วยปริมาณเอนไซม์ 1.0% v/v อุณหภูมิในการบ่ม 60 องศาเซลเซียส และเวลาในการบ่ม 240 นาที (ร้อยละ 24.38±0.15) การสกัดด้วยสารละลาย pH 4.0 และอุณหภูมิในการสกัด 70 องศาเซลเซียส (ร้อยละ 7.78±0.41) และการสกัดด้วยระยะเวลาโซนิเคชัน 20 นาที (ร้อยละ 14.87±0.19) ตามลำดับ โดยเพกทินที่สกัดจากเปลือกโกโก้ทุกภาวะมีระดับเอสเทอริฟิเคชันมากกว่า 50% ดังนั้นจึงจัดเป็น high methoxyl (HM) pectin จากนั้นศึกษาสมบัติการเป็นพรีไบโอติกและความหนืดของเพกทินที่ได้จากภาวะที่สามารถสกัดเพกทินได้มากที่สุดของแต่ละวิธีการสกัด และพบว่าเพกทินที่สกัดด้วยวิธีคลื่นอัลตราซาวด์ช่วยสกัดมีสมบัติการเป็นพรีไบโอติกสูงที่สุด ในขณะที่การเพิ่มอัตราเฉือนส่งผลให้ความหนืดของเพกทินที่สกัดด้วยวิธีทางเอนไซม์มีค่าลดลงมากที่สุด รองลงมา คือ วิธีคลื่นอัลตราซาวด์ช่วยสกัดและวิธีทางเคมี ตามลำดับ จากการใช้เพกทินที่สกัดด้วยวิธีคลื่นอัลตราซาวด์ช่วยสกัดมาประยุกต์ใช้เป็นสารเคลือบบริโภคได้กับมะเขือเทศ และติดตามการเปลี่ยนแปลงของมะเขือเทศที่เก็บรักษาที่อุณหภูมิ 4 …

โคพีพอดจัดอยู่ในกลุ่มของครัสเตเชียนขนาดเล็กที่มีบทบาทสำคัญในการเป็นอาหารมีชีวิตในการอนุบาลสัตว์น้ำวัยอ่อน โคพีพอดเป็นแหล่งของกรดไขมันไม่อิ่มตัวเชิงซ้อน (polyunsaturated fatty acid, PUFA) ซึ่งมีความสำคัญต่อพัฒนาการของสัตว์น้ำวัยอ่อน งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาองค์ประกอบของกรดไขมันในแต่ละระยะพัฒนาการของโคพีพอด Apocyclops royi สายพันธุ์ไทย (A. royi-TH) โดยศึกษาในโคพีพอดระยะนอเพลียส (NP) โคพีโพดิด (CD) และตัวเต็มวัย (AD) ที่เลี้ยงด้วยสาหร่ายสีเขียว Tetraselmis sp. ซึ่งเป็นสาหร่ายที่ไม่พบกรดไขมัน DHA จากการวิเคราะห์ด้วยแก๊สโครมาโตรกราฟี-แมสสเปกโตรเมทรี (GC/MS) พบว่าโคพีพอด A. royi-TH มีกรดไขมัน PUFA, EPA และ DHA ในปริมาณสูงกว่าอาหารสัตว์น้ำชนิดอื่น ๆ โดยพบกรดไขมัน PUFA สูงในโคพีพอดระยะ CD (38.53%) และ AD (41.85%) ในขณะที่พบกรดไขมัน PUFA ปริมาณต่ำที่สุดในโคพีพอดระยะ NP (22.50%) นอกจากนี้พบว่าโคพีพอดทุกระยะพัฒนาการมีกรดไขมัน LC-PUFA ปริมาณสูง (5.27-10.36%) โดยพบกรดไขมัน DHA มากที่สุดในระยะ AD (4.85%) รองลงมาระยะ CD (3.54%) และระยะ NP (2.78%) จากการเปรียบเทียบองค์ประกอบของกรดไขมันในโคพีพอดที่เลี้ยงด้วยสาหร่ายTetraselmis sp. ที่มีกรดไขมัน EPA ต่ำ (ArTet) และ Chaetoceros sp. ที่มีกรดไขมัน EPA สูง(ArChaeto) พบว่าโคพีพอด ArChaeto มีกรดไขมัน DHA ปริมาณสูงกว่าโคพีพอด ArTet จึงสามารถคาดการณ์ได้ว่าองค์ประกอบของกรดไขมันในสาหร่ายที่แตกต่างกันส่งผลต่อปริมาณกรดไขมัน DHA ที่พบในโคพีพอด จากนั้นได้ศึกษาการแสดงออกของยีนดีแซททูเรส ArD6D ที่มีความสำคัญต่อการสังเคราะห์กรดไขมัน DHA พบว่าระดับการแสดงออกของยีน ArD6D เพิ่มขึ้นอย่างมีนัยสำคัญในโคพีพอดระยะ AD (p<0.05) สอดคล้องกับปริมาณกรดไขมัน DHA ที่เพิ่มขึ้นในโคพีพอดระยะ AD ซึ่งแสดงให้เห็นว่ายีน ArD6D อาจมีหน้าที่เกี่ยวข้องกับการสังเคราะห์กรดไขมัน DHA ในแต่ละระยะพัฒนาการของโคพีพอด และเมื่อศึกษาการแสดงออกของยีน ArD6D ในโคพีพอด ArTet และ ArChaeto พบว่าระดับการแสดงออกของยีน ArD6D ในโคพีพอด ArChaeto มีการแสดงออกที่สูงอย่างมีนัยสำคัญเมื่อเทียบกับโคพีพอด ArTet (p<0.05) ซึ่งสอดคล้องกับปริมาณกรดไขมัน DHA ที่เพิ่มขึ้นในโคพีพอด ArChaeto ผลจากการวิจัยบ่งชี้ว่าโคพีพอด A. royi-TH ทั้ง 3 ระยะพัฒนาการสามารถสังเคราะห์กรดไขมัน DHA ผ่านวิถีการสังเคราะห์กรดไขมัน LC-PUFA และกรดไขมันในสาหร่ายส่งผลต่อปริมาณ DHA ของโคพีพอด โดยข้อมูลจากงานวิจัยนี้มีประโยชน์ต่อการเพิ่มคุณค่าทางโภชนาการของโคพีพอด A. royi-TH เพื่อใช้เป็นอาหารสัตว์น้ำวัยอ่อนในอุตสาหกรรมการเพาะเลี้ยงสัตว์น้ำของไทย

The detection, enumeration, and virulence potential of viable but non-culturable (VBNC) pathogens continues to be a topic of discussion. While there is a lack of definitive evidence that VBNC Listeria monocytogenes (Lm) pose a public health risk, recent studies suggest that Lm in its VBNC state remains virulent. VBNC bacteria cannot be enumerated by traditional plating methods, so the results from routine Lm testing may not demonstrate a sample’s true hazard to public health. We suggest that supplementing routine Lm testing methods with methods designed to enumerate VBNC cells may more accurately represent the true level of risk. This review …

Shiga toxigenic E. coli (STEC) are an important cause of foodborne disease globally with many outbreaks linked to the consumption of contaminated foods such as leafy greens. Existing methods for STEC detection and isolation are time-consuming. Rapid methods may assist in preventing contaminated products from reaching consumers. This proof-of-concept study aimed to determine if a metabolomics approach could be used to detect STEC contamination in spinach. Using untargeted metabolic profiling, the bacterial pellets and supernatants arising from bacterial and inoculated spinach enrichments were investigated for the presence of unique metabolites that enabled categorization of three E. coli risk groups. The goal is to reduce the calorie content of margarines by changing the composition and fat base. In this regard, we studied the change in caloric content and the content of trans-acids in margarines with a change in their fat content. To reduce calorie content, the fat base of margarine was also reduced to 60%, and to increase the biological value of the product, it was enriched with highly unsaturated fatty acids. The article studies the possibility of extraction of monounsaturated oleic acid from highly stable vegetable oils produced at industrial scale. To solve the set tasks, have been selected samples of vegetable oils, present in the domestic market with a high content of unsaturated fatty acids: cottonseed and sunflower, imported rapeseed and olive oils. These oil samples were degraded by hydrolysis, recovered by acid treatment, and purified by repeated recrystallization in ethanol.
